Spicy Sausage and Rice Casserole

Nice easy dish made with ingredients we usually have on hand. I halve the recipe (since I am cooking for two people) using 12-16 oz sausage. If we have hot sausage, we use a 14 oz. can of plain diced tomatoes. If it is regular sausage, we use a can of tomatoes with green chiles. Very adaptable. I do like other reviewers suggested and simmer on the stovetop covered for 20-30 minutes until rice is done.

Moist Sour Cream Coffee Cake

Delicious cake - very moist and not too sweet. The only change I make is to prepare only half the filling and fill the middle of the cake only. This makes it easier to remove the baked cake from the pan.

Awesome and Easy Creamy Corn Casserole

Very good! Fantastic as is but even better (for us) is the addition of a 4 oz can diced mild green chiles added to the corn mixture before baking. Also when almost done we top the casserole with about 1 1/2 cups shredded cheddar cheese.

Original Homemade Italian Beef

Wonderful and so easy. We have used this recipe about 4 times, and it never fails. Only modifications are we use 1 pkg. dry Italian dressing and 1 pkg. dry Zesty Italian, and we cook our 3# roast on high for 2 hours and low for 3-4 hours (my crock pot is 6 quart and cooks faster than some others). We particularly like this open faced on French bread. So good! Thank you for the recipe Randi!

Oatmeal Chocolate Chip Cookies I

Excellent cookies. I used half Crisco and half butter. Also added 1 tsp. vanilla and decreased salt. Cookies were done in 8-9 minutes. Let baked cookies sit on cookie sheet for a few minutes to firm up. Don't grease cookie sheet and the cookies won't 'flatten'.

Sweet Corn Bread

Excellent and moist corn bread. Leftovers are great for breakfast too. Warm corn bread in microwave and then top with lots of butter and maple syrup.

Lemon Poppy Seed Bundt Cake

Excellent cake. Took 45 minutes to test done. Cake is very moist and delicious. I topped with a lemon glaze (powdered sugar mixed with half lemon juice and half water until glaze consistency).

Pistachio Nut Bundt Cake

My family loves this cake. It's good but too sweet for me personally. And I find the color unappetizing (unless it's St. Patrick's Day). Overall, I rate it 5 stars for everyone who eats it and 4 stars for me.

Maple Salmon

We've made this several times now. Wonderful. It's the best salmon I've ever had. Our 'cook' uses genuine Vermont maple syrup and adds about a scant tablespoon of finely chopped fresh ginger root to the marinade and grills the salmon. We will try the oven method this winter.

Succotash

Excellent succotash. I decreased veggies to about 12 oz each and used frozen corn and limas, barely cooked. Didn't have any fresh tomatoes so we used 1/2 can tomatoes with chilis, drained. The succotash was colorful, very tasty and pretty spicy.

Creamy Almond Chicken

Nice easy dish. I didn't have heavy cream so I floured the chicken pieces before browning and used whole milk instead of cream. For serving i topped chicken with pine nuts and added finely sliced green onion tops for flavor and color.

Veggie Sausage Strata

Excellent recipe! I halved the recipe and added a little jalapeno and red pepper. Be careful with the Coleman's mustard (or other brand dry mustard). We like hot food and this was a pleasant 'hot' but might overwhelm others.

Easy Chili I

Edited to increase stars I did something wrong to make the chili sweet when I reviewed this earlier. So sorry. I made the chili again and it's very good and NOT sweet. Original review: Good basic chili recipe. It does have a sweet "tomatoey" taste, especially the next day. Will decrease tomato sauce next time.

To Die For Blueberry Muffins

These muffins are appropriately named! They are so tender and delicious and keep very well. The topping is enough for two batches, and the excess topping freezes perfectly. I've made four batches in five days - because the muffins are so good and also because blueberries are $2 a pint right now. Terrific.

Corn, Sweet Onion, and Tomato Salad

Excellent salad. Very flavorable, colorful and tasty. I omitted the rice vinegar since we had none and added about 1 Tbsp. extra virgin olive oil. We didn't miss the vinegar at all. The lime juice makes the salad so fresh tasting and really complements the cilantro.

Crunchy Chicken Casserole

Excellent. Followed recipe except I added some diced green pepper, red pepper or pimento, serrano, anaheim etc. Adds a little color. For topping I used Ritz crackers instead of corn flakes. Thanks for another great recipe.

Excellent and easy. Added about 1/4 c. chopped green pepper with the onion. Used a little white wine and milk instead of 1/2 c. water. Also added about 1 c. frozen green peas (thawed) at the end with the pimentos, parsley and pasta. Quite colorful and tasty.
