Baked French Fries I

I don't usually put chili powder on potatoes so this was unique & a good change of pace. I lowered the oven temp a little so I could bake some chicken at the same time and everything worked out great.

Chinese Shrimp and Tofu Soup

This soup is quick to prepare, tasty, & healthy. I've made it several times now and usually substitute cabbage shreds for the peas, although this last time I used both. I also adjust the salt level with Tamari soy sauce (instead of regular salt) and prefer a thicker consistency with double the cornstarch.

Savory Roasted Root Vegetables

This was my first experience cooking with beets, and I'm so glad I tried this recipe. The colors are beautiful with the red beets and the wilted greens so this dish has lots of eye appeal plus the recipe is full of healthy ingredients. I used the full amount of thyme and also added a large sprig of rosemary and a little garlic powder.

Our Favorite Balsamic Vinaigrette

This makes a very tasty vinaigrette. I needed to increase the honey a little to get the right flavor balance. Great as written, but a nice variation is to add some sun dried tomatoes with a big pinch of oregano and basil to the basic recipe.

Apple Strudel Muffins

Thanks to all the great reviewer suggestions, I got 5 star muffins with this recipe the very first time. The changes I made were adding spices (1 tsp cinnamon, 1/3 tsp nutmeg), using half brown & white sugar, & using half shredded/half diced apples. I also used 2 T. applesauce + 6 T. butter (instead of 8 T. butter). I peeled too many apples, so I ended up using 3 c. of apples, and I may try using 4 c. in the future. This is a memorable & tasty apple muffin that I will be making again very soon.

Mongolian Beef and Spring Onions

This recipe just wasn't a big hit with us, just a personal preference, I guess. It's very sweet, and we'd prefer different seasonings. I used regular onions & red peppers instead of green onions.

Italian Pinwheel Rolls

I made the dough in a bread maker, then finished the recipe as written. The dough was a little sticky, but I was able to work with it. Since I was serving these to company, I cut back on the garlic. If I were to make this recipe again, I think I would add some herbs and powdered garlic to the dough as well.

Bright Blue Monday Cake

This recipe makes a very good coffeecake, but a little vanilla and more salt would boost the flavor. The only ingredient change I made was to use butter instead of margarine. I also used frozen blueberries so the coffeecake needed to bake 50 minutes.

Baked Coconut Shrimp

This recipe is delicious & simple. I love that it is baked/not fried so the house doesn't get that greasy smell, but you do get crispy shrimp. I served this with jasmine rice & Thai Sweet Red Chili Sauce...next time I'll also serve it with stir-fried onion, celery, & broccoli to add color & vegetables. I did reduce the cayenne just a little and used 31/40 count shrimp which is probably the smallest size you would want to use.

This was just average to me, but my husband thought it was good. I think the recipe writer's suggestion to "use pan drippings for added flavor" would help a lot as well as adding some fresh garlic and chopped onion.

Health Nut Blueberry Muffins

This is a very good healthy muffin recipe. I was hoping for a little more powerful flavor, but all the ingredients just mildly blend together. I'd like to try this recipe with diced dates in place of the blueberries.

Banana Cupcakes

These are a real treat! I loved the light cake texture. Usually I avoid using shortening, but used an organic, non-hydrogenated vegetable shortening this time with great results...light texture & great flavor. I made a half batch of the frosting which was plenty to generously frost all of the cupcakes. We prefer desserts that aren't too sweet, and with the frosting, these delicious cupcakes started to be really sweet for us. I will make them again, but probably skip the frosting unless it is a special occasion. The banana cupcake itself (not the frosting) is the star here!

Chocolate Oat Snack Cake

Easy, great-tasting chocolate cake with oats secretly hidden inside. I didn't have the chocolate chips & nuts this time, so I just made the cake plain with an additional tablespoon of baking cocoa. This made a mildly flavored cake with just enough chocolate to satisfy a minor chocolate cake craving.

Emily's Famous Hash Browns

Wish I would have found this simple recipe a long time ago. I had never added flour & egg to fried potatoes before, but it made a big difference and even smelled better than regular fried potatoes. Only a small amount of oil is necessary to get lots of crispy edges. These are really good.

Tomato-Dill Shrimp Stew

Reviewer mis7up's photo inspired me to make this recipe, and it does make a beautiful bowl of "stew". I had to thin this a little with tomato juice as it was very thick, but even after thinning it, I felt as if I was eating a bowl of pasta sauce rather than stew. I will serve the leftovers over pasta. I also felt it needed a tsp of sugar and a little ground black pepper.

Blackened Fish

We made fish tacos with this fantastic spicy fish, shredded cabbage, & Amy's Cilantro Cream Sauce on corn tortillas. I used half the cayenne pepper and used garlic powder in place of the white pepper to test out this recipe, and it was still really spicy, so I'll stick with those adjustments next time. I'll cut the salt just a little as well since there is so much pepper dazzling your taste buds, less salt is necessary. I used halibut, and this recipe probably works well on many kinds of fish. I baked the fish in a little olive oil this time as I didn't want to smoke up the house, but I look forward to cooking it in olive oil in the pan.

Phoenician's Key Lime Pie
