Kentucky Banana Pudding
I started with 1/2 cup of sugar and it was already quite sweet. I couldn't imagine using the full amount. I used nonfat milks and it was a bit rubbery and I used low fat vanilla wafers and that was fine. It tasted pretty good. I was able to kill the aftertaste with a good dose of vanilla and very ripe bananas.

Apple Cake VII
This cake was way better than I expected. I used 11 cups of shredded apples. I only had half a stick of butter, so I used half a stick of butter and one of those little 4 oz applesauce containers. It was light and moist. Yum!

Basic Cheesecake
Good -- I used light sour cream, light cream cheese and evaporated milk and it worked fine.
