Mom's Chicken Cacciatore

I liked this quite a bit, but my family didn't care for it as much. I thought it was a very good representation of cacciatore and would not hesitate to serve to people who were fans of the dish.

Pork Chops with Raspberry Sauce

Wasn't sure how these would go over because pork chops and raspberries? Hm. But I thought my kids would like it so I gave it a try. To my great surprise both hubby and I enjoyed this quite a bit as well. When I told him what we were eating he thought it sounded odd, and was surprised to find that it went quite well together. I will try this with Chicken as well, which to me feels like a more natural pairing.

Roast Sticky Chicken-Rotisserie Style

Made it as suggested exactly but left out the cayenne as I have young kids. Tasted absolutely amazing and gave us a lovely juicy chicken. I did not bake as instructed because I did not have time, just 350 for 1 hr 15 minutes and it was perfect for us. This will be my go to recipe.

Chicken Pot Pie IX

Gets rave reviews because it is just that good. Everyone I have made it for has loved it. I make the recipe pretty much as written though the last time I had a little homemade chicken gravy leftover so I added that to the mix-even better. I have also made this with a phyllo top and might even prefer it that way. Look no further, this is the one.

Caramelized Baked Chicken

This glaze had no flavour at all. I have no idea why that happened but the chicken was so bland I am loathe to try it again. I'll try something different next time.

Chunky Tomato Potato Soup

Easy Sausage Strata

Perhaps this was just not to our tastes, but no one in our family liked this at all. I just could not face eating it again. I'm not sure why because my family eats all of the ingredients in this recipe regularly, but put together? No one was a fan. I made this as a trial run for our Easter brunch and I'm very glad I tried this before serving it to a large group. Sorry.

Cajun Cake

The topping would get 5 stars, but I did not care for this cake. I guess because of adding the topping on the hot cake, it seeped into it so much that to me the cake tasted soggy. My husband loved it and ate the whole thing, but the rest of us gave it a solid thumbs down. I would maybe try it and serve the cake separate from the topping so it does not make the whole thing so wet.

Quick and Easy Home Fries

These were great, and I made them exactly as written. I was worried that they would not cook through in the allotted time (they did) and that they would not get a lovely golden brown color with the lid on (they did). I made them in a few minutes on a weekday for a quick breakfast for supper. It is a good thing they turned out well as everyone hated my strata, so this is all we ate. ;-) Make with confidence! I will add these to my Easter Brunch menu.

Maple Salmon

Very simple recipe that combines the classic taste of maple with the richness of salmon. A true canadian classic. One note regarding marinating times. It is usually wise to marinate fish for 30 to 60 minutes max. However, you can marinate longer, when you are not using an acid in the marinade, like lemon juice or vinagre. This recipe can tolerate a longer marinade time, probably no more than 2 to 3 hours. It will get more flavour, and the salmon is a hearty fish than can withstand the longer marinade time. I would NOT do that with a more delicate filet.

Avocado Stuffed Yams

Mixed reaction here. Yes, the combination is odd, but that's not the reason to slam the recipe. Creativity is important in cooking. We just found the flavours didn't mix that well. We essentially filled the potatoes with our 5 star guac. The wife liked it fine but the hubby was less than impressed. The savoury and garlicky flavour of the guac just doesn't compliment the sweetness of the potatoes that well. I guess we're used to a more sweet pairing than this. Full points for originality though.

Peach Pie

I used to buy a Peaches and Cream pie that was so delicious, even though it was store bought. Then sadly, it was discontinued. It's been years since I've had it. Then, I found this recipe and thought-well, why not give it a whirl. OH MY GOD. It is just like that Peaches and Cream pie, but 1000 x better!! It is heavenly. My Dh absolutely flipped out and could not stop raving about this pie. I used a Pillsbury crust and made a streusel topping, and used fresh precut peaches, drained of their juice. I added one tbsp of cornstarch to the flour mixture as per other reviews. So, so good. My only complaint is that it doesn't hold up well over a couple of days (gets soggy). So next time I will make it when there are more than my husband and I to eat it. It was only sheer willpower that prevented us from eating the whole pie in 2 days! Try it, you will not be disappointed. AWESOME. Thanks for the recipe!!!

Sweet and Nutty Moroccan Couscous

The flavours are nice, but be sure that you serve it with a runny dish. My accompanying dish turned out drier than I anticipated and the couscous really needs that moisture. Without it, the dish is very very dry. With a great Moroccan tagine this would be fabulous. On it's own, not so much.

Quinoa with Chickpeas and Tomatoes

This was ok but lacked flavour. My kids who love quinoa, wouldn't eat it. The tomatoes did not hold up well. I love all of the ingredients, but together they were uninspired and uninteresting. Sorry, I wanted to like this a lot more than I did.

Broccoli Chicken Divan

My Dh did not care for this at all. And my kids weren't thrilled with it either. I thought it was edible but not great. Then my MIL came over the next day and sampled the almost untouched casserole in the fridge and she raved about it. She thought it was absolutely delicious. (This from a woman who makes everything from scratch, and yet I never see her eat anything but yogurt and fruit. So that she liked it was particularly noteworthy!) I gave the rest of the leftovers to my mom & dad and they also thought it was pretty good. Therefore three stars because while I wasn't a fan, some that tried it were. YMMV!

Chicken and Dumplings II

I've made this numerous times. I do add more veggies (onions, celery, carrots & potatoes) and extra chicken stock. I never add the tomatoes or the peppers, so I cannot say it is better without them, but to me they seem like they do not belong in this soup. Otherwise I make it as is, other than sometimes adding peas. This is perfect cold weather soup, and makes a big pot that I eat for lunch for days. I never get tired of it! I do use a store bought rotisserie chicken to make my life easier and it makes this soup a snap to make. Very, very good.

Blueberry Crumb Pie

I have been searching for a great blueberry pie recipe and have made many pies during that search (including a Cook's illustrated recipe for which I made my own pastry dough and ground tapioca pearls, etc. It was just meh.) This pie, made with a Pillsbury crust (!) was miles better. I did add 2 Tbs of cornstarch which did make it set up too much, I will try 1 tbs next time. There WILL be a next time. My husband rushed home from a meeting the night after I served this pie because he was dying for another piece. I would definitely serve this to company. It was quick to make too with the premade crust and frozen berries. Thank you for a great recipe!!
