Mexican Chicken Corn Chowder

This was pretty good. I too used leftover roasted chicken which made it easy to make, but I felt it lacked something. Definitely needs some tabasco for zip, and...? I might try this again, and make some adjustments to see if I can improve upon it somehow. Worth trying, but not a dynamite recipe.

Layered Seafood Dip

I made this because I'd had something similar tasting at a Christmas party and this was so good! I didn't muck around with the recipe at all, just made it as it said to and it was great. Big hit!

Cheese Ball I

I made this for Christmas and it gave me two good sized balls. I added less of the ranch seasoning but substituted in a couple cloves of finely minced garlic, a dash of worchester and hot sauce. I think these additions took it beyond the bland that it would have been. It was even better after the first day. Great recipe!

Sweet Potato Casserole II

I made this last Christmas and it was a BIG hit! I also made more traditional candied yams in case no one liked this but there was no need. Everyone loved this recipe! I added a bit of nutmeg & cinnamon and cut back the sugar a bit. Fabulous. I'm making it again this year by popular demand!

Spicy Slow Cooker Black Bean Soup

This recipe is awesome. I have made it several times, and it is really, really good. If you are pressed for time just use the canned black beans, toss the rest of the stuff into a slow cooker, (I also added a can of diced tomatoes) and when you get home, dinner! I just pureed about 1/2 the soup for a more authentic look, and served it with chopped green onion, sour cream, cheddar cheese and homemade guacamole. Also, although I am not a huge fan of spice, I found this just right with the amount of cayenne recommended and two minced jalopenos. They really mellow out in the soup and it won't be that spicy, just the right amount. YUM!

Party Pinwheels

These were easy and yummy. I have made them twice and they were a huge hit each time. I have tried a couple types of wraps, including alternating sundried tomato wraps with a spinach pesto wrap for a great Christmas presentation. Extra points because they are better made a day ahead and just sliced and put on a tray for your party. What could be easier? I also tried mixing up the ingredients with fontina and mozzarella cheeses, and green olives, roasted red peppers and sundried tomatoes. Very, very good.

Marinated Cheese

I made this twice, for two different groups of people. I was thinking that the first group must've been wrong since everyone pretty much avoided it, but no. It was oily and too messy to eat. The flavours were ok but it wasn't something you wanted more than one or two bites of. It didn't present well on the dish no matter how hard I tried to make it look appealing, it just wasn't. I would not make this again.

Luscious Spinach Artichoke Dip

This was an excellent dip. It made a huge bowl and was one of the only things devoured at a recent party. The only change I made was adding parmesan reggiano instead of romano cheese. Awesome!

Vietnamese Chicken and Long-Grain Rice Congee

I tried chicken congee in New York's Chinatown and had to attempt to duplicate it! I used chinese chicken broth from a can, added the lemongrass, ginger and soy, brought it to a boil and added a chopped boiled chicken breast I already had, and the rice. I agree wholeheartedly that the lime at the end is essential to finish the dish. I found that the congee thickened quite a bit once I put it in the fridge and I just added a bit of water when I reheated it to bring it back to the proper consistency. Excellent!

Italian Sausage Soup

Oh.My.God. This soup is sooooooooo good. Very hearty and delicious. I put a few extra things in, like some red wine and worchester and some extra herbs for added flavour. I also added some onion and extra garlic. My hubby loved it and I'm definitely putting this soup into heavy rotation for the winter. YUM!

Asian Coleslaw

Take the shortcut and use preshredded coleslaw. It makes this recipe quick and easy. I then added the cilantro and green onions since I had them. I didn't really measure anything for the dressing, just eyeballed the measurements, whipped it in my mini processor and it was fab. I halved the dressing as others suggested but found the'slaw too dry, so I whipped up a bit more and it was perfect. I agree about only using fresh ginger and garlic, it wouldn't be the same without it. I also think the cilantro was a key ingredient, giving it a distinct Thai flavour. I too added the chopped roasted peanuts on top-Excellent!!! My husband loved this and I'll definitely make it again.
