Broccoli and Cauliflower Casserole

I thought the dish was very good, but I had to alter it a bit. I added 1 full cup of rice as others did, 1 pound of cooked, cut up chicken, one full head of broccoli and 1 full head of cauliflower. If I didn't add the extra rice and chicken this would have been very saucy. I prefer more filling and less sauce in my casseroles.

Chicken Milano

I used neufetchal cheese instead of the heavy cream and regular tomatoes since that is what I had on hand. It still came out really good and much healthier.

Classic Irish Boiled Dinner

I really, really wanted to love this recipe. I thought it was only good. Not great and not bad, just okay. It lacked flavor for me. Maybe knowing how much salt and pepper others used would have helped. I used 1.5 tsp salt and 1 tsp pepper. Used the same of everything else, except half a cabbage as that is all I could fit in the broth/pot. I doubt I'll make it again.

Yellow Squash and Corn Casserole

I usually make a different summer squash casserole (from this website), which my family LOVES! I tried this one....doubled the recipe and used 1 can of creamed corn, 11 ounces of frozen corn and HALF the sugar, and Heartsmart bisquik. It came out great! We all thought it was a very nice alternative to our favorite recipe.

Brown Sugar Meatloaf

We thought this was very good. A little too sweet though, so next time I will reduce the brown sugar a bit. I didn't saute the onions as others suggested, but I did make it ahead and it sat in the refrigerator for 24 hours before I baked it, so it was all very moist and the onions were fine. It did take longer than the 60 minutes indicated to cook thoroughly (I use a meat thermometer to be sure). Overall a great recipe.

World's Best Lasagna

This is great, a bit salty for my taste (and I like my salt). If you read the "World's Best Pasta Sauce" recipe by the same submitter, he uses only 1/2 tsp of salt. So, it wouldn't surprise me if 1 tablespoon is a typo. 1/2 to 1 tsp is much more appropriate. Otherwise, this is a great recipe and received rave reviews from everyone that ate the lasagna and remaining sauce on pasta.

Snickerdoodles I

This is virtually the same recipe that my grandmother and her mother used...only difference is we use 1 tsp cream of tartar, everything else is the same. THESE ARE THE BEST snickerdoodles (with 1 tsp of cream of tartar)....my grandmother made these every winter for their Christmas tree farm's patrons....NO ONE would leave after purchasing their tree....without stopping by to pick up a few snickerdoodles. They are a HUGE hit! I think the cookies are one of the main reasons people came back year after year (just don't tell the "boys").

I love this recipe. I only use EXTRA LEAN ground beef when cooking and I didn't find it greasy at all. This has received such good feedback from anyone I have made it for.

I thought this has good flavor, but it is very salty (and I like salt). Next time I will opt for low sodium soy sauce or eliminate the 1 tsp of salt that is added.

Zucchini Herb Casserole

I love zucchini and cheddar cheese, but something about this dish just didn't seem "right" to my family. It was okay. Can't say I would make it again and If I do I would try it with Parmesan or an italian cheese blend. The combination of spices and cheese just didn't go really well together and we are pretty easy to please. The only change I made was using brown rice.

Spinach Tomato Tortellini

This was really, really good. I used all fresh ingredients, two large tomatoes (will use 3 next time), 4 cups of fresh chopped spinach (and I am not a cooked spinach fan), 1 onion, lots of garlic, skim milk and fat free half and half. Whole wheat tortellini and grilled some chicken breasts to go with it. My "meat eater" husband thought the chicken was good, but the pasta was GREAT! Definitely a keeper!
