Apple Pie by Grandma Ople

I didn't use as intended but wanted to share. Hope you like my spin on a perfect recipe. I used this recipe for an apple crisp except without the pie crust. Added cinnamon, vanilla, nutmeg and chopped walnuts then mixed in the apples and topped with sugar cookie dough, brushed top with some reserved sauce. This was absolutely amaaaaaazing! Next time I will actually make an apple pie. Can't wait! Thank you Grandma Opie but mostly to her very sweet grand daughter. Very few share something so precious for all others to enjoy and pass on. All the best to you and yours MOSHASMAMA. Such kindness...

Corned Beef Hash

My husband LOVED this recipe. Never made it before and was so happy to find this. I cubed and cooked red and yukon gold potatoes and onions in about 2T olive oil for about 15mins on med/hi before adding Hereford Brand canned Corn Beef, I just set it on top of potatoes and gently mix and don't touch until ready to serve. Didn't have beef broth but substituted with Lipton Beefy Onion Soup mixed with 1 1/2c-2 cups water and 1/2 tsp Trader Joe's 21 seasoning spice and 1/4tsp pepper. It takes longer (45mins) with the added liquid but once it was all cooked down I think it really concentrated the flavors and was very Delicious and will make again Thanks to such a great recipe. Hereford Corned Beef is about the best quality you can buy at a regular grocery store. Not easy to find but much much better than Hormel. We stock up when we find it. I sometimes can find it at Longs Drugs, CVS, Walgreens, surprisingly enough. At one time Costco use to carry it but not any longer. Hope you like the changes and thank you so much Jodi for sharing. Check out the video they made. I'll have to try it with corned beef brisket, I bet it's really really good!!

Chef John's Banana Bread

Watch Chef John's video, worth it. Like many people, I made changes to the recipe for healthy(er) choices. Plant based vs man created junk IMO I used Organic Coconut Oil Carrington Farms(Costco)Solid form instead of Butter Almond Milk instead of Dairy Milk Truvia Baking Blend Sugar 1/2 cup instead of 1 cup regular sugar The batter seemed to be a little bit thicker which may have to do with the coconut oil and Truvia changes. I folded in the dry ingredients just until incorporated. Didn't over stir. It looks, raises well in the middle, not a flat top loaf at all, and smells just like regular Banana Bread and tastes incredible. I'd say at least as good as the recipe without the changes, since I've had both kinds. Used 3 normal (about 3/4-1c) banana's and stayed with the same amounts on all the other ingredients and folded in the flour mixture.Baked in my Breville Convection Toaster Oven. I'll report back when my husband tastes it. Saved 30mg cholesterol/serving, 75% less sugar calories and lactose free. Hope this helps others who didn't want to take the plunge. It's really an excellent option and you aren't suffering on taste and texture. Something I learned a long time ago was if you don't like the splitting in the loaf, run a knife down the top middle of the batter, to avoid the typical splitting.

Colorado Green Chili (Chile Verde)

I used a slow cooker and it's cooking right now! Smells so yummy! I made a few changes I found from other reviewers. I cubed about 1 1/2lbs pork shoulder then I used Target's Archer Farms Roasted Salsa Verde with 1/4 jar of Archer Farms Roasted Tomato and Chipotle (both picante style salsa). I only used 1/4 b/c my husband doesn't like things too spicy. Added canned Fire Roasted Tomatoes, 3 cups broth and from Walmart can of Tres Hermanas Fire Roasted Whole Green Chilis (mild, of course) chopped, (didn't see any blackened chili flakes in the can like with the tomatoes so I'm not really sure of the quality but probably good for this recipe) and doubled on the oregano (mexican). Side note: I actually liked the taste from the jar AF Salsa Verde. Most I have found aren't very favorable or poor quality. AF really is delish on it own for dipping, on burritos, tacos, etc. I know without all the changes this would be an excellent recipe all on it's own. What a great idea to use cloves. Thank you Rosiess and am now a follower!

Hungarian Flourless Hazelnut Cake

My husband was born in Germany. He loved it. After reading other reviews my changes r. Make the day before serving. Tastes so much better after overnight refridgeration. I used Bob's Redhill Hazelnut Flour/Meal ($12 for 14oz) instead of grinding my own. Baked in 320 not 325 degrees for about 45 mins. Started checking for springyness when touched at 35mins or so. Sifted pretty much the whole bag to get 3 cups of the finest grind/flakes. Worth it! Used 6 yolks (3 xtra lg and 3 lrg Egglands Best) & one lg whole egg in batter. add 1/2-1oz Frangellico adds flavor depth. Combined yolks and sugar with hand mixer for at least 3 minutes. I find that helps in not getting the egg-y taste as others have commented on. Do not beat the egg whites before making the batter. Too far ahead so they deflated when ready to add to batter. I used a 9inch Springform pan and it raised just shy of 3 inches tall. I let it rest and cool on rack for 10 mins, then as another reviewer recommeneded, I wraped the entire rack, pan with cake inside with foil for 2 hours. I think that's why it was so moist the next day. After the 2 hours I did not use the whip cream topping. I found a Nutella Mousse recipe that was pretty good (8oz Nutella, 4oz of cream cheese or mascapone). I spread that on and put it in the fridge overnight. Comments about it being too nutty/mealy tasting I think most if not all issues are gone with the overnight cooling. Next time I'll bake in an 8in springform for making 3 layers.
