Cake Balls

I made these in an egg shape for Easter and they came out really nice. They are sort of truffle-like...very moist inside and hard outside. I used devil's food cake and chocolate frosting with semi-sweet chocolate to coat them. I split the mixture and added some peanut butter to part of it (yum!) and some mint extract to the other part (YUM!). I must say they were an awful lot of work and the only time I might ever use this recipe again is if I ever have a cake disaster and need a way to use crumbled cake. Otherwise I don't think it's worth all the time and trouble.

Braised Balsamic Chicken

I reduced the balsamic to 1/3 cup and it was perfect! I served this with Baked Zucchini Chips (from this site) and Italian bread and it was a big hit! I will make this again and again. The leftovers work well as a sandwich on a roll with the balsamic broth poured on top. Yum!

Veggie Vegetarian Chili

I thought this was pretty good and my hubby LOVED it. I added 1/4 cup jarred jalepeno slices, omitted the bell peppers, added 2 more garlic cloves, and used canned mushrooms. I also drained/rinsed the beans and added 1 cup water. I cooked it for over an hour so the flavors would blend. I served it with shredded cheddar, some sour cream, corn bread and tortilla chips. Hubby asked me to make sure I keep (my version of) the recipe!

Cranberry Muffins

The first time I made these they tasted just OK and they rose up very nicely. Since I'm not a nutmeg fan, I changed the receipe and the second time they came out dynamite! Here are my changes: Use 1/4 cup butter and 1/4 cup applesauce (believe me, you won't miss the extra fat and cals); substitute almond extract for vanilla; don't bother chopping the cranberries; and omit the nutmeg completely. My husband enjoyed them both ways :)

Make-Ahead Mashed Potatoes

This recipe made Christmas dinner a breeze for me! I was worried that everyone would taste the "off" flavor of the soured products, but you can't tell there's any cream cheese or sour cream in there at all! I would recommend adding a little extra milk for moisture and dotting the mashed potatoes with butter before baking.

Mock Cherry Pie

This recipe is incredible! I took the advice of another reviewer and skipped the vanilla replacing it with 1/2 tsp almond extract plus 1 Tbsp fresh lemon juice. It tastes so much like cherry pie that no one could guess that it wasn't! The ONLY giveaway is the texture. You can tell there are raisins in there. But it's so yummy. I will definitely make this again.

Black Bean Vegetable Soup

This was delish! The only changes I made were I used a 15 oz. can low-so chicken broth (in place of 4 cups veg stock) and I used a can of diced tomatoes with zesty mild green chilies in place of stewed. My superpicky 4-year-old even ate it (of course I had to strain out the chunks for him) and said it made his tongue tingle.

Chicken in a Pot

My husband and I thought this was just OK. I doubled the sauce as some reviewers suggested, otherwise I followed the directions exactly. Something was definitely missing. I might try heating the leftovers with some mozzarella and making a sandwich out of it.

Spinach Chicken Parmesan

I was disappointed with the results even after I doctored it up based on the suggestions of other reviewers. It was still bland even after adding salt, pepper, and garlic powder to the cheese mixture, as well as 2 minced garlic cloves in with the onions. I doubled the sauce, but I think what's missing is some salt and maybe garlic in the sauce. We still have some left over, so I might add capers to give it some life.

Whole Wheat Beer Bread

This is so good, considering how easy it is to make! I cut the baking powder to 3 tsp (aluminum-free) and I cut the salt down to 1 tsp. I used 2 Tbsp white sugar, 1 Tbsp brown sugar, and a bottle of Michelob light ('cause hubby wouldn't let me use his good stuff). I also poured 3 Tbsp. melted Smart Balance buttery spread for extra flavor. It came out soooooo good! Crusty outside and moist inside. Thanks!

Lemon Icing

I added an extra 2 Tbsp lemon juice and used this to frost the Luscious Lemon Cake from this site, which I baked as a birthday cake in a 9x13" pan. It crusted nicely, so I was able to decorate the cake without the colors running. Did I mention it's absolutely DELISH???

Luscious Lemon Cake

I needed to make a lemon birthday cake, so I baked this in a 9x13" pan and frosted it with the Lemon Icing recipe on this site. It was FABulous! All of us chocoholics went nuts for it! The only thing I changed about the cake recipe was I upped the water to 1 cup.

This was sooooooo good and soooo easy! I usually shy away from any recipe calling for O.J. because I'm not a fan of orange-flavored desserts, but it is not noticeable at all. I didn't have any nutmeg, but it still tasted fabulous.

This is SOOOOOOOOOOOOOOOOOOOOOOOOOOO yummy! I made half the recipe in a 9" pie plate, omitted the nuts and added a little freshly ground cinnamon. Served a la mode, this is dynamite!

Texican Squash

The texture was fine, but we thought this recipe was very bland. We had to eat it with salsa and guacamole to give it some life. I probably won't make it again, but if I do I'll add a lot of garlic and onions.

Spicy Black Bean Cakes

This was disappointing. The lime sour cream was good, but the bean patties were dry and didn't have as much flavor as I expected. I followed the recipe exactly, but next time I would add a lot more cumin and garlic (believe it or not). Unfortunately, these don't make good leftovers either.

Zucchini Parmesan

I used leftover grilled zucchini to make this, and it turned out delicious! A nice alternative to eggplant. We used the leftovers from this dish to make sandwiches on Italian bread the next day. Yummy!

Zucchini Casserole III

This was really good. I used part-skim ricotta cheese and only one layer of pepperoni. I only had two tomatoes, otherwise it would've been even better! (I gave 5 stars only because I changed things, otherwise I would have given it 4 stars.)

Can't Tell They're Low-fat Brownies

I reallllllly wanted this to taste good, but it was just a disappointment. The texture was perfect (after adding 1 tsp. baking powder), but the flavor was the pits. Even with a little extra cocoa, it still didn't taste chocolatey at all and had a strange, stinky taste. Perhaps applesauce would've worked better than pureed prunes. I'll try that next time. In the meantime, I'll make a chocolate frosting to doctor these brownies up.

Chocolate Pudding Fudge Cake

Soooooooooooooooooooooooooooo yummy! The only thing I would do differently next time is to use MINI chocolate chips in the batter. My guests devoured it! My mother-in-law kept commenting on the delicious glaze. Perhaps next time I'll omit the chocolate chips from the batter and just cover the cake in the glaze, instead. Definitely a keeper!
