Swedish Meatballs I

This recipe is so easy it's ridiculous! I've never had swedish meatballs before (what can I say? I'm from Los Angeles, not Minnesota). I added an extra egg and some crushed Ritz crackers to the meatball mixture so they wouldn't turn into mini-hamburgers while cooking (it worked) and served them over egg noodles. Yummy!

Caramel Apple Pork Chops

This recipe sounded yummy but as I was pressed for time, I threw it all in a crockpot. Since the chops had 9 hours to mingle with other ingredients, the pork was fully infused with the brown sugar and apple flavors by the time we ate it! Yum! After reading the other reviews here, I used granny smith apples (the only kind I like) and doubled the other sauce ingredients. During the last 30 minutes, I fished out the apples (which, after 9 hours in a crockpot, were very hard to distinguish from the pork!) and added some egg noodles. Delicious!

Zesty Hominy and Cheese

Super easy and delicious! I served this to my unsuspecting, hominy-phobic boyfriend (who was eyeing it warily in the suspicion of it being old mac and cheese or some other unpleasantness) and he ate every bite. I didn’t have any chile peppers and I don’t like cayenne peppers so mine was probably blander than others but it was yummy anyway. I used sour cream but next time will try the plain yogurt to save on calories.

Awesome and Easy Creamy Corn Casserole

Oh man was this good! After reading the reviews here, I knew it would turn out more like a corn bread than a casserole, so I split the batter between a muffin tray and an 8X8 pan. The muffins were done in 20 minutes and they were perfect! Slightly crisp on the outside and light and creamy on the inside; sheer heaven! (I didn’t share!) I served the remaining casserole portion as a side dish and it was well received. I ate the leftovers for breakfast. Clearly I’ll have to make this infrequently or my butt will get too big for my chair! Thanks for the great recipe!

Lemon Parmesan Spaghetti

Definitely yummy, but am I really the only person whose sour cream curdled upon impact with the lemon juice? The net result was a lemon butter pasta with a few flecks of curdled sour cream here and there. I managed to hide the unsightly white flecks with some broccoli, black olives, and sliced grilled chicken, but next time I’ll save the calories and omit the sour cream.

Famous Butter Chicken

Wow! I'd give this 10 stars if I could! Hands down THE juiciest chicken I’ve ever eaten. I generally hate white meat but decided to stick to the recipe here and used boneless breast filets, and I’m glad I did because it wouldn’t have been as pretty with dark meat. After reading myriad reviews here, I made a couple changes: I used an 8X8 Pyrex dish so the juices would stay put, I used only 1/2 of the required butter which was plenty, and I added about 1/4 cup of flour to the cracker crumbs so they’d adhere to the chicken better. The end result looked like KFC extra crispy chicken but tasted like pure heaven on a plate! Even my picky 2 year old loved it (when he saw his cubed portions, he exclaimed "nuggets!" and promptly devoured them.) This is definitely going into the regular rotation!

Elvis Presley Cake

I poked holes in mine before pouring the pineapple mixture on top so it wouldn't slide off. It turned out well but the finished product is basically just a plain white cake (you can't see the pineapple and sugar in it) with a very heavy frosting on top.

Cream Cheese Won Tons

Excellent recipe! I've never done wontons before but they came out excellent! After reading the reviews here, I used crabmeat the first time but the other flavors overpowered it - so I used clams the second time and it was much better. (I should have just followed the directions the first time!)

Better Than...Cake

This is the moistest cake I've ever had! After reading the reviews here, I added the chocolate chips to the top of the cake before putting it in the over so they wouldn't sink to the bottom, so the top of my cake was chocolately brown which was fine with me! I made a cream cheese frosting to top it with and that made it even better. Definitely a keeper!

Cheezy Chicken Spaghetti Bake

Because this recipe is easy, I really wanted to like it, but my family and I weren't impressed. After reading the reviews here, I used 16 oz of spaghetti but even that didn't help. It didn't make anyone hurl but nobody ate more than a couple bites. It was just a big gloppy mess. I threw most of it away.

Simply Lemon Baked Chicken

What a simple recipe! The first time I made this recipe I followed it to the letter and it came out tasting like, well, baked chicken. Nothing spectacular. But I wanted to give it another chance so I made it again last night with six lemons instead of one, (squeezing one whole lemon and a tiny bit of butter over it every 30 minutes and then basting it within an inch of its life) and it turned out lemony and delicious - very tender. Definitely a keeper.

Pork Chops to Live For

An excellent recipe - an innovative use for the crock pot, and very delicious! I've made this 3 times and it gets high praise every time. The last time I made it I skipped the egg/flour/fry portion because I was in a hurry, and they turned out just as good!

Anniversary Chicken I

Yummy, different, cheap, and easy - 4 things I love in a recipe! After reading the reviews here, I added the cheese and bacon (I snipped up about 4 slices of pre-cooked bacon - I'd like to hug whoever invented that stuff!) during the last 15 minutes of cooking and it turned out great. I think next time I'll try it without the cheese to cut down on the fat, and because the flavors of the teriyaki/ranch sauce are flavorful enough without it. (And I could live on cheese so for me that's saying a lot!) A great recipe!

Slow Cooker Mashed Potatoes

This recipe is awesome! I leave out the butter because the other fats do the job just fine. I also don't cream the potatoes because my family likes this recipe in a more chunky potato-salady consistency. Yum! I thought the milk solids would separate in the crockpot and make for a gross mess but it didn't at all. All in all - a WONDERFUL recipe. I can't wait to show it off for the holidays!

Rempel Family Meatloaf

I've never met a meatloaf I didn't hate so my personal opinion of "it was less terrible than any other meatloaf I've had" is quite a compliment. The other members of my family LOVED this recipe (even my 2 year old picky eater!). I was instructed to throw away any other meatloaf recipes I might have and use ONLY this one from now on. :-) Thanks for such an easy, delicious receipe!
