Roasted Rosemary Chicken And Vegetables

I've made this so many times - definitely a favorite!! I do have to be careful not to leave the vegetables in the marinade for too long, as they turn out a bit too vinegary. I only made that mistake once!! :) Thanks for a tasty recipe!!

Slow Cooker Italian Chicken Alfredo

This was super yummy and very satisfying! I couldn't find fresh or canned mushrooms where I live, so I just used cream of mushroom soup. I did add a little salt at the table, but it didn't need anything else. Will definitely make again!

Colorado Buffalo Chili

This was delicious. I'd give this a five, but I'm not sure how it would've been if I'd spiced it up as much as the recipe called for. With a baby in the house, I thought it best to tone it down a bit. :) Otherwise, fabulous!

Barbecued Chicken Quesadillas

Thanks for a simply and yummy recipe! I had to leave some things out (since I didn't have any parsley or tomatoes) and added some sauteed onions (since I love onions). I was short on tortillas, so I did a stack of three, spread a bit of chicken, etc., inside each layer, and cut them into wedges to serve. It all turned out just fine! I'll definitely make this again!

Slow Cooker Latin Chicken

I thought this was terrific. I did add more liquid and spices, which I thought was a wise choice since I was using boneless chicken breast (though I should've salted the pot more after adding the extra liquid). I omitted the cilantro (can't stand the stuff) and used fava beans, as the store had no black beans, but I don't think the different beans changed the flavor or the texture. I shredded the chicken and put it all inside tortillas with brown rice. Yummy! I'll definitely make this again.

Meatball Nirvana

Delicious! Had these for dinner tonight! Had to use a clove of fresh garlic instead of garlic salt and chili powder instead of red pepper flakes (didn't have either of 'em). Still tasted fabulous! Thanks for a yummy recipe. We'll be doing this again!!

Gourmet Sweet Potato Classic

Got lots of compliments on this yesterday at our Christmas lunch! I think I used 1/4 cup of white sugar instead of 1/2, just because I'm trying to reduce the sugar I eat. I think it would've been fine with the full amount though. Very yummy! :)

Do-Ahead Stuffing

I LOVE this stuffing. Love it, love it, love it. The scent of thyme and sage just smells so much like holidays - Thanksgiving or Christmas, it's perfect. Did I mention I love this stuffing??? NOM NOM NOM!!
