Stuffed Green Peppers I

Oh My - these were so good. My husband says this is a "keeper" recipe. My changes were: used ground turkey instead of beef, added garlic cloves - minced, used roasted diced tomatoes; precooked the rice, added at end and omitted the water to compensate. I also, tripled the Worsteshire. Added cheese to bottom of pepper and covered peppers with more cheese for the last 5 minutes of cooking time. Will definitely make these again!

Creamy Dill Cucumber Toasties

Easy to make. I had a number of canapes and this was rated the favourite by my guests. I used fresh dill and half the italian dressing mix. Made the mixture the night before to allow the flavours to blend.

Bananas Foster II

I gave this a 5 star review because my husband and son just loved it and devoured it. For my taste, I found it a bit too sweet and sent me running for a large glass of water. I made it exactly as the recipe called for. It was really good, just really sweet. I will make again because the boys loved it so much but I think next time I will try it with crepes or pancakes and use it as a syrup.

Quick Quiche

This was really easy to make and actually quite tasty. I needed to make it ahead for a camping trip. It still tasted great but I think it would taste even better served immediately. I doubled the recipe and made it in a 9x13 pan. I cooked it for 50 minutes and it came out just right. I also added broccoli, red pepper and sauted them with the sweet onion prior to adding to the egg mixture. I didn't double the salt, butter or milk because of other reviews, but think next time I will just to see the difference. Although really good, I think it lacked just a little something and felt I should have followed the recipe more. I will make this again.

Roasted Potatoes with Rosemary

This was really good and made the kitchen smell heavenly. Will definitely make again. I did modify a bit because it was for a snowmobiling weekend and we were staying at a cottage with 8 friends. I doubled the recipe and did some prep work the day before. I like really tender potatoes so I preboiled (mini) potatoes for about 10 minutes the day before. I used about 4 cloves of garlic and chopped/blended everything thoroughly in the blender. I let the potatoes cool before putting them in a large ziplock bag with the mixture. I let this marinate in the fridge until dinner the following day. I added more fresh rosemary prior to cooking. Placed everything in a disposable tin pan (easy clean up at the cottage) and cooked them for about 30 minutes - shaking the pan every so often. Didn't need to use the No-stick spray. Like I said, these were really good and everyone loved them. I'm hoping for leftovers next time, because I think they would make awesome homefries for breakfast the next day.

Joy's Prizewinning Trifle

This was really really good. I did make a few modifications as others suggested. I doubled the pudding, sour cream and whipped cream mixture. I added 1 and a half cups of milk to the two boxes of pudding mix prior to adding to sour cream and whipped cream - it came out perfect. I also cubed the angel food cake - it was just easier to layer but drizzled a little Jack Daniel's honey liqueur onto each layer - yum. I'm not a expert cook by any means, but this made me look like I was. I will definitely make this again.
