Peach Upside-Down Cake

Everyone loved it! Next time I think I will toast the coconut first and use either fresh or frozen peaches with peach nectar. A definite keeper!

Banana Raisin Cake

I only used 3/4 cup of oil, and 1/2 tsp. of salt. Instead of raisins, I sprinkled 1 cup of mini chocolate chips on the top. Everyone thought it was divine!

Coconut Ice Cream

My family loved it. I toasted about 1 cup of sweetened, flaked coconut before adding it. It is very sweet - perfect after a Thai dinner.

Best Baked Chicken

My family enjoyed this recipe. I did make a few changes that lowered the sodium content. I did not use either celery salt or garlic salt - I substituted a non-salt poultry season. Also, I let the chicken sit in the sour cream mixture for several hours. Finally, instead of stuffing mix I crushed garlic flavored croutons. I will definitely make this again.
