Pumpkin Cake II

Everyone just loved this. I made a cream cheese frosting. I do think that the cake could use an ooch more pumpkin and a some pumpkin pie spice..so I gave it 4 stars

The Perfect Cinnamon Roll Icing

I made a pumpkin cake today and just couldn't find what I was looking for to top it--this seemed just perfect...and it was! I used heavy whipping cream instead of milk to really fluff it up. I added a picture so you can take a look!

Sweet and Gooey Chicken Wings

A beautiful looking--gooey wing, as promised. I followed the recipe to a T and the whole family loved them. I have tried a variety of recipes with a soy sauce base and this one is great but it's not my favorite so I gave it a 4-star rating.

Chocolate Eclair Dessert

I made this for a small party that I had with adults and kids. The nice thing about this cake was that it was good for all ages. That being said, I did feel that the recipe was lacking. I made the suggested fudge sauce from the outback as I really can't take canned frosting. Even so, it really needed something. One person suggested to double up the graham crackers when making the layers another said to add some cream cheese to the filling...then maybe some mini choc chips. The recipe is simple and fun but I wouldn't make it as is or even with the home made sauce again.

Chicken Cordon Bleu II

The sauce is just divine and the chicken is so tender. I would definitely go with a flavorful/salty ham-nice thick cut. I was very clumsy with the toothpicks and had difficulty removing them so I just gave up--as I was only cooking for my little family. The breading was a little strange--didn't really crisp up--also, when I read the recipe I couldn't believe that 3 TBS of flour and 1 TBS paprika could cover all six chicken rolls so I just made a larger batch of the mixture. Great job Behr!

Cheesy Scalloped Potatoes with Ham

I am so excited about this recipe. I followed it to a T. If you are tempted to sauté the onion I would advise against it--the raw onion adds so much flavor while it's baking and it softens while cooking. It's also not necessary to toss the ingredients first--they all blend together while cooking and as you serve it out. With out a doubt this will be my new go-to. It might be fun to add some bread crumbs to the top sometimes but really it isn't necessary at all!

No-Bake White Chocolate Cheesecake

Being an Italian purist, I have never made a no-bake cheese cake before. That being said, I LOVE cream cheese so I decided to give it a shot. This was such a simple recipe--I mean it's not much more complicated than peanut butter and jelly. So of course I had to complicate it a bit. I made my own crust and couldn't resist throwing a can of cherries on top--still a really simple recipe. Honestly, I could have eaten the whole thing. It was dangerously yummy. I have read a few recipes on this site that have a similar ingredient profile, one that would call the inside of this cheese cake--"dip" and I can see why. It's very light and fluffy--and a bit messy to cut through and serve on a plate. I think that this is a great base recipe that you could tweak to your liking and turn into a 5. It would be great to keep these ingredients on hand for company--it really is so simple and yummy.

Shepherd's Pie VI

My husband really likes this version of Shepherd's pie, especially when I add a packet of brown gravy to the hamburger BUT as you can tell from my rating--it's not my fav. I prefer the American Shepherd's Pie recipe on this site and I substitute the veggie soup for canned tomato sauce or tomato soup, I also add some bullion and more veggies. I just really like the tomato flavor with this dish--even if it isn't as authentic!

Blueberry Oat Dream Bars

Who doesn't want to give someone with the name Armywife 5 stars? But here it is, the truth. This was a solid bar and I proudly brought some of them to a mommies group while sending some to my husbands work. The gals and I all agreed it stands about a 3. The consensus was to add more blueberries and some almond extract to the cream cheese mixture--then add some nuts to the crust. Overall I wasn't wild about the flavor of the crust, not sure if it was the flour or what. They were very easy to make and definitely have the "from scratch" vibe. Overall a -good- recipe.

Peanut Butter Bars I

I must confess I was tempted to give this recipe 2 stars...I hate it when this happens--everyone loves it but me. I just don't get it---why not just buy a peanut butter cup? Yes, it's a slightly different texture because of the graham...but still...If I'm going to cook, I want it to taste original. That didn't happen here.

Brownie Frosting

I have a huge sweet tooth and this was intense. I don't think I can take it on brownies again. I would try it on a cake instead. It's very fudgy and very sweet--great flavor but it was a bit grainy.

Sesame Noodle Salad

My 2 year old son loves these! I have made them a couple of times now and tried gluten free noodles once--not bad for gluten free but the dressing doesn't absorb as well. I also prefer the recipe with shredded carrot instead of red pepper AND I like 1/3 cup of sugar instead of 1/4. Next time I think I'll add some chicken and make it a meal!

Creamy Au Gratin Potatoes

This is a solid Au Gratin recipe, my family really enjoyed it over the holiday. My husband and I both felt that it was missing some punch...maybe some extra cheese and some garlic. Also I wasn't into the onion rings so I sautéed some diced onion and mixed them in with the potato I also mixed the sauce in with the potatoes and put bread crumbs on the top. I think this bumped the recipe up to a 4...maybe.

Cherry-Blueberry Pie

This is really so good. I am chuckling as I write this because I'm really not a pie person and I'm especially not a fruit pie person but I had some canned cherries close to expiration and some blueberries in the fridge. Anyway...BRAVO--such a simple and yummy pie.

Black Bottom Cupcakes I

I remember these from when I was a kid. A neighbor used to make them so I was interested to try them for myself 30 years later. They just didn't do it for me this time. I love cream cheese, I LOVE chocolate...and I even make a few with jelly. I would make them again because my family really liked them but I would say that there are other recipes that thrill me more.
