Really Good Snack Mix

I have been looking for this simple marinade to put on my chex mix recipe. My mother-in-law has made it for years and my husband likes this particular combination the best. My suggestion is to tripple the marinade and then half way through slather the last third over the mix. It may sound like overkill but after only doubling the marinade it wasn't flavorfull enough.

Thanksgiving Yams

Simple recipe that I will make again. The marshmellows really need to be broiled though to add to the flavor. Would make a great pie filling!

Cheesy Scalloped Potatoes with Ham

I am so excited about this recipe. I followed it to a T. If you are tempted to sauté the onion I would advise against it--the raw onion adds so much flavor while it's baking and it softens while cooking. It's also not necessary to toss the ingredients first--they all blend together while cooking and as you serve it out. With out a doubt this will be my new go-to. It might be fun to add some bread crumbs to the top sometimes but really it isn't necessary at all!

Blueberry Oat Dream Bars

Who doesn't want to give someone with the name Armywife 5 stars? But here it is, the truth. This was a solid bar and I proudly brought some of them to a mommies group while sending some to my husbands work. The gals and I all agreed it stands about a 3. The consensus was to add more blueberries and some almond extract to the cream cheese mixture--then add some nuts to the crust. Overall I wasn't wild about the flavor of the crust, not sure if it was the flour or what. They were very easy to make and definitely have the "from scratch" vibe. Overall a -good- recipe.

Grandma Johnson's Scones

Wow, what a perfect recipe. I would say this is my very favorite recipe on this site. I also made a gluten free version of these with Bob's Red Mill flour and some xanthan gum. No one guessed they were gluten free and when I told all of my guests--after tons of complements they were pretty floored. My favorite combination is bittersweet chocolate chips with very finely chopped walnuts. I almost always add a little almond extract even if I'm using a different nut inside...I just love the flavor it adds and really isn't that what it's all about?

Peanut Butter Chocolate Cake

I am staring the peanut butter mousse. WOW. I put it in the filling of a different chocolate layer cake with choc chips in it. Then covered the cake in choc glaze. People thought it was professional.

Grandma's Baked Rice Pudding with Meringue

This is a great recipe...but...I don't get the meringue. I feel like such a traitor! I am a meringue enthusiast, I am! BUT in this recipe it just seemed so out of place. I felt like I was having two separate desserts together and missing the lemon filling or something. Next time I'll skip the meringue or maybe just make a pie if I'm in such a mood.

Broccoli Ham Ring

Wow, this is so gourmet but so simple! I made mine in fancy pie dish. If you do this just be sure not to pile too much of the dough in the bottom of the pie plate so as not to have a doughy inside with a fully cooked every-thing-else. I also brushed some egg on the top and sprinkled with sesame seeds. My husband said "is this just for us? Did you just make this?" It was really funny to see him stumped.

Banana Pudding IV

Ok, I'm giving this recipe 5 stars because the flavor was amazing and I see that my results were an outlier...but...for all of you who followed the recipe EXACTLY as I did, read all of the reviews cautioning against cream cheese that was too cold or milk that was not cold enough etc etc....yes mine was very soupy. My ego is in the toilet right now. Though I am not a professional chef AT ALL I consider myself a pretty good cook, at least I can follow a basic recipe. SO, who knows what the problem was. I live in the Northeast and it's winter so perhaps my house and all of my appliances/the cream cheese at room temperature was not room temperaturey--enough. Oye! Will try again later.

Brooke's Best Bombshell Brownies

Healthy Version: I am constantly looking for brownie recipies that I can tweak to be truly healthy. This is one of them. I substituted the flour for all purpose gluten free flour (made with BROWN rice flour). You need to add some moisture when you use gluten free flour(I added a cup of water). I then used 2 cups turbinado sugar instead of the white sugar. Sun sweet makes a great butter replacement that can be found in the oil section of your market. It's a fruit paste that doesn't smell great (like prune gooop) but works as a butter replacement and the flavor disappears. I got was a dense and gooey brownie that tasted healthy but decadent. I would even cut the sugar down to 1 1/2 cups.

Brown Sugar Biscuits

Move over Cinnabun! I used "I can't believe it's not butter light" instead of shortening, skim milk and sprinkled chopped pecans over the brown sugar. My husband went nuts! Will make for the extended family at the next early morning get together. Used the icing at the end too! Yum!

American Shepherd's Pie

Yummy and easy! I used ground turkey and added some cooked carrots and peas. Didn't have any veggie soup so added 1 veggie bullion cube and 1 cup water. Also added 1/4 cup tomato sauce. Used the box mash potatoes for simplicity and because they tend to be less dense. GREAT!

Chicken Cordon Bleu II

The sauce is just divine and the chicken is so tender. I would definitely go with a flavorful/salty ham-nice thick cut. I was very clumsy with the toothpicks and had difficulty removing them so I just gave up--as I was only cooking for my little family. The breading was a little strange--didn't really crisp up--also, when I read the recipe I couldn't believe that 3 TBS of flour and 1 TBS paprika could cover all six chicken rolls so I just made a larger batch of the mixture. Great job Behr!

Peanut Butter Bars I

I must confess I was tempted to give this recipe 2 stars...I hate it when this happens--everyone loves it but me. I just don't get it---why not just buy a peanut butter cup? Yes, it's a slightly different texture because of the graham...but still...If I'm going to cook, I want it to taste original. That didn't happen here.
