Apple Pie Cider

Apple Pie by Grandma Ople

I admit, after reading the reviews, I did do some things a bit different. Most reviews said to add cinnamon, etc., so I did in the amounts I would normally put in an apple pie. I did mix the syrup with the apples first, saving some to glaze the crust. It got very thick...but it may be I was slow. I really should try it again without the spices, but I just can't imagine apple pie with no cinnamon. I also cooked it about 20 minutes longer than it lists, as the apples just didn't want to get soft and we don't like crunchy apple pie. The pie is very good. I'm giving it 4 stars though because it tasted just like the pie I usually make, which is also very good. Thinking about it, the ingredients are very similar to what I use, only I use less flour and butter. The main difference is this one is harder to make with boiling of the syrup, etc., than is my usual recipe where I just put the spices and sugar on the apples. Also, 1/2 cup of butter instead of the two tablespoons I usually use, for no discernable taste difference, seems like a waste of calories - apple pie is fattening enough. If anyone cares, my recipe is 1/2 cup white sugar, 1/2 cup brown sugar, 1 tsp cinnamon, 1/8 tsp allspice, 1/8 tsp nutmeg, 2 T flour and 2 T melted butter and 1 T lemon (optional), just toss it all together, put it in a shell and bake it. I can't remember the exact time and temp, but it's pretty standard. I brush the top with butter and sprinkle with sugar toward the end.

French Baguettes

Having never made French bread, I was very pleased at how easy this was. It didn't turn out quite as well as I'd hoped, but my house is COLD and so I had to keep warming up my oven a bit and putting it in there to raise. Still, it came out crusty and chewy and tasty. I'll make this again.

Coq au Vin alla Italiana

This was really, really wonderful. I used my largest skillet and took the chicken out while sauteing the sausage and veggies, then returned it before the tomatoes and wine. I ended up simmering about 45 minutes and then removed the chicken again for a couple minutes and added a Tbsp. of tomato paste to thicken the sauce a bit. Served it with bowtie pasta and crusty baguettes from a recipe on this site. I think next time I may put everything in a dutch oven or covered casserole and cook it in a slow oven for a couple hours. It would be even more magnificent.

Best Brownies

I was desperate for something chocolate and had very little flour, so I tried these. They taste good, but the icing was incredibly thick...so much so it tore up the brownie. Do make sure that you read the other reviews about the icing before you try it.

Beef Taco Bake

This is really good! I can't give a 5, because I do think it needed spices, which I added. I added 1/2 package of taco seasoning and about a tablespoon of chili powder. It was awesome. Next time I think I'll add some black beans and corn, to make more of a one-pot meal. Had it with salad.

Sausage Balls

I should preface this by saying, I really love sausage, but I really like these. They made about 40 balls of about 1 heaping tablespoon each. I used regular sausage and a medium cheddar. I can see how spicy or italian sausage and sharp cheese would be even better. I added just a tiny bit of cayanne pepper and garlic powder and I baked at 325 for 25 minutes. They were actually kind of crispy on the outside and yummy all the way through.

Ginger Shortbread Wedges

Easy Focaccia

I really liked this bread. I followed the recipe as closely as I could. I didn't have bread flour, so I used all purpose with about half the vital wheat gluten I would normally use to make bread. I only had dried rosemary. I think it turned out very well. I used my large pizza stone to bake it on and the bottom didn't brown at all. I'm not sure if that's supposed to happen. But all in all it's very good.

Amish White Bread

Excellent! I'm new to bread baking, but I won't be for long with this recipe. I cut the sugar in half based upon the reviews but otherwise followed the recipe exactly. I didn't have bread flour, just all-purpose, so I added some essential wheat gluten I bought a while back, when my first few attempts at baking bread failed. I made half into dinner rolls and the other into a loaf. It rose very quickly. So much I had to put it in the fridge to keep it until dinner was ready so I could have hot rolls. Even so, I had to punch the loaf down a second time and let it re-raise since I didn't have room in the oven. The next day I cut in in half, and made it with the suger called for, making it into cinnamon rolls. They were delicious! I'll be making this bread again and again! Just wonderful!

J.P.'s Big Daddy Biscuits

Giving this 4 stars based upon my two tries, but I may change it over time. They don't look as pretty as the picture and mine just aren't raising like they should. I used butter flavored Crisco shortening and skim milk, because that's what I had. My first try the baking powder was old. The second I used brand new and they were better, but just weren't what I'd hoped for. I want BIG fluffy biscuits, like you get in a restaurant. I have been baking them right away, so next time I'll try letting it set a bit and be more careful about not twisting the cutter, hard to do when you are using a glass. The flavor is good, so I'll keep trying.

Chicken Tortilla Bake

For the record, I consider 3 stars "good" just not "very good". I made this the other day and it's okay, but I think it needs some work. In defense of the recipe, I used diced fresh green chili pepper because I didn't have any canned. It might be better with canned, which would be more mushy and the flavor might permeate the dish more. Also the onion didn't get soft, it's still crunchy and I don't care for uncooked onion. I tried the tortilla and cheese on top as a review suggested, but this didn't get crispy, just tough. Won't do that again. I did add a can of drained black beans, because I love them. Unlike other reviewers, I did not find this to be salty. Oh - I also made 1/2 a recipe, using only 1 can of soup and 1 cup of chicken broth. Next time I make this - and it's good enough and easy enough I will likely make it again - I will saute the onion first, with the peppers if I use fresh again, so they get cooked, and I may add some cumin to the mixture too.

German Chocolate Cookies

These are AMAZING! I left out the raisins - and I honestly can't imagine why anyone would want to put them in these cookies - but they were just delicious. I used Devil's Food cake mix, because it was all I had. They were the easiest cookies I've made in ages. I used my small cookie scoop and it made 40 cookies. I can't recommend this recipe enough!

Fried Corn with Smoked Sausage

I have to admit, after it was done in the skillet, I didn't think I'd like it. But it's really tasty! I followed the recipe exactly (including the Accent) except for leaving the onion powder out, because I didn't have it, but I don't think it's necessary at all. I did cook the onion and peppers longer than called for, mostly because I underestimated the amount of time cutting would take. I served it over rice. This is a really good recipe as-is!

Batter White Bread

Success! I haven't ever had success with bread but try, try again. So glad I did! I ran out of white flour and had to use a cup of whole wheat and added a bit of wheat gluten I had purchased when my last bread failed. It turned out great and my picky son had two slices, still warm from the oven. I'll definitely make this again!

Good Old Meat Pie

I thought I'd update to say I've now made this with chicken, and it was just as good as beef. We have taken to microwaving the diced potatoes and the carrots until they are just tender in order for them to be throughly cooked in the pie. Original review: Ok, this was delicious! Could use more liquid (what can I say, I'm a gravy person!) and I used two potatos instead of one just to bulk it up a bit. Also added mushrooms. I added half a teaspoon of salt and because of my son had to leave out most of the onion. It is a bit heavy on the garlic but we love garlic so that didnt phase us. Just tone the garlic down a bit if you dont like it as much. I would highly recommend this recipe. Delicious how it is but easy to tweek!.

Fragrant Chicken Curry

Edit: I added about 1 tsp of salt to the leftovers before refrigerating, and the curry was actually much better the second day! Original review: Another reviewer on here described this as, stragely, both bland and spicy. They were right. I followed the recipe exactly with the exception of adding some zucchini and carrots. I did use hot madris curry powder, which is what I always use. It was quite spicy, but there was something missing. Salt? Thai basil? More garlic? I just don't know. I will likely make this again and see what I can do to find the missing ingredient.
