Irish Boxty

I have tried several of the potato pancake/latke recipes. This one is my favourite. It's a great mix of mashed and grated potato, and I think the ratio of each is just right. Quick to make, and adjustments can be made to suit your preferences, like adding spices/seasonings, or grated onion and minced garlic, which I have also done. My husband devours them-never any leftovers. Thanks Brooke!

Date Nut Bars

I made these last night and found that I needed to cook them for an extra 10 minutes to cook them through. They are tasty but I do think they need less sugar, they are very sweet even without the powdered sugar sprinkled on top (definitely does not need that!). I will make again with less sugar (maybe 1.5 cups and reduce down from there) because they are good and a nice little treat relatively guilt free. I also used one cup ww flour, 1 cup reg flour, and subbed some unsweetened coconut for some of the walnuts. I also added a bit of pumpkin pie spice because I wanted some of that cinnamon-y clove-y taste. My husband hated them, but he has an aversion to healthy foods. My two year old liked them.

Harvest Salad

5 stars for the dressing alone...easy and delicious. I used ED Smith Jam which is a nice quality jam, which I think definitely makes a difference. The salad itself was great and I followed the recipe exactly. The only hesitation I had was with the tomatoes, I wasn't sure they would go with the other ingredients. I put them in and they were ok but next time I am going to try sliced pears or apples instead. I think either of those will be a much better match with the other ingredients. Definitely a must try, you will like it!

Mom's Zucchini Bread

This was a very tasty loaf but I did have an issue. I made it exactly as stated and the batter was very, very thick. I ended up thinning it with a bit of water and it baked up fine. The second time I made it the same thing happened? I thought for sure I must have done something wrong but couldn't figure out what it was. I added extra zucchini the second time and again a bit of water and extended the cooking time by 20 minutes. It was very, very good and I will keep fiddling with it as I use up the summer zucchini!

Authentic Kicked-Up Syrian Hummus

This was a very creamy hummus, which is what I wanted. Previously I always found that my hummus had a bit of a grainy texture that I found off putting, and tried everything to fix. (Skinning the chickpeas, adding extra oil etc.) I think it is the extra tahini that makes the difference here. My only complaint is that while I love roasted garlic, I could not really taste it here. Next time I make it I am going to roast a whole head and put that in. That will create a perfect hummus! I drizzled it with toasted pine nuts and olive oil to serve.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

My husband almost peed his pants over this one. He loved, loved, loved them. I had some issues with timing, the first batch that went in were underdone and never really set up properly, and the second batch were overcooked (which dh preferred, actually.) They were still yummy either way and I will definitely make again.

Rich Chocolate Frosting

I have tried a number of chocolate icings/frostings from this site and this ones was by far the best. Perfect on cupcakes or to frost a layer cake. I did add a bit more cocoa as others suggested to bump up the chocolate flavour and I was not disappointed!

Cold Asparagus with Curry Dip

The 5 starts are for the curry dip-it was delicious. I too added honey and salt & pepper with a tich of cayenne. I made crab cakes and served this dip and it went beautifully well together. Also good on the asparagus. Anything left I smeared onto sandwiches for lunch the next day. So, so good.

Upside-Down Coffee Cake

This makes a HUGE cake. I used a big lasagna pan and it didn't overflow. I made mine with one large can of peaches, but wish I had used more fruit and even more topping. It was delicious but we got tired of it after a few days and some of it went in the garbage. Very nice if you have a crowd and some nice vanilla ice cream to serve it with. I will make again when there are more people around!

Asparagus and Cashews

This was pretty tasty, but it didn't make me swoon or anything. I will probably make again just because it makes a staple vegetable interesting without resorting to more italian flavours. My husband liked it but my 2 year old did not.

Baked Pork Spring Rolls

I thought this recipe was good if a bit bland. I like to add some lime juice and hoisin to round out the flavours a bit. I accidentally bought egg roll wrappers instead of spring roll~If you make this mistake do not try to bake them, they will not turn out. I tested a couple and they weren't good. I fried the rest and they were delicious. I also cook down my cabbage with the pork mixture to make them easier to wrap. They stayed together very well, my husband even complimented me on how good they looked. Served with Thai Sweet Chili sauce-Yum,

Macaroni And Cheese I

This was good but it made a lot. I actually made two and gave one to my parents. I liked the sauce, it was very creamy. I'm not a huge mac & cheese fan but I will make this again. Husband and two year old also liked it.

Mom's Coleslaw

This was very good, basic coleslaw. I used a pre shredded coleslaw mix and scaled the ingredients accordingly. My husband loves a creamy slaw and he really enjoyed it. Very easy.

Apple Maple Crumble Pie

I've made this twice, using all different types of apples (whatever I've had on hand.) I also add a sprinkle of cinnamon, nutmeg etc. My two year old absolutely loves this dessert. It's a lovely crumble~quick, simple, and foolproof. Yum.

Too Much Chocolate Cake

I followed this recipe exactly as written and it was fantastic. I made two 9" rounds that I iced and stacked. My husband loved, loved, loved this cake. I made it for his birthday and it was beautifully moist, even on day 4 when we finally finished it. I'm looking forward to making this in other flavour combos- So good.

Apple Cole Slaw

I added cranberries and toasted walnuts as suggested by others, but I tasted it before doing so. Pretty bland before (though I liked the dressing) and better with the additions. Decent and different, but I probably won't make again.

Calzone

One classic error here is the cooking temperature and time. As with any pizza style food, it must be cooked at a VERY HIGH TEMP FOR A SHORT TIME. This recipe produces a dough that tastes undercooked and is mushy in the middle. It is far preferable to cook the calzone at a bake temp of 500 F for 20 minutes. The dough will be golden brown and crispy on the outside and tender on the inside. And don't worry, the contents will be plenty cooked. Also, use only a little sauce inside. It cooks far better the drier it is. You can always heat some sauce and serve it on the side or drizzled over top.

Fabulous Zucchini Grinders

I first tried this recipe in the summer when I had oodles of zucchini to use up. I was surprised at how much we liked it. I have made a few more times and sometimes added some cooked leftover sausage or used a tomato meat sauce and different kinds of cheeses. It's really good every which way. Now I buy zucchini just to make these on the weekends. Seriously good, even a meat-lovin' man will snap these up.
