Strawberry Bread II

I followed this recipe exactly (EXCEPT I added a little extra almond extract by accident) and it was delicious! Moist, flavorful, with a nice crust. My hubby loved it, so I guess I'll make this again!

Zucchini Cakes

I made this AFTER reading the other reviews, so I decided to use UNseasoned breadcrumbs and half the amount of Old Bay. The cakes still came out too salty, and they seemed to be lacking something (perhaps...crabmeat?). My hubby liked them -- he said they tasted like stuffing. Maybe I'll put this recipe away until Thanksgivingtime...

Baked Zucchini

When I made this, I did not have any Parmesan on hand, so instead I shredded some Provolone...Do not try this at home! It was just too bland without the Parmesan. Next time I think I will make it without the sour cream, and I will definitely add Parmesan.

Frosted Maple Cookies

These cookies were soft and cakelike, yet very thin. They definitely need more maple flavor, so add extra maple extract to both the batter and the frosting. The cookies have a strong brown sugar flavor, so perhaps substituting 1/2 of the brown sugar with white sugar will remedy that.

Mafioso Chocolate Cake

The first time I made this cake, I used all-purpose flour (because I didn't have cake flour), and I made a LAYER cake out of it. It was *really* dense...My chocoholic mom LOVED it. The second time I made it, I followed directions carefully, using cake flour and a 9x13" pan. My chocoholic father-in-law loved it. Both times my hubby loved it. I guess it's foolproof!

Classic Bran Muffins

Really good! I used applesauce instead of oil, cut the sugar down to 1/2 cup, and omitted the raisins (hubby no like!). These came out surprisingly moist and sweet! Even my toddler liked them!

Poppy Seed Bundt Cake III

This cake was a HUGE hit! I made a yummy glaze for the cake by combining 2 tsp butter, ½ cup 10X sugar, and 1 Tbsp milk. Stir until smooth and drizzle over cooled cake. Moist and delish! Also, I didn't have a 10" pan, so I used an 8” Bundt pan plus a 6-muffin pan. This worked perfectly.

Apple Kuchen

This was kind of like an apple/cheese danish cake. Not very appealing to the eye, but very tasty! Remember to store leftovers in the fridge, since it's made with sour cream!

Fluffy French Toast

I'm sorry to say this was a waste of time. Adding flour didn't make this recipe any better than regular old French toast. It wasn't fluffy at all.

This IS a great recipe! I used 50/50 flour (half whole wheat, half white flour) and low-fat milk and they came out great! Next time I'll try all-purpose flour. Thanks!

Guacamole

Finally, the perfect guac recipe! I actually grated the onion because hubby has an aversion to raw onion. Also, I used garlic powder and bottled lime juice...and it came out great! It would be even better with the real thing. Thanks, Bob!

Best Peach Cobbler Ever

This was just OK (Can you rename it "Just OK Peach Cobbler"?) Next time I will omit the nutmeg and drain the peaches. It did have a strangely sticky consistency, and definitely needs to be topped with either whipped cream or vanilla ice cream.

For an EASY and LOW-FAT version, I used canned lima beans, canned tomatoes, and canned creamed corn. I omitted the butter, salt, and sugar, and just added some garlic powder instead. This was great hot or even cold (served as a summer salad dish)!

Chickpea Curry

This was my first attempt at making anything even remotely Indian. In place of the ginger, cloves, coriander, and turmeric, I added 1 Tbsp. of curry powder. I also added a cup of raisins during the last five minutes of cooking. This came out AMAZING! I will make this again and again!

Triple Strawberry Cake

This is nice for a summer picnic. Kids love it! All I had on hand was a Classic Yellow cake mix and strawberry-banana sugar-free Jello (made with 2 cups of water). It came out really good. However, next time I will use a strawberry cake mix and strawberry Jello.

Easy Chicken Enchiladas

I made this with canned chicken(!), 1/2 package cream cheese, and extra salsa. I didn't even have any beans or cheese on hand, and this still came out great. It was a big hit!

Thighs on Rice

The first time I made this, I followed the directions exactly, and it was just OK. The next time, I decided to make some changes: I used only 1 bouillon cube, 1-1/2 cups brown rice, only 1 Tbsp butter, extra onion and fresh garlic, 1 cup frozen peas and canned mushrooms. It came out much better! It wasn't too greasy once I cut the butter down. I'll make this one again (with my changes)!

Emily's Famous Onion Dip

This was good, but I couldn't help but think, "Something's missing." That "something" is sour cream. This would've been awesome with sour cream! My husband loved this recipe, saying it remined him of the processed store-bought onion dip he ate as a kid.

Monkey Bread I

I made a few changes and this came out FABULOUS! I upped the cinnamon to 1 Tbsp. and I cut the brown sugar to 1/2 cup(any more is too much!). I also used a can of reduced fat mixed in with the regular dough. I used real butter for better flavor, and I skipped the nuts and raisins. Everyone LOVED it! I served it with a cream cheese frosting on the side for dipping. Excellent!
