Light Oat Bread

I make 4 loaves of this every couple of weeks, slice and freeze, then toast when required. This is a fantastic recipe. I don't use the breadmaker. Instead, I use my kitchen aid and shape by hand. I often use 50% wheat flour with 50% white flour. I also add linseeds, pumpkin seeds and other nuts. FANTASTIC and very versatile! Thank you

Molten Chocolate Cakes With Sugar-Coated Raspberries

I've cooked this twice. First time, I prepared it and then put it in the refrigerator for 3 hours and cooked it after dinner. Second time, I cooked it straight away. It was definitely better the first time (more dense and chocolatey). The second time was too fluffy and dry. I'm guessing the reason was that the eggs had some time to deflate. Next time, I will make it in advance again. Thanks for the great recipe!

Easy Pavlova

Fantastic recipe - surprisingly easy. The key to success is to not beat it too much. Really good flavour. I used only 1 cup of sugar. I also turned the oven off and let the pavlova cool inside the oven (to ensure it was crisp). Thanks for the recipe!

Lemon Blueberry Bread

This bread had lovely flavour - nice and lemony. However, I don't think I will be making it again. I followed the recipe exactly but it took 2 hours in the oven and was still very undercooked and too moist. It wasn't wortht the oven time.

Apple Pie Bread

Excellent recipe! I often cook this to get rid of apples that aren't so fresh anymore. It's great that you don't have to peel the apples and it's a good way to get apples into kids because they mostly disappear. I use 3cups of apples.

Beth's Spicy Oatmeal Raisin Cookies

Like others I used all butter. I didn't have cloves, so I just used cinnamon. The first batch were only so-so. The cookies turned out very flat and spread too much. However, I froze half the batch by dropping teaspoonfuls on a cookie sheet and when I baked those (for an extra 5 minutes), they were alot better - they baked in nice heaped rounds. Next time, I will try adding choc-chips instead of raisins. It's a very nice chewy cookie.

Banana Crumb Muffins

These muffins were good. I only had 2 bananas so I added 150ml of vanilla yoghurt to pad the liquid out. I thought the baking soda taste was a little strong. Also the muffin top is very sweet whilst the muffin itself isn't. Next time, I may cut out some of the brown sugar from the topping. Will definitely cook them again (despite the above comments). They still tasted good 2 days after I baked them.

Easy Apple Cinnamon Muffins

These were fantastic. They are delicately spiced and very moist and tender. They also filled my house with the most beautiful aroma. I was a little worried that there was too much apple. I used 2 medium to large sized apples - one grated and the other chopped. Because of the apple - I made 11 yummy muffins instead of 6. But the end result was very good - most of the apple disappeared and there were plenty of nice soft chunks of apple left. I used the crumble topping from 'Banana crumb muffins' - there's far less of it and I've used that successfully before. Definitely try these!

Vietnamese Rice-Noodle Salad

This is a fantastic recipe. Perfect in summer when you don't want a hot meal. I added some grilled lemongrass beef skewers to complete the meal (I believe that with the grilled beef, this is an 'authentic' vietnamese meal). I left out the mint (don't like it) and substituted shredded iceberg lettuce for the cabbage (didn't know what napa cabbage was). Also added some shredded capsicum (what you americans call 'peppers' I think). All in all a very tasty cold noodle meal!
