Easy Baked Tilapia

Yummy! I really don't care for the flavor of tilapia so I used white roughy instead and it was delicious! I did not add any frozen veggies, but used all the seasonings as indicated and the fish was delicious. I made a simple tartar sauce on the side with mayo, lemon juice and diced dill pickles.

Inside Out Ravioli I

Delicious! It made exactly two 6"x8" dishes. I baked one of them for 25 minutes at 350 and it was perfect. Really, really good. The one thing is that I think the quantity of spaghetti sauce at 16 ounces is a mistake. I looked and looked at the grocery store but I didn't find any 16 oz jars, only 26 oz jars... that and the complaints from other users that this dish was dry leads me to believe the author meant 26 oz not 16. So I used a whole 26 oz jar of spaghetti sauce and it was perfect, not too saucey and not dry at all. Just right. I froze the other 6x8" dish and will reheat it for dinner in a few weeks. My husband, who is not a very big pasta fan, thought it was delicious.

Tofu Tacos I

Oh My God, these are so delicious! I fried corn tortillas for the shells and pressed the tofu for about 15 minutes between 2 plates. I followed the recipe almost exactly except I couldn't find any flavored tofu so I used plain. I decided to try to include some tofu meals into our diet and this is the first recipe I tried. These tacos are so, so, so good - will definitely be making these again. The avocado and the cheddar cheese add lots of flavor.

Cajun Crab Soup

Pretty good base recipe. I added a couple diced yukon gold's and used whole milk because I didn't have cream. I found the end result pretty plain so I added 3 or 4 teaspoons of Old Bay, a little extra cayenne and the crab liquid. After his first bite my husband said "Gordon Ramsay would approve" hahaha :) I also served this with crusty french bread. Yum! Thanks for the recipe... one of the only soup recipes my husband has liked.

Refried Beans Without the Refry

These were just OK. There's something weird about cooking peppers in the crockpot all day - I thought it was just bellpeppers, but clearly it's jalapenos, too. They give off a funky flavor that permiates every bite. If it wasn't for that, I'd give this 4 stars as it was overall a bit bland otherwise. I will defnitely use this method again, but next time I'll add only salt and water and refry the cooked beans with diced jalapeno and finely minced onion and garlic. Thanks for the inspiration and I will continue to make beans from scratch instead of over paying for the canned kind.

Caprese Appetizer

Delicious! I bought boconccini (little fresh mozzarella balls) and I marinated them for 2 days in garlic powder, dried basil and oregano and salt and pepper. I then halved them and assembled them with one tomato a strip of fresh basil folded in half, sandwiched between the cheese and tomato. Soooo good and they were all eaten in a matter of minutes and there were only 5 of us eating!

Chocolate Cavity Maker Cake

Excellent!! Made exactly as written except the cake packages apparently have shrunken a little as I could only find 18.25 oz boxes. I have a 9" bundt pan so I baked the rest of the batter in a little 3"x5" pan which we snacked on when it was hot out of the oven. I also used oil and cocoa powder to prep the pan. I made this cake for my husbands birthday and filled the center cavity with slice strawberries and served with vanilla ice cream. It was a huge hit with him and our friends. The mini chocolate chips melt into delicious gooey chocolate pockets which is really great. I'm glad I didn't leave out the mini chips because they're an integral component of the recipe. I highly recommend this to everyone and I would like to try it will all vanilla products and serve it with mixed fresh berries and whipped cream. Mmmm can't wait.

PHILLY Mini Potato Bites

These are pretty tasty and were well received. I made 3 appetizers though and the others were all eaten but there were left overs of this one. Most people commented on how good they were. If I make them again, I'll broil them before topping with the green onions.

Szechwan Shrimp

Really good flavor but not enough sauce. I shrunk it down to 3 servings and it wasn't enough for the two of us even with lots of broccoli and chow mein noodles. If I make it again, I'll still use 12 oz. of shrimp but double the sauce and add bamboo shoots.

Bread Pudding III

This was really, really delicious and so simple to make. I was planning on making a New Orleans bread pudding souffle but got lazy (and too full) on Thanksgiving so instead I snacked on it for a few days after thanksgiving. Especially good with coffee!

Smoked Salmon & Watercress Salad With Red Onion-Caper Vinaigrette

I used mixed field greens and smoked salmon from Costco. Overall this is a delicious salad except that the dressing is too sour. I halved the recipe and served it as a meal for my husband and I. We both agreed that it's a delicious and healthy meal but if I make it again, I'll probably halve the amount of lemon juice and vinegar next time.

Dried Cherries, Pecans and Rosemary Brie en Croute

I don't care for puff pastry as it's too oily they remind me of cresent rolls from the tube. SO.... I wrapped mine in parchment paper instead and it was awesome!! Served with water crackers, this was a big hit no Christmas night. Not too sweet and nicely balanced. Yummy :)

Becca's Bruschetta

This was a big hit at our Christmas eve party - it was by far the most liked appetizer of the evening. I had to make a few changes, for example, my Christmas budget didn't allow for paying $6 for the fresh herbs so I used fresh basil only which I'd bought for another recipe. Also, I mxed the cheeses in with the tomatoes and let it all marinate for a few hours. Lastly, I pre-toasted the bread so it didn't get soggy and then broiled the assembled bruschettas for about 3 or 4 minutes until the cheese just barely started to melt and the edges of the bread got nice and brown. These are delicous and best of all even at room temp they are great.

Chocolate Chip Cheese Ball

This is delicious and it was more popular than someone else's homemade cheesecake with chocolate graham cracker crust at our Christmas eve dinner! I left out the chocolate chips and called it a Cheesecake ball and served it with strawberry halves and quartered chocolate graham crackers. Everyone's favorite was the cheese spread on strawberries. Other than leaving out the chips, I followed the recipe exactly and it was a success!

Cranberry Pistachio Biscotti

These were so easy to make and very tasty. I made them exactly as directed and found they need an additional 3 minutes when in the log shape and an extra 2 minutes to harden in the oven. I might drizzle a little dark chocolate over them once cooled. Will be giving these out in our Christmas goodie baskets.

Mincemeat Cookies

I just spent the past several hours baking these and will freeze them until next week (Christmas). I made Alton Brown's mincemeat filling which turned out a little bitter. Does mincemeat usually taste bitter? I don't know because I've never had it before. The cookies are really more like minicakes, very puffy. I did not use the frosting but I am now considering it to counter the bitterness... we'll see. How well my family receives these will decide whether I make them again next year.
