Aunt Teen's Creamy Chocolate Fudge

Excellent recipe, I've used this one for several years now at Christmas time. Mine always set up perfectly using the directions as written and I wouldn't modify that. I double the amount of nuts and that's the only change I make. Delicious!

Jalapeno Poppers I

These were very good but next time I'll leave more of the viens in for more heat. I used a grapefruit spoon under running water to scrape the seeds and ribs out. It only took a few seconds per half. We don't have corn flakes so I seasoned some homemade breadcrumbs with garlic powder, onion powder, salt and pepper.. very good! Next time I'll try some garlic in the cream cheese for extra flavor. Very good, thanks for the recipe

Nacho Cheese Sauce

Hmmm, this is just OK but it was sufficient in a pinch. I had some cheap singles to use up and my husband wanted cheese sauce on broccoli so this recipe did the trick. He had to whisk it for me because the singles wouldnt melt and we ended up adding approximately an additional 1/2 cup of skim milk because it was extremely thick. It really didnt taste like anything so I added a few shakes of garlic powder and a pinch of onion powder.

Red and Green Christmas Jalapeno Jelly

This jelly is super good. We had it on Ritz with whipped cream cheese and it was delicious! We made 2 batches and got exactly 6 half pint jars from each batch. We used up the jalapenos that were left on our plants which had turned red - I think we used about 8 pretty small japalenos to get a 1/2 cup. Since the jalapenos were red, I used a green bell pepper. This was the first time I've made jelly or done any canning and the jars sealed up perfectly. Will be giving these out for Christmas. If everyone likes them, it'll be added to our annual Christmas baskets. Thanks!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

This really IS the best bleu cheese (for us anyway). It was super thick and bleu-cheesy and the perfect consistency for a wedge salad. Will save this one for next time.. thanks.

Master Pizza Dough

Excellent crust! It was very soft and easy to roll out, but nice and chewy once cooked. I used the footnote also for the dry active yeast. **I've also now made the recipe as written with the Rapid Rise yeast twice and it's so easy and delicious. Since the price is the same for dry active and rapid rise, I'm now buying the rapid rise. I also made 2 batches last time and used one for breadsticks by pressing the dough into a small cookie sheet pan, scoring with a pizza cutter and brushing on olive oil, dried oregano and basil, garlic powder and salt and pepper. I baked them for about 20 minutes at 400° and they were delicious!

Seafood Sandwich

Better than it looks. The main picture they have up of this with the lettuce in the bun is unappetizing - it looks like it has tons of mayo. Ours were delicious, I followed the recipe as written except I used minced shallot in place of the onion.

Cilantro-Lime Dressing

Very good dressing - I used 1 teaspoon of honey, otherwise made it as written. I served this over a mexican salad with chopped romaine, black beans, mexican rice, crushed tortilla chips, shredded sharp cheddar and garlic marinated shrimp. Soooo delicious! I made the whole batch and just for 2 salads we used 1/2 of it. I will make this again!

Spinach Enchiladas

I have made this twice. For the "as written" recipe, I give it a 4. However, when I made it a second time I spiced it up with more garlic, lots of chipotle cayenne, oregano and a dash of chili powder. I added all of those to onion when it was sauting. Very, very good and I will make this revised recipe again.

Unbelievable Spinach Calzones

delicious! I did an egg wash on top and sprinkled with kosher salt and a little shredded parm. Ours were perfectly done after 26 minutes. For dipping, I made a sauce by pureeing 1 small sized can of plum tomatoes with a clove of garlic and some italian seasoning, then simmered while the calzones cooked. Delicious!

Salmon Mac and Cheese

Super delicious! I made it as written without any changes. I find regular tuna casserole is under rated anyway, but this is a lovely upgrade from the usual. Will add this to my autumn/winter meal plan. Thanks! :)

Panzanella Salad

I just made this last night and today it's the featured recipe! I used 1 container of fresh bocconcini from Trader Joe's and subbed a handful of capers for the green olives. Also added 1/2 an English cucumber, chopped, and let the veggies (minus the basil which I added at the end) marinate in the vinegar and oil while I toasted the bread in the oven. Then rubbed the bread with the raw garlic - sooo delicious!! Also, I served this immediately so the bread still had some crunch.

Sushi Roll

The rice turned out excellent. I used the tempura shrimp recipe from this site and made tempura rolls with avocado, a bit of the imitation crab mixed with mayo and lots of Sriracha & wasabi. So good, a girlfriend & I made about 10 rolls and we had a feast with our fiances. Best of all, it's super inexpensive compared to going out to sushi.

Mom's Zucchini Bread

Newest Review: So moist and perfect! I used 1 1/4 c. brown sugar with 1 cup granulated white sugar. I also added about an extra half cup or so of shredded zucchini. I think I ended up baking about an hour and 10 minutes and it wasn't over cooked or dry. It just took a long time to cook! New Review: This recipe makes the best muffins! I added 2/3 c. semi sweet chocolate chips, subbed natural apple sauce for the oil, subbed 1 cup of flour with King Arthur white wheat and used 2 over flowing cups of shredded zucchini. With these changes, the recipe yielded 22 regular muffins and 12 mini muffins. With my changes, each mini muffin is only 1.5 WW points, or 5 points for 3 minis (3 points for the regular muffins). I've made the original recipe several times, but adding the chocolate chips made this taste decadent without being unhealthy. Lastly, I baked the muffins at 350 for 22 minutes (13 minutes for the minis). Old review: Excellent! I used 3 cups of shredded zucchini as another reviewer suggested and it turned out very moist. This is a great recipe.

Chocolate Banana Bread

Delicious! I left out the chocolate chips and doubled the cocoa powder. Mine turned out very chocolatey with a beautiful texture. I made this yesterday afternoon and right now I'm waiting for the coffee to brew so I can have this for breakfast :)

Portobello Mushroom Stroganoff

Mmmm, great idea in theory. If everyone rated the recipe as written, I don't think it'd have 4 stars. Is sounds funny to say that Stroganoff has too much sour cream flavor, but this one does! For me & my fiance, this was one of those meals where your first couple bites are delicious, but then you're already sick of it. If I chose to give vegetarian Stroganoff another chance, I will try one of the beef stroganoff recipes on this site and leave out the meat.

My Crab Cakes

I'd like to give these 5 stars for flavor and 3 stars for texture. I will absolutely use this recipe again because the spices were excellent with the dippin' sauce everyone's talking about. However, there wasn't enough crab and there was way too much cracker filling. I'd double or triple the amount of crab and use perhaps 1/3 to 1/4 of the cracker crumbs. I used a can of Trader Joe's crab and I highly recommend it. It had nice chunks of meat - not stringy stuff like some canned crab brands.

Mock Strawberry Jam

I didn't care for this. I love the idea - I was so facinated with this recipe I had to try it. Unfortunately, it did not turn out well for me. The end result was an overly sweet jar of stringy, googy, sticky Jello flavored jelly. I thought the zucchini would break down but it was still very much intact. I think the other reviewer who cooked and blended her zucchini had the right idea. Knowing that, I still wouldn't make this again because I didn't enjoy the flavor of Jello as jelly.
