Slow-Cooker Chicken Tortilla Soup

I really can't get over how wonderful this is! I used a rotisserie chicken and pulled the meat off of the bone before adding it to the soup. Store bought tortilla chips worked just fine with a dollop of sour cream when serving. Next time I will add black beans for additional veggie yumminess.

Brooke's Best Bombshell Brownies

Healthy Version: I am constantly looking for brownie recipies that I can tweak to be truly healthy. This is one of them. I substituted the flour for all purpose gluten free flour (made with BROWN rice flour). You need to add some moisture when you use gluten free flour(I added a cup of water). I then used 2 cups turbinado sugar instead of the white sugar. Sun sweet makes a great butter replacement that can be found in the oil section of your market. It's a fruit paste that doesn't smell great (like prune gooop) but works as a butter replacement and the flavor disappears. I got was a dense and gooey brownie that tasted healthy but decadent. I would even cut the sugar down to 1 1/2 cups.

Chuckwagon Stew

I couldn't remember the name of this recipe and have been looking for it since I made it a year ago. My husband loved it and so did I. It makes great left overs and is so simple. Goes great with some corn bread.

Cornbread Sausage Casserole

This is my husband's favorite all time recipe. He asks for it at least once a month for the last few years (ever since I found it on this website). I've done some variations depending on what ingredients I have but the best is the original recipe.

Chocolate Sheet Cake III

My husband says I'm being too picky but I was disappointed by this recipe. It was good but not worth making again. The frosting is more like a chocolate walnut glaze and I found the cinnamon overpowered the chocolate flavor in the cake. Good texture though and very easy to make.

Saltine Toffee Cookies

This is my favorite variation! It's haunting, you will want to eat the whole batch. I use walnuts instead of pecans because I prefer them. Also, make sure you use the dark brown sugar, it does make a difference in the flavor!

Really Good Snack Mix

I have been looking for this simple marinade to put on my chex mix recipe. My mother-in-law has made it for years and my husband likes this particular combination the best. My suggestion is to tripple the marinade and then half way through slather the last third over the mix. It may sound like overkill but after only doubling the marinade it wasn't flavorfull enough.

Buttermilk Pancakes II

Heaven! Substituted wheat pastry flour for 1/2 the all-pupose. Also used light buttermilk and "I can't believe it's not butter-light" Will throw out all pancake recipes! This is the one.

Good for dinner, bad for left overs. I used fat free 1/2 and 1/2 instead of skim milk and added some frozen spinich. Also used fat free parmesan. Husband said thumbs-up. Next time will stick with origional recipe!

Brown Sugar Biscuits

Move over Cinnabun! I used "I can't believe it's not butter light" instead of shortening, skim milk and sprinkled chopped pecans over the brown sugar. My husband went nuts! Will make for the extended family at the next early morning get together. Used the icing at the end too! Yum!

American Shepherd's Pie

Yummy and easy! I used ground turkey and added some cooked carrots and peas. Didn't have any veggie soup so added 1 veggie bullion cube and 1 cup water. Also added 1/4 cup tomato sauce. Used the box mash potatoes for simplicity and because they tend to be less dense. GREAT!

Chocolate Cherry Cake III

This cake is a family favorite. It's simple but tastes devine. I substitute the almond extract with vanilla extract for family that's allergic. Also can add a little cream to the batter to add some richness and help hide the cake mix taste. Not necessary though!
