Honey-Dijon Chicken With A Kick

Holy Moly! Way too much red pepper. It was not just spicey, it was burning hot. Followed the recipe exactly. I did like the honey mustard sauce but it was way overpowered by the red pepper. I will make it again but will eyeball the red pepper next time.

Mushroom Pork Chops

This was a big hit. Made it for just me and my hubby so I used double thick chops. Followed recipe exactly as written with a minor change. Did not have garlic salt on hand so I used garlic powder. Did not have to cook longer due to thickness of meat. They came out perfectly cooked and moist. Hubby deemed it a gourmet meal!

Oven-Roasted Asparagus

I liked it. Hubs loved it. Nice crunch. Nice flavor without being overpowering. Could have used a little less olive oil. I tossed the asparagus with the olive oil in a plastic bag. Asparagus well coated with some residual oil on bottome of bag. Will definitely make again. Easy with most ingredients on hand in pantry.

Potato Crunchy Tenders

Not bad. Nice flavor. Way too much milk and potatoe mixture left over. Will probably try again but next time I will try double dipping. Found some of the batter did not stick too well.

Balsamic Roasted Pork Loin

Excellent. Followed recipe as written without any changes. Marinade resulted in a nice glaze while the meat was very tender, juicy and flavorful. Definitely a keeper. I did use a high quality balsamic vinegar which I believe may have resulted in the glaze on the meat as it cooked. Marinated the meat all day but not overnight.

Grilled Asparagus

Not bad. So simple and so good. Will definitely try again. Cooked on the grille but with Winter coming up I will probably try it in the oven during the Winter months (that is if I am so lucky to find fresh asparagus in New England during the Winter months)

Sweet and Spicy Sweet Potatoes

A little too spicey and too little sweet. I followed the recipe exactly and found the spice overpowered the sweetness. Otherwise it was a nice change up from my typical baked sweet potatoe.

Cream Cheesy Cubed Zucchini with Lemon and Oregano
