Old Settlers' Baked Beans

I made these for Easter. Doubled the recipe, but left out the white sugar and only used 1 onion. I think it could definitely have used the sugar (or more brown sugar). I used Campbell's pork and beans...not my fav. I was hesitant to give it less than 5 stars because I changed a couple of things, but my biggest complaint was that there was not enough sauce, and I know my changes would not have affected the amount of sauce. Next time I will double the sauce....otherwise they are sorta dry.

Artichoke & Spinach Dip Restaurant Style

This is the best spinach dip that I've tried. I made two changes: I doubled the cream cheese, and I used refrigerated chopped garlic (rather than roasting the fresh). No one could stop eating it! Thanks for a wonderful recipe!

Not Red Spaghetti Sauce

World's Best Pasta Sauce!

Very rich tasting....robust may be more appropriate. Be careful with the fennel seeds...a little goes a long way. The taste is excellent. The only thing I changed was that I added a little garlic salt (personal preference).

Marinated Pork Tenderloin

I was very hesitant to try this recipe, but after reading all the positive reviews I went ahead. I was reluctant due to the cinnamon...I just couldn't imagine that much cinnamon on a tenderloin. The taste seemed okay, but I think the cinnamon was a bit overpowering and almost bitter. I think if you cut back on the cinnamon, and added a little more brown sugar, the flavor would balance out. I took the leftovers (which were actually better) and barbequed them.

Spinach-Pork Stuffed Shells

I used sausage and frozen spinach, and these were fabulous!! Make sure that you note the serving size is for 2. I used 1 box of pasta shells, 1 box of spinach, 1 1b. of sausage, doubled the spices except for the salt, and used a whole jar of spaghetti sauce to make a family-sized portion. The addition of salt could be eliminated if using frozen spinach that is not salt-free.

Chicken and Broccoli Pasta

This is a good base recipe, but I thought it definitely needed more spices. I added more garlic, oregano, about a 1/3 cup of red wine, garlic salt, and 3 oz. of cream cheese. Fresh basil is A MUST....I think it makes the dish.

Cheddar Beef Enchiladas

I'm giving it 4 stars because it was good and easy. It could be jazzed up a little with 3 easy steps: 1. Cook meat with a small onion and a little garlic. 2. Use Lipton package of rice for ease and flavor...either Spanish or Mexican. 3. Double the salsa/soup combo to make it more saucy. I used chicken/mushroom soup. These changes make it 5-star GREAT!

Resurrection Rolls

I am so glad that I tried these before Easter Sunday morning. This batch was a flop for me....and I cooked them exactly like the recipe called for. My "tombs" collapsed! I am going to try them again, and take a previous reviewer's advice by wrapping them with 2 triangles. I sealed mine up really good, but the marshmallows still oozed out. I would recommend cutting back the temperature (maybe to 375) and the time to 10-12 minutes. They were a little well done. I would definitely recommend a trial time if you are planning on using these for Easter Sunday morning!

Hot Artichoke and Spinach Dip II

I fixed this as an appetizer for our Labor Day cookout and it was amazingly good. One of my teenagers, that hasn't eaten anything green in years, was actually eating the bread bowl when the dip was finished. I did take other reviewers advice and made a few changes: substitute sour cream for mayo, increase garlic to 3 cloves, mix mozzarella in before baking, and serve in a bread bowl. Everyone just raved about this dip and it disappeared quicK!

Rachel's Tomato Basil Soup

I made the recipe hoping for a taste of a tomato-basil soup that we had at a Macaroni Grill restaurant. This recipe was good , but it wasn't what I was hoping for. I'm the only one in my family of five that ate it. It's the first time that I've ever made a tomato-basil soup, and I would guess that it's a good basic recipe.

Chicken and Bacon Shish Kabobs

These are AWESOME! I marinated everything overnight except the mushrooms and pineapples. I added those about 2-3 hours prior to cooking. These are by far the best kabobs we've cooked!
