Romantic Chicken with Artichokes and Mushrooms

I took the advice of one reviewer and used herbs de Provence for seasoning however next time, I will cut back or eliminate salt. The capers and the artichoke marinade add plenty of saltiness without adding any more. It is a keeper! Served it over rice Pilaf with steamed asparagus.

Jalapeno Popper Spread

Big hit at my book club! I had split it up into 2 containers so I could use one later. Not such a good idea - if I do that again, I will cut back on the parm on the top because it was about 1" deep! For my garden club who generally are older & think pepper is too spicy, I think I would omit the jalapenos! Great last minute take-along dish - super easy and fast!

Diann's Chili Vegetable Soup

Added a leftover half can of chopped jalapenos and it had a nice little kick! Cut the chopped tomatoes to one 15 oz can and replaced tomato juice with 1 15oz can of tomato sauce. Didn't add salt. Had enough for 2 helpings each and froze 2 containers.

Pasta and Peas

Since the recipe looked bland to me, I added garlic and shallots. It was still rather bland so I added fresh parmesan and ground pepper. I still felt like it needs a zip of some kind. I might try again with a few more additions.

Cream Cheese Penguins

Wow...this got a great reception from a group of picky eaters! And let's face it, they are totally adorable! We added someone's idea of a cheese ball covered in the cream cheese as an igloo and we did use whipped and flavored cream cheese. I think otherwise it would be sorta bland. Next time (tomorrow!) I'll substitute jarred red & green peppers for the scarves. The pimentos we bought were too skimpy and wouldn't stay in place.

I make this about every other Christmas so family and friends think it's too hard to do yearly! It's actually quite easy although time-consuming. I forgot to grease the paper before pouring in the batter. Won't do that again! Picking off paper very labor intensive. I always make a "stump" on the top and use powdered sugar as "snow." Icing seems like overkill although my family chocoholics LOVE it. I also rob my holly bushes of a few leaves and berries for extra frou-frou.
