Succotash

For an EASY and LOW-FAT version, I used canned lima beans, canned tomatoes, and canned creamed corn. I omitted the butter, salt, and sugar, and just added some garlic powder instead. This was great hot or even cold (served as a summer salad dish)!

Poppy Seed Bundt Cake III

This cake was a HUGE hit! I made a yummy glaze for the cake by combining 2 tsp butter, ½ cup 10X sugar, and 1 Tbsp milk. Stir until smooth and drizzle over cooled cake. Moist and delish! Also, I didn't have a 10" pan, so I used an 8” Bundt pan plus a 6-muffin pan. This worked perfectly.

Cranberry Muffins

The first time I made these they tasted just OK and they rose up very nicely. Since I'm not a nutmeg fan, I changed the receipe and the second time they came out dynamite! Here are my changes: Use 1/4 cup butter and 1/4 cup applesauce (believe me, you won't miss the extra fat and cals); substitute almond extract for vanilla; don't bother chopping the cranberries; and omit the nutmeg completely. My husband enjoyed them both ways :)

Zucchini Parmesan

I used leftover grilled zucchini to make this, and it turned out delicious! A nice alternative to eggplant. We used the leftovers from this dish to make sandwiches on Italian bread the next day. Yummy!

Strawberry Bread II

I followed this recipe exactly (EXCEPT I added a little extra almond extract by accident) and it was delicious! Moist, flavorful, with a nice crust. My hubby loved it, so I guess I'll make this again!

Mafioso Chocolate Cake

The first time I made this cake, I used all-purpose flour (because I didn't have cake flour), and I made a LAYER cake out of it. It was *really* dense...My chocoholic mom LOVED it. The second time I made it, I followed directions carefully, using cake flour and a 9x13" pan. My chocoholic father-in-law loved it. Both times my hubby loved it. I guess it's foolproof!

Mock Cherry Pie

This recipe is incredible! I took the advice of another reviewer and skipped the vanilla replacing it with 1/2 tsp almond extract plus 1 Tbsp fresh lemon juice. It tastes so much like cherry pie that no one could guess that it wasn't! The ONLY giveaway is the texture. You can tell there are raisins in there. But it's so yummy. I will definitely make this again.

Zucchini Cakes

I made this AFTER reading the other reviews, so I decided to use UNseasoned breadcrumbs and half the amount of Old Bay. The cakes still came out too salty, and they seemed to be lacking something (perhaps...crabmeat?). My hubby liked them -- he said they tasted like stuffing. Maybe I'll put this recipe away until Thanksgivingtime...

Classic Bran Muffins

Really good! I used applesauce instead of oil, cut the sugar down to 1/2 cup, and omitted the raisins (hubby no like!). These came out surprisingly moist and sweet! Even my toddler liked them!

Frosted Maple Cookies

These cookies were soft and cakelike, yet very thin. They definitely need more maple flavor, so add extra maple extract to both the batter and the frosting. The cookies have a strong brown sugar flavor, so perhaps substituting 1/2 of the brown sugar with white sugar will remedy that.

Apple Crisp I

This is SOOOOOOOOOOOOOOOOOOOOOOOOOOO yummy! I made half the recipe in a 9" pie plate, omitted the nuts and added a little freshly ground cinnamon. Served a la mode, this is dynamite!

Chocolate Pudding Fudge Cake

Soooooooooooooooooooooooooooo yummy! The only thing I would do differently next time is to use MINI chocolate chips in the batter. My guests devoured it! My mother-in-law kept commenting on the delicious glaze. Perhaps next time I'll omit the chocolate chips from the batter and just cover the cake in the glaze, instead. Definitely a keeper!

Easy Chicken Enchiladas

Best Peach Cobbler Ever

This was just OK (Can you rename it "Just OK Peach Cobbler"?) Next time I will omit the nutmeg and drain the peaches. It did have a strangely sticky consistency, and definitely needs to be topped with either whipped cream or vanilla ice cream.

Guacamole

Finally, the perfect guac recipe! I actually grated the onion because hubby has an aversion to raw onion. Also, I used garlic powder and bottled lime juice...and it came out great! It would be even better with the real thing. Thanks, Bob!

Veggie Vegetarian Chili

I thought this was pretty good and my hubby LOVED it. I added 1/4 cup jarred jalepeno slices, omitted the bell peppers, added 2 more garlic cloves, and used canned mushrooms. I also drained/rinsed the beans and added 1 cup water. I cooked it for over an hour so the flavors would blend. I served it with shredded cheddar, some sour cream, corn bread and tortilla chips. Hubby asked me to make sure I keep (my version of) the recipe!

Make-Ahead Mashed Potatoes

This recipe made Christmas dinner a breeze for me! I was worried that everyone would taste the "off" flavor of the soured products, but you can't tell there's any cream cheese or sour cream in there at all! I would recommend adding a little extra milk for moisture and dotting the mashed potatoes with butter before baking.

This was sooooooo good and soooo easy! I usually shy away from any recipe calling for O.J. because I'm not a fan of orange-flavored desserts, but it is not noticeable at all. I didn't have any nutmeg, but it still tasted fabulous.

Texican Squash

The texture was fine, but we thought this recipe was very bland. We had to eat it with salsa and guacamole to give it some life. I probably won't make it again, but if I do I'll add a lot of garlic and onions.
