Egg Noodles with Spinach

Excellent light lunch! I made exactly as written, then topped with a little grated Parmesan cheese and a tsp or so of lemon juice. Flavors were perfect!

Pico de Gallo

This Pico is dead on! Walmart Markets sell a pico that I love. This is the exact replica of that! I'm so happy to find this recipe. The only things I changed were use white onion and the juice of 1 lime, because I love limes. It turned our awesome! Going to make for Christmas appetizer tomorrow. Should be a hit!

Oven Fried Chicken II

I used 2 large chicken breasts sliced thin to make 4 halves. Seasoned the flour with onion and garlic powder and italian season. I followed the advice of another reviewer and cooked the chicken with oil in the bottom of the pan at 350 for 30 min turning every 15 min. Then turning the heat up to 375 for remaining 30 min, turning every 15 min. This really did help it get the true fried chicken crispiness you want from this recipe. Let the chicken rest on paper towels for 10 min. Served with mashed taters and steamed peas and what an excellent dinner! Chicken came out absolutely perfect without the mess of actually having to fry the chicken. Will definitley be making again!

D's Famous Salsa

This turned out fantastic. Due to heart failure, I'm on a sodium restrictive diet, so I'm always looking for ways to make my own of the high sodium foods I enjoy like soup, salsa, spaghetti sauce, taco season, etc. I followed the recipe exactly except I halved the recipe since it was my first batch. Used a can of no salt added diced tomato with garlic, basil and oregano - drained. 3/4 white onion, 1/2 lime juiced, 3 tbsp green chilis, 1/4 tsp table salt and 1/4 tsp no salt substitute and 1.5 tbsp chopped fresh cilantro. Threw everything in the blender and pulsed a few times to my desired consistency. Chilled for a couple hours and WOW, the natural taste of homemade salsa was awesome!! I now have a very, very low sodium salsa I can eat with my no salt tortilla chips, eggs, meatloaf, etc. Wonderful!! Will be making again and again.

Beaker's Vegetable Barley Soup

This is an excellent vegetarian soup! I just recently started trying to cut out meat from my diet, but love soup. This is thick, hearty, and excellent - not even missing the meat. I'm on a low sodium diet, so I used 2 q unsalted chicken broth, low sodium garbonzo beans and rinsed them thouroghly, no salt added diced tomato, no salt peas instead of the zuchini, 3/4 cup quick cook barley, and everything else as directed. Super yummy! Will be making again for sure.

Potato Chicken Stew

This turned out exceptional! I did modify it to meet my low sodium diet due to heart failure. I followed the directions exactly except using 32oz low sodium chicken broth, 2 cups of water and 2 tsp low-sodium chicken granules. Followed everything else as directed and it came out perfect. Very tasty, and low in sodium.

Very good! I love this soup, but because of heart failure, I'm on a very sodium restrictive diet. So I made exactly as written, but made with 32 oz low-sodium chicken broth,1 tsp no sodium chicken bouillon granules,unsalted diced tomatoes with oregano, basil and garlic, and it was goooood! To the average person it's probably a little bland, but for me it was perfect and I got my soup fix I was craving. Update: I have since made this recipe several times. I've added a 4 oz can of diced green chilis and definitely use fresh cilantro if you can. Also added 10 oz extra lean ground turkey cooked with Mrs. Dash taco season and added it to the soup. It's a great way to add a little protein to a nice, light soup. This is definitely one of my favorite very low sodium soups on this site.

Albino Pasta

I've recently been diagnosed with congestive heart failure so I'm on a sodium restrictive diet, trying to keep my daily intake below 2000mg. This meal was perfect! I changed to portion to just 1 and used 1.5oz ounces egg noodles. Boiled as normal but added a few frozen peas and broccoli florets to the noodles about 2 minutes before they were ready. Sautéed the garlic as called for and tossed all together in a bowl. Topped with the Parmesan, a little spray butter, and a few squirts of lemon juice and it was a perfect very low sodium lunch! And the portion size was just right.

Shepherd's Pie

This was my first time making Shepherds pie. I followed the directions except we used ground turkey. I used frozen peas and corn and a can of carrots which I chopped up. Added everything to the casserole dish, and topped with shredded cheddar. Made the taters as directed on the box and topped the mixture. It came out incredible! Will be making this again for sure!

Asian Lettuce Wraps

What a nice change of pace for dinner! I followed the recipe exactly but made with ground turkey since we don't eat beef. I also made some jasmine rice and topped the lettuce cups with rice, meat mixture and shredded carrots. I also followed one review and made the dipping sauce to accomodate the wraps. So, so good! Can't wait for leftovers tonight! I'll be making this again for sure!

Grilled Orange Chicken

This is a great sauce! I made as written, but didn't have fresh chives, so used dried. I grilled chicken breasts on the foreman grill. Basted each side and turned frequently basting each time. I think the only thing I'd change is a little less balsamic vinegar and more marmalade to make it sweeter. Other than that, very, very good!

Perfect Garlic and Parmesan Potatoes

These turned out really good. The cooking time seems to be a little on the low side, as mine ended up taking 50 minutes. I topped with a little more Parmesan than it called for, but that's just due to preference. Will definitley make these again.

Chicken Noodle Casserole II

Very, very yummy comfort food! I boiled two chicken breasts and shredded them before hand. Added everything to a bowl to mix together, added to the casserole dish, topped with a mixture of shredded mozzarella and swiss cheese. Then topped with Panko bread crumbs and baked for about 25 minutes. The only thing I'd change was add a little more soup or milk. It was just a tad dry, but other than that, it tasted awesome!

Grilled Lemon Chicken

This was a very tasty marninade. I made as written, let my chicken breasts marinate for over an hour. Then cooked in a skillet with the marinade until the chicken was done. Most of the sauce cooked away, so by the time the chicken breasts were done, the red peppers and remaining sauce grilled perfectly to the chicken. This was an outstanding marniade. Will definitley make again!

Allana's Excellent Potato Soup

This turned out awesome! So tasty! I made a couple minor changes just based on my tastes. I ended up using 3 cans of chicken broth because the taters weren't submerged in liquid. I boiled everything until the taters melted in my mouth. Didn't include the ham, instead topped each bowl with shredded cheddar, crumbled bacon and green onions. This one is a keeper!!

Doggie Birthday Cake

I made these for my 10-year old yellow and black labs! They turned out fantastic and let me tell you how much my babies loved them! I made exactly as written and instead of putting in a cake pan, I used a muffin pan and made 8 muffins. Will definitley make again!

Easy Vegetable Soup III

This was very good - and so easy! I used Classico tomato and basil spaghetti sauce. Instead of 6 cups water, I used 3 cups chicken broth and 3 cups water. I also boiled a chicken breast before hand and shredded it and added to the soup about 5 minutes before it was ready. Light and tasty soup! Will definitley make again!
