Pancho Villa Baked Tilapia

Black Bean Soft Tacos

I doubled the green chilies and cheese and left out the oil and avocado. These had a great flavor, but were definitely more like burritos than tacos.

Glazed Meatloaf II

I used sweet and low instead of brown sugar and 1 tbs yellow mustard instead of 1 tsp mustard powder. It ended up being very flavorful for such a simple meatloaf, one of the best meatloaves I've ever had. I also mixed all of the glaze in with the meatloaf instead of reserving some for the top.

Broccoli Casserole II

I used broccoli cheese soup because I don't like mushroom. I also used 16 oz. process cheese and 16 oz. broccoli since they came in packages that size and I didn't want to waste. It's a good thing I did that, though, because there was still a ton of rice.

Lemon-Cream Cheese Cupcakes

These taste great, however the cook time is WAY off! First of all, I only got 12 small cupcakes out of this, not 24. If the recipe is for mini cupcakes, it should say so. Secondly, it only made 12 but they were all burnt at the bottom after 21 minutes cook time. I will definitely make these again as they are so easy and have a good flavor, but I'm definitely changing the cook time.

Lemon-Cream Cheese Cupcakes

These were easy to mix up and had good flavor, but I agree the timing was off. I made 12 (if I had made 24 they would have been mini cupcakes) and they were burnt at the bottom after 21 minutes. I can't imagine how burnt they would have been if I had made 24 of them as the recipe called for.

Sweet Potato and Apple Soup

I boiled the sweet potatoes and apple instead of cooking them in the oven. I omitted the carrots. I used vitamin D milk. I also pureed the feta with the rest of the mixture. I used 24 oz. sweet potatoes because that's what I had. Turned out fine. I got 7 large servings out of it.

Halibut Baked with Sauerkraut

There is WAY too much sauerkraut in this. I'm wondering if there's a mistake in the recipe? It just tasted like sauerkraut with a few random pieces of fish here and there. I loved the flavor and will definitely make it again, but I'm going to either halve the sauerkraut or double the tomatoes and fish.

Mom's Casserole

The portions were way off. If I make it again I will quadruple the sauce. I had to add 5 oz. rotel and some diced tomatoes to it and it was still too dry. I also added a green pepper and heated it in the crockpot. I didn't layer it, I just mixed it all together, since other reviewers said they had trouble layering.
