Curried Couscous with Spinach and Chickpeas

A very decent dish with a few personally motivated modifications. I omitted the sun dried tomatoes and dill because I'm not a fan of either and secondly I thought they (the sun dried tomatoes) might taste odd with the other ingredients. Instead I used what I had in the fridge which was a red bell pepper and two small tomatillos (which added a great tartness to the dish) It turned out very well with all of the other ingredients and to finish I mixed in a dollop of Greek yogurt to add a little acidic creaminess and make it almost korma like. Very tasty.

Chile Rellenos Pie

Made a few alterations based on what I like and how I like my quiche to come out. I sauteed 1/2 a sweet onion and 2 garlic cloves to make 2 quiches. Used 2 diced tomatillos (one large one small), 1 bell pepper split between both and a bit of cayenne to the egg mixture which I whipped separately and poured over the other ingredients (3 eggs each quiche with milk, 4 would have spilled over the crust). Added fresh lime juice to onions and let tomatillos sautee for about 1 min. with the onions at the very end of cooking them to reduce the moisture (not big on soggy quiches, which is why I didn't add the diced green chilies to the mix) Pressed cheese into crust, layered the other ingredients and topped with cheese. Served with fresh avocado and sour cream. Turned out beautifully.

Quinoa Black Bean Burgers

Big Hit! These veggie burgers turned out better then any store bought variety, and even though I'm not a vegetarian (the boyfriend is) these were very satisfying. As others suggested I used oats rather then bread crumbs which made the consistency easy to cook and eat (as well as not adding too much sodium to the mix). I cooked the quinoa with a quarter cube of vegetarian bullion, and topped the burgers with homemade guacamole, fresh tomatoes and spring mix and served them on whole wheat kaiser rolls. Overall a very excellent recipe.

Vegetarian Korma

Wonderful vegetarian meal, in short. As some other reviews suggested I used yogurt (used fage greek yogurt to add protein) rather then heavy cream and it added the perfect flavor to this dish. Also, rather then a pre-made curry powder I used garam Marsala, turmeric and a dash of cinnamon as the spice mix and it made for a well balanced dish.

Vegetarian Tortilla Soup

Very tasty veggie dish. Used a bag of caldo veggies to add a bit more substance and turned out wonderful. Also added a bit more cayenne for kick (but I really enjoy spicy food).

Eggplant Rollatini

Quite a lot of effort for fairly minimal results, I will try as others suggested and do this as a flat bake next time rather then rolling (you put the same effort in to a Parmesan but yield more food..). Also, ended up a bit too salty with the combination of prosciutto and bread crumbs (perhaps it was the brand of each but it was way too much).

Whipped Cream Cream Cheese Frosting

Really nice frosting if you tweak the recipe a bit as others have noted. Used less then a cup (approx. 3/4) of whipping cream and this held up very well. Also, chill for about 20-30 min. before using and it can be used well on a double layer cake. I used this with a strawberry compote in the center and a chocolate ganache topping and it did not fall or melt.

Easy Broccoli Quiche

Made a few modifications based on some on the other reviews, noting that even with adding significantly less milk then the recipe asks you still end up with more liquid then needed or will fit into a pie crust. Next time I will be using three eggs rather then four and a 1/4 cup milk.
