Cajun Appetizer Meatballs

Reviewed: Oct. 5, 2009
I made these for a party and they were a big hit! After reading some of the previous reviews about them being too salty, I used Mrs Dash Southwest Chipotle Seasoning Blend which has no salt and they turned out great. To make them a little more fancy looking for the party I made them into little kebabs with a meatball, homemade crouton and cube of montery jack cheese on each. Everyone loved them!

Penne with Spicy Vodka Tomato Cream Sauce

Reviewed: Aug. 13, 2007
I've made this recipe so many times I've lost count! This is one of the few recipes where I don't make any changes. It's great as is, super easy and impressive enough to serve to guests. Serve it with some freshly ground parmesan cheese and a nice crusty baguette. Leftovers are great too!

Spinach Brownies

Reviewed: Aug. 13, 2007
I made these tonight for some friends and they were a big hit! I made several changes based on the reviews here. -I used baby spinach, sautéed not boiled. -I sautéed the onion and added garlic as well. -I used 1/4 cup butter and slightly less milk. -I added sautéed cremini mushrooms and crumbled bacon (I used the ready crisp real bacon bits) as well as lots of freshly ground black pepper. I served them with marinara sauce for dipping. My husband described these as a cross between quiche and pizza. Next time I will use an Italian cheese blend instead of just mozzarella for a bit more intensity. I will be making these again I just wish I could come up with a better name!

Black Bean and Salsa Soup

Reviewed: Jan. 29, 2006
Wow! I can't believe that something so simple can taste so good! I used chicken stock instead of vegetable and left about 1 cup of beans whole. I also threw in about 1/2 cup of frozen corn after blending. This soup is great served with tortilla chips.

Very quick and easy. Add 1/2 tsp orange extract for more orange flavor. Yum!

Patti's Mussels a la Mariniere

Reviewed: Oct. 23, 2005
Delicious! I've tried a few other recipes for mussels but this one's a keeper. I'm not a big fan of green onions so I used a chopped shallot instead. These are as good as any I've had in a restaurant. I'll be making these again and again.
