Best-Ever Meatloaf

I made this as written except that I mixed all of the tomato soup in with the meatloaf. The recipe lives up to its name.

Garlic-Lemon Mahi Filets

I cut the recipe in half and cooked it in the oven at 350 for 20 minutes. I didn't marinate it, I just threw all the ingredients in the casserole dish (I lessened the wine a little for this reason). Next time I will add tomatoes and green onions. This is a great base recipe and it's easy to throw together with ingredients you have on hand. It can be used on any fish, not just Mahi Mahi, even shrimp. I also did not find it bland as other people did. Thanks for the recipe.

All-Fruit Smoothies

Thank you for this recipe. It's hard to find an all fruit smoothie that doesn't have milk or peanut butter or chocolate or weird ingredients like flax seed. I used diet sparkling lemonade in place of the orange juice because I'm diabetic. It was very good and portion sizes were large.

My Meatloaf

This had a lot of flavor and is one of my favorite meatloafs, but it does NOT fit in a 9x13 inch pan. I spread mine in one (it only covered about 70% of the pan) and cooked it at 400 F and it burned.

Chile Pork

This is one of my favorites! I never even liked pork until I had this. My family ate it over rice. It was not very spicy, so beware if that's what you like. My mom, who doesn't like anything spicy, ate it and liked it.

Blueberry Crisp I

Very good and easy to make! It took less than 5 minutes to prepare. It called for WAY too much water, however. If I made it again I would also add more blueberries, although that's just my personal taste, and it isn't really necessary. I'll definitely be making this again. I also used cinnamon instead of nutmeg.

Eggplant with Tomato Sauce

Sunshine Hummus Melts

I used whole wheat pita bread instead of multigrain sandwich bread. I only used one apple because my Granny Smith apple was too large and two of them would have overwhelmed the recipe. I diced the apple instead of cutting it. I will definitely make this again. It had an unusual, but good, flavor.

Quick and Easy Chicken

I'm not a big fan of chicken but I really liked this! I left out the oil and used cooking spray to grease my skillet and I chopped up the chicken in small pieces before browning it.

Easy Enchiladas

This was a good idea, but there is something wrong with the recipe measurements because it didn't turn out right for me. I think it was supposed to be 2 lbs. ground beef instead of 1. I only got 11 small enchiladas. There is no way 1 lb. of ground beef goes with 32 oz. salsa and 20 tortillas.

Pasta and Bean Casserole

After reading everyone's reviews, I made the following changes: 1. doubled the tomatoes to 28 oz 2. added 2 diced roma tomatoes 3. increased the cheese from 1/2 cup to 2.5 cups. I also mixed the cheese in instead of just leaving it on top. It turned out really well! Not dry at all and with lots of flavor--and there definitely wasn't too much cheese, even though I increased the amount so much. I did have trouble getting it to fit into a 13x9 casserole dish. There was too much food!

Easy Meat Loaf

I used Italian-seasoned bread crumbs instead of crackers and it was a big mistake! I think maybe the bread crumbs were smaller than the cracker crumbs would have been? But anyway, it created WAY too much filler and the meatloaf tasted like it was half bread, half meat.

Bewitching Chili

The flavor was very good/strong. I will definitly make this again. However, this is too soupy to be chili. It needs another can of beans and another 1/2 pound of ground beef to make it more like chili. It also had a strong tomato flavor (which I liked).

Pakistani Spicy Chickpeas

First of all, two tomatoes is not enough. I used 7 roma tomatoes and wish I had used about 10. Secondly, why put the onions in last? Shouldn't they be sauteed first so they aren't hard? I put the tomatoes infirst and then simmered the seasonings. I also had to double the cumin and chili powder.

Fancy Potatoes

This is nothing out of the ordinary but is a good, basic, cheap mashed potato recipe to follow that I will make again. The only change I would make is to mix the cheddar cheese in before putting it in the oven instead of layering it on top. The cheese sticks together when you layer it on top and you end up eating big globs of cheese instead of having the cheese mix in with the casserole.

Sesame Pasta

I liked this a lot, but I'm only giving it 3 stars because I had to add a lot to it to make it taste good. I added extra bean sprouts and about 5 oz of choipped water chestnuts. I also added an extra teaspoon of soy sauce to each serving. The water chestnuts really helped to keep this from being too bland. I will definitly make this again, but with my modifications. The portion sizes were pretty decent and I felt they were very filling.

Sus' Cat Scratch Attack Casserole

I used cream of chicken soup because I don't like mushrooms and sour cream because I don't like mayonnaise. Other than that, I made this just as written. It is completely different from any other tuna casserole I've ever had, so if you're looking for something new, this is a great recipe to try. It was easy to make and cheap.

This was easy/quick to make and had a lot of flavor. It was hard to keep the filling on the bun. I reduced the recipe to just one third and I got six sandwiches.
