Lemon Cupcakes

Reviewed: Dec. 5, 2009
I made this without the lemon icing (I made them for my wedding with cream cheese frosting just so all cupcakes would match). PERFECT lemon cupcakes! If I ever make them again I would use the icing in the recipe.

Pollo Fajitas

Reviewed: Jan. 8, 2010
The marinade for this is wonderful!! However, I would add more to the fajitas when I'm ready to eat them, but that's just personal preference. I like lots of flavors. I would add guacamole and sour cream at the least. I used chicken breasts instead of thighs since that was all I had, but I'm sure it would be even tastier with the thigh meat. I'll try to do that next time, and there will be a next time!!

Samoan Panikeke

Reviewed: Dec. 11, 2009
Great, easy breakfast recipe when there's no milk in the house! Make sure to use less than 1/4 cup batter. When I used an exact 1/4 cup, or a scant 1/4 cup, it was still pretty gooey in the middle and that was after making sure that it was a darker golden brown all around. On the second try, I used maybe a little more than 1/8 cup and it was perfect. And I did make sure the oil was exactly 350 degrees with my candy/deep fryer thermometer. You could even make just a tbsp. at a time for little bite-size "doughnuts." mmmm. Yummy!

Chocolate Crinkles III

Reviewed: Dec. 5, 2009
This is a family favorite and has been since before I was born. I have no idea if this is the same recipe my grandma uses (probably not), but it tastes the same! And that's good enough for me!

Peppermint Chocolate Fudge

Reviewed: Dec. 5, 2009
I've made these the past two Christmases and will make it again this Christmas. It's so easy to throw together while making all the other complicated cookies and such, but somehow it's always the first to be eaten!

Marshmallow Fondant

Reviewed: Dec. 5, 2009
I used this to make little colored leaves to top the cupcakes for my wedding. People actually ate them! Which is a testament to good fondant. I also snacked on it as I made the leaves... This was time-consuming to make, but worth it as it does keep for even a couple months in the fridge.

Cola Pot Roast II

Reviewed: Aug. 1, 2010
I followed other's reviews and rubbed the roast with steak rub and browned it before putting in the dutch oven. I bought a 1.75 pound roast and it was a good size for 2 people. I didn't change anything else in the recipe, so I have extra sauce (which was delicious!) for stroganoff.

Cream Cheese Frosting II

Reviewed: Dec. 5, 2009
Just like my grandma makes! Perfect cream cheese frosting every time. Tip: If you want to use this to frost cupcakes bakery-style, add lots more powdered sugar until it's more stiff so that it can set. Otherwise, it will look droopy on your cupcakes. To balance out the sweetness, add a pinch of salt as you mix in the extra powdered sugar.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Dec. 4, 2009
Don't use store-bought tortilla chips! It really is very easy to just bake corn tortillas as in the recipe and the taste difference is incredible. I used baked tortillas for dinner, then for lunch the next day I was in a hurry and packed tortilla chips. Big difference. Don't be lazy if you have time! Also, this recipe was a little spicy for me, but I'm sensitive. So if you're sensitive, you may want to make it a bit less spicy. I could still handle it though; it was so good I couldn't stop slurping it down!!

Wonderful as is. I would add garlic next time just because I love garlic. :) I did use more cheese than called for...for the same reason..

Pumpkin Pie Squares

Reviewed: Dec. 4, 2009
I doubled everything like reviewers had suggested, and when I began layering the crust into the bottom of the pan, I found that I had made WAY too much. If anything, just increase the crust ingredients one and a half times. I ended up using the rest in a 9x9 dish (including the extra pumpkin mix). This is a fantastic recipe. Way better than the pumpkin pie that was also brought to Thanksgiving! The seasoning is perfect in this recipe.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 22, 2013
I'm sure if you make it exactly as written, it's amazing. I personally attempted to make it a bit healthier and it was really good! I used applesauce instead of oil, 1 cup whole wheat and 2 1/2 cups unbleached white flour, used 1 teaspoon of each spice, used 1 cup white sugar and 1 cup brown sugar. I made these for a playgroup and everyone loved them and asked for the recipe! I probably could have cut down the sugar even more and probably will next time.

Emily's Famous Hash Browns

I've made these many weekends, and they are so perfect. Best homemade hash browns I've ever had. I will continue to make them almost every time I make big weekend breakfasts.
