Spicy Black Bean Empanadas

These were delicious, but in an effort to prepare ahead, I made these several hours before my dinner party. By the time they were ready to be served, the puff pastry had fallen a little and was greasy. Next time I'll try rolling it a little thicker, and baking them at the last minute.

Avocado, Tomato and Mango Salsa

Excellent! I served this with pork empanadas as an appetizer and it was a perfect contrast of sweet and savory. There was a little leftover the next day and it was great with tortilla chips as well!

Tres Leches (Milk Cake)

Excellent, although VERY rich! Regarding the half and half vs. milk debate: I measured out my whipping cream for the topping in advance, and then combined what remained from the pint that I had bought with 1% milk for the filling (in addition to the recommended amounts of evaporated and condensed milk.) It took several hours of slow and patient soaking for the milk to absorb, and even then there was a little left that wouldn't absorb, but it made a delicious sauce when spooned over each serving. As a final touch I sprinkled the cake with cinnamon and nutmeg (as shown in the picture).

Easy Meatloaf

Very Good. I accidentally added the sugar, mustard, cayenne and garlic to the meat...I then added more to the sauce. (I used Dijon). The meat could have used more kick. Next time I may add some chili powder or more cayenne. The sauce was perfect and not too heayily proportioned.

Applesauce Bars

This recipe was OK, but in general I was looking for something a lot richer and denser from a bar. I tried them first without the icing, and then added the icing, and they were much better frosted. I also added more spice (particularly cinnamon) then what was called for.

Sloppy Joes II

These were delicious! I like a little kick, so I added some habanero powder, and some chili powder. I served them on crusty buns with Ranch potato salad and baby spinach salad. Fast, easy and not too unhealthy!

Ginger Beef Curry (Slow Cooker Version)

I was really interested by all the ingredients, and the smell cooking during the day was fine, but the end result was bland and unappetizing. I would not recommend this to anyone.

Frosted Maple Cookies

Absolutely Fantastic! Everyone who tasted one fell in love with them! This is definitely my only Maple Cookie recipe from now on. By the way, though, I couldn't find Maple extract so I just used generous amounts of Maple syrup. Yum!

Roasted Sweet Red Pepper Spread

Glazed Pearl Onions With Raisins And Almonds

This was delicious! What a surprise. I tired it as a chutney-type dish with Indian chicken, but I think it would go great with any white meat dish. REALLY tasty, and different, which is always nice for guests.

Not bad, but bland. This could have definitely used some more spices. Furthermore, the potatoes came out under cooked. I would maybe parboil them if you are going to try this recipe.
