Pumpkin Coconut Bread

So Delicious!! Didn't have enough eggs so I found through a google search to sub 1/3 cup mayo per egg, so I used 2/3 cup mayo and 2 eggs, and then I added 1/2 teaspoon of baking powder to help leaven since the mayo wasn't going to do that like an egg. It worked great. I made one 9x5, one 8x4 and two 2 1/2 x 4 loaves.

Cranberry Orange Bread

Excellent and very easy to make. I subbed the zest of a navel orange plus the juice of half of it for the can of mandarins. The berries are tart but it's great with the sweet bread.

Make-Ahead Baked Egg Sandwiches

These are delicious. I made two batches. The first with toasted English muffins, ham and Kraft American singles. I seasoned the eggs with salt, pepper and a sprinkle of garlic powder. To toast the English muffins I split a dozen of them and toasted them under the broiler on a baking sheet. I thought they turned out excellent, though I did have to cook the eggs for about 16-18 minutes and not 8-10 minutes as indicated in the recipe. For the 2nd batch I used Pillsbury home-style biscuits and to the raw eggs I added a pound of browned, drained and cooled Jimmy Dean sage sausage and then baked the egg/sausage mix for about 15 minutes. Then I assembled them with a square of sausagy egg, a Kraft American single and the biscuit. Also delicious! I prefer the English muffin version, though.

Delicious! I made this for breakfast with a couple pieces of wheat bread as I didn't have pita bread. Not only delicious and healthy but an excellent way to use up the abundance of our summer garden tomatoes.

Dumplings

Awesome!! Doubled the butter because everyone else said they did, too, not sure if it was necessary. My husband prefers Bisquick dumplings but loved these! He said they were perfect.

Quick and Easy Alfredo Sauce

Tasted pretty good and was easy to make. I used neufchatel cheese which is the lower fat cream cheese and I wouldn't recommend that because it created a texture that was a bit grainy. This also could use some salt. I think anyway, I'm pregnant and I think my taste buds changed a bit. I definitely added a lot of salt :) I will still make this because, as the title indicates, it is quick and easy to make.

Ranch Dressing II

Delicious tasting as is, but is way too thick. I added about a 1/2-2/3 cup milk to thin it out enough to pour and it was still very thick. Also added about a tablespoon of red wine vinegar.

Yummy! I made it with "krab" -- I know it's a sin but I like it -- and otherwise used the other ingredients called for. I'm eating a half batch for dinner with water crackers.. Mmm diet food.

Sam's Famous Carrot Cake

Super moist and delicious. We really enjoyed this cake and found that it was rather quick to whip up. I added an extra cup of shredded carrots and left out the nuts, coconut and raisins. For the frosting, I used 1 1/2 bricks of cream cheese and about 1 pound of powdered sugar, plus a couple teaspoons vanilla. Extremely yummy and we'll definitely make this again. I think next time I'll add the nuts though. I also baked in 2 8" round cake pans for exactly 30 minutes which was perfect.

Persimmon Bread I

Tasted good! Didn't have much persimmon flavor, which is my preference - I have a persimmon tree so I was trying to be good and use them up even though I don't particularly care for the flavor of the fruit. This was very easy to make. I added about a cup of semi-sweet chocolate chips and subbed dried cranberries for raisins.

Slow Cooker Turkey Legs

What a great way to cook Thanksgiving style turkey on any night of the week. I cooked 3 legs, which ranged from sorta small to pretty darn big, for 6 hours. They were all tender and moist. The skin was gross though, so you definitely want to remove it before serving these for dinner.

Southern Fried Chicken Gizzards

Delicious, crispy, oniony flavored goodness. My husband and I have really crossed over to the dark side :) We were vegetarians (he for 11 years, me for 5) and now here we are eating deepfried chicken gizzards for dinner! :) Very tasty, boiling them for 2 1/2 hours sure felt like a long time. I cooked ours for 1 1/2 hours, then fried in batches at 375. Made a spicy dipping sauce of mayo, ketchup, hot sauce, garlic and onion powder and lemon juice. It was totally delicious. I served it with a green salad lightly dressed with a homemade mustard vinaigrette.

Rainbow Salad

I didn't make all the jello at one time, I made 2 at a time, just like other reviewers suggested. Turned out pretty good and people really liked it. I added coolwhip to the top with sliced kiwis and quartered strawberries. Used it at a birthday cake type dessert for my husband's grandmother's 86th birthday :) I also mixed it up and used different flavors: berry blue, mango, fruit punch, lemon, lime and cherry lemonade.
