Thai Grilled Chicken with Sweet Chile Dipping Sauce

This chicken recipe is delicious! I think the key, though, is a long marinating time. Not by choice, I ended up marinating chicken thighs for 2 1/2 days. Wow! Fabulous flavor!!

Oriental Vinaigrette

This dressing is very good but a bit sweet. I added a little more rice wine vinegar. Used this for a salad of cherry tomatoes. Good combination.

Jalapeno Cornbread

Per other reviewers I was expecting a small loaf but not quite this small! I thought this bread certainly had to be heavy but I was pleasantly surprised by the light, chewy texture. I added extra jalapenos but thought that it could have used even more. If you have left-overs, try toasting slices and serving with breakfast. Yummy!

Freak'n Good Ribs

Fantastic ribs! I cooked them in the marinade a little longer than the recipe called for and finished them on the grill. Excellent flavor. I added some Thai Sweet Chili Sauce to my store-bought BBQ sauce - divine. Great recipe, Mike.

Fire and Ice Salad

Today is the third time I have made this salad. Friends and family really like the light, refreshing quality - especially when the weather is hot. I had a few unexpected guests for dinner today, so to stretch the salad I added some fusilli pasta that I broke into small pieces before cooking. Not a morsel remained!

Roast Sticky Chicken-Rotisserie Style

Living in Mexico - the "pollo" capital - it takes a very special roasted chicken to impress my husband. Roasted chickens are sold on every corner of our town and they are delicious! This recipe makes that "very special" roasted chicken! Even my ultra-picky son-in-law raves about this recipe. I make 3 or 4 chickens at a time and freeze the left-overs for multiple uses. Thank you for such an awesome chicken recipe!

Chicken Pot Pie VIII

Sooo delish! I didn't have a pre-made pie crust and didn't want to go to the trouble to make a crust, so I topped the vegetable/sauce mixture with stuffing mix. After baking the stuffing made a nice "crust". I did pre-cook the vegetables until barely tender, they were just perfect when the "pie" came out of the oven. Like previous reviewers, I added frozen peas. Try this recipe - you won't be disappointed!

Pollo Bianco

Although I probably won't make this again (there are so many great chicken recipes to try) this was a nice dish. I added extra seasoning on the advice of previous reviewers and served with roasted potatoes and broccoli. I also carmelized the onions longer than the recipe called for. Instead of water I used homemade unsalted chicken broth. The sauce was very pleasant.

Absolutely the Best Nacho Dip Ever

I don't like being a nay-sayer but, although a beautiful color combination, my guests were not that thrilled with this dip. I will try it again but will doctor it a bit.

Amy's Cilantro Cream Sauce

Delicious! My husband and I like our sauces just a bit spicier so I added two large jalapeno's. Wonderful flavor combination. Served this with melon/manchego cheese skewers for a party. Very popular! Way to go Amy!

Amy's Garlic Egg Chicken

My husband thought this was "very good". Hence, 4 stars - I would have given 3. After reading the other reviews, I too added additional spices. I think it would have been entirely bland without the extra zing.

Cassandra's Yummy Lamb Chops

Made only a couple of changes - roasted the garlic with olive oil and Italian Herbs. I mixed the olive oil and red wine together, added the oil from the garlic and a dash more Italian Herbs. I had two racks of baby lamb, so I split them, rubbed them with the roasted garlic and marinated them for about 5 hours. They were awesome. Made an easy port/red wine sauce to go with. Thanks Cassandra! This was my first go at lamb - great base recipe!
