Flourless Chocolate Cake I

Really enjoyed this! Scaled it to 3/4 amount of the recipe so I could use my 8" heart-shaped springform pan. Turned out great! This recipe worked best for me when I halved the butter.

Peanut Butter Vegetable Chicken Soup

This was tasty. The pb added a kind of Thai taste to it, and just made it unique. I added lots of veggies, as other reviewers have suggested. Freezes well too.

Slow-Cooker Chicken Tortilla Soup

Have made this many times now, it's a very adaptable recipe. I've added more tomatoes, zucchini, black/kidney beans, etc. Every time it's still great. I also use the tip about cooking the chicken in the soup, it's the easiest thing to do!

Chantal's New York Cheesecake

Have made this a couple times, with success. Followed the recipe exactly the first time, but no water bath -- I left it in the oven for hours, but it still had a crack. No big deal, it tasted fantastic. Second time around: I ran out of sour cream (only put in about 1/2 c), again no water bath (but I put a big casserole dish of boiling water on the lower rack, for steam), only left it in the oven to cool about 3 hours, and it turned out perfect, no cracks, great consistency!

Flourless Peanut Butter Cookies

Rich and dense, these are cookies for true pb lovers! Used a fork to flatten the balls, it worked well. One bad thing, they are crumbly, so they don't travel very well. But delicious!

Baked Slow Cooker Chicken

Used a 3.5 lb chicken, rubbed (under the skin) 1 t paprika, 1/2 t. freshly ground pepper, and a pinch of garlic salt. Instead of foil, did 2 carrots, 1 large onion chopped into large pieces on the bottom of the crock pot. Cooked on low for 8 hours. Pretty easy and tasty!

Lavender Shortbread Cookies

Crisp and buttery and delicious! I just wanted a hint of lavender, so I decreased it to 1 tablespoon dried lavender. That was still a bit strong, so next time I might just do 1/2 T. Still good!

Chicken Stir-Fry

Didn't read the recipe right, so I didn't marinate the chicken in the soy sauce mixture. Instead, I pan fried the chicken and onions in the soy sauce / ginger mixture, then set aside. Stir fried the vegetables (green pepper, carrots and broccoli) with a 1/4 teaspoon crushed red pepper. I added the chicken to the vegetables, and then stirred in water/bouillon and cornstarch. Turned out great! Next time I might put in a little brown sugar as another reviewer recommended.

Crunchy Caramel Corn

I've made this a couple times now and love it! Perfectly crunchy and so fast! My microwave is a higher wattage so my microwave times were a bit shorter for the last step. I did two 1 minute increments (instead of 3 minutes straight) in the microwave, stirring each time. The color starts to get darker and you can tell if it's getting too dark, it's going to burn. It cools quickly and is ready to eat in minutes.

Apple Crisp II

Delicious! Used granny smith apples, the topping turned out so well, it was a hit! Will probably use less water next time, it bubbled over a bit, and then when it cooled, it sloshed over the edge during transport in the car.

Asian Orange Chicken

I didn't have rice vinegar so I just used regular vinegar, did everything else the same, and marinated the chicken in the sauce overnight. Very flavorful and healthy-tasting! I did try to make the chicken pieces crispy by cooking them separately and then pouring the sauce over them just before serving. The chicken was a little crispy, but not noticeably. I'll probably cook it all together next time, and forego the crispiness.

Very good brownies, fudgy and chewy, with a crispy top! I also did 2/3 of the recipe (scale to 16 servings) and made it into a 8x8" square pan. Will use this one again!
