Hot Buttered Rum Mix

Reviewed: Dec. 23, 2008
I think I added more than just a couple tbsp. to each cup to get just the right mix of batter, rum, and water. I also doubled the butter and decreased the sugars like everyone said, and I'm glad I did. I just made another double batch because the first disappeared so quickly. SO good, and REALLY easy to make!!

Christmas Creamy Egg Nog

Reviewed: Dec. 23, 2008
I tripled the rum and STILL no one could taste it! That's not important, though, since I'll add more next time. What is important is that this is a FANTASTIC recipe! It was all gone quickly at my family's Christmas party. I'm going to make a triple batch tonight for Christmas this week. Yummy!! Thanksgiving 2010 update: I read reviews pertaining to the thickness of this recipe, but I don't like it super thick, so I tried halving the milk and adding 1 cup whipping cream (whipped). I made five batches and added a few extra eggs (I think I used 23 eggs total.) You do have to shake it vigorously before every serving, but it's worth it. So much better, which I didn't think was possible!! I also add nutmeg directly to the mix in addition to sprinkling it on each serving. My entire family raved about this, but they did add extra rum to each glass!

Luscious Lemon Snaps

Reviewed: Dec. 23, 2008
I only tried this recipe because I had lots of lemons to use up. I won't make it again. They were ok, but the "dough" was more like a batter and the cookies came out really thin and not appealing. I added some flour to the rest of the batter to form "dough" and baked the rest. They were ok, but not excellent.

Bacon-Potato Burritos

Reviewed: Nov. 9, 2008
I made these for a breakfast at work and everyone called them "heart attack burritos" lol. So of course they are DELICIOUS! I will be making these again for sure!

4H Banana Bread

Reviewed: Oct. 26, 2008
If you're looking for a delicious, fluffy banana bread, make this! I did use this recipe to make muffins, but I'm sure using it the way it was intended is awesome as well. I will be making this again! I may add chocolate chips next time just for fun :)

Cinnamon Sour Cream Biscuits

Reviewed: Oct. 16, 2008
I made a double batch for a brunch potluck at work and they were the first to disappear. I used half sour cream and half yogurt, and since I didn't have any plain yogurt, I used one pineapple and one peach yogurt since that's all I had. They were still really good; I could barely taste the fruit, and no one else could tell. Very moist, wonderful biscuits. Oh and I also brushed melted butter all over them and sprinkled with cinnamon/sugar before baking, plus the glaze and more cinnamon/sugar when they were done. :)

Crustless Spinach Quiche

Reviewed: Jul. 23, 2008
I added bacon to this and it was quite good; I'll definitely make it that way from now on. And if I can afford it next time, I'll do Meunster as well (I used mozzarella, which tasted just fine). I cooked it for exactly 30 min, but the top seemed a bit too stiff, so next time I'll be more careful and cook it a few minutes less.

Amazing Pecan Coffee Cake

Reviewed: Jul. 23, 2008
I didn't change a single thing for this recipe, and I never will. It truly was amazing! Moist and delicious; not dry like so many other coffee cakes. I brought it to work and all I heard all day was either a)how awesome it was or b)how much everyone hated it (and me) since they're on a diet. :) Also, the topping may look like there's not quite enough, but once it all cooks, it's PERFECT. Don't change anything!! Also...definitely safe to cook the night before and serve the next day. It stays quite fresh.

Mizithra Browned Butter Pasta

Reviewed: May 3, 2008
I used whole wheat spaghetti and it was still amazing! I would have used regular spaghetti if I had had any, and that is what I'll use next time. This tastes exactly like the mizithra cheese pasta at Old Spaghetti Factory! I let the butter cook the entire time the pasta was cooking to get a nice rich color, and I strained it through a paper towel. Worked wonderfully and tasted awesome!

Norwegian Flat Bread

Reviewed: Mar. 30, 2008
I served this with melted butter and it was pretty good. It was also pretty easy to make. Overall, though, only 3 stars because I probably won't make this again; it was just ok.

Chicken Penne Italiano

Reviewed: Mar. 30, 2008
When I made this, I doubled the recipe so that I could have enough for 6 people. Everyone had their fill, and there's still about half leftover. It's pretty filling. Also, and this is just personal preference, I would try to make this a bit thicker with maybe a bit more cornstarch and more tomatoes. Lastly, parmesan cheese (lots of it) is a must.

Maple Salmon

Reviewed: Nov. 5, 2007
I followed the advice of my chef friend, and you all should too! Don't bake it! Cook in a skillet for 5-10 minutes with a buttered sheet of parchment paper on top of the salmon. It comes out very moist this way, and it cooks all the way through in a very short amount of time. Also, don't worry if your salmon doesn't cook all the way through. It's not like chicken; it's ok to eat some of it uncooked! I also used real maple syrup, I think that was key to the flavor. I normally don't like salmon, but this was awesome! I'll definitely be making it regularly.

Chocolate Chip Orange Zucchini Bread

All I can say is...awesome! I originally made this for a potluck and work and everyone went crazy for it. I wouldn't change a thing about this recipe, it's perfect as is!

Leftover Chicken Croquettes

Reviewed: Nov. 5, 2007
This recipe was very good, and definitely an easy way to use leftover chicken. They were a bit dry. The only change I made was to bake them instead of frying them, at 350 degrees for 30 minutes. I would bake them again instead of frying them, but next time I make them I'll serve with some kind of sauce. And there will be a next time; these were very good!

Chimichurri Sauce

Reviewed: Sep. 5, 2007
I served this with the Simple Whole Roasted Chicken and some brown rice. It was very good! It has an unusual, bitter aftertaste, but maybe that's normal; I've honestly never had this sauce before. I did love it though! So yummy with the rice, especially.

Simple Whole Roasted Chicken

Reviewed: Sep. 5, 2007
I followed this recipe exactly, not a single change to it, and it was so so good! And very easy! The ingredients did seem a little odd when I was making it, and I was afraid my very picky boyfriend wouldn't like it, but he loved it too! I served it with the chimichurri sauce, which honestly I'd never had before, and also with some brown rice, and all of it was awesome! I'll definitely be making this again.

Turkey Goulash

Reviewed: Mar. 29, 2006
Pretty good. I did alter it a bit though due to a lack of ingredients; I used macaroni noodles instead of bow-tie and other seasonings instead of basil. I still got the overall idea though, and it was a decent, quick, easy meal.

French Pastry Pie Crust

Reviewed: Jan. 31, 2006
Awesome!!!! I used it for avocado pie I found on this site. I usually avoid eating the crust unless it's covered in whipped cream or something, but this was wonderful! It was like eating a cookie.

Avocado Side Dish

Reviewed: Jan. 27, 2006
This was pretty good, but next time I make it I think I'll omit the chili. Every time I bit into a cold bean it made me a bit nauseous. Also, the market I went to didn't have vegetarian chili, so the pasta did have some meat in there. Still, I got the gist of it. Next time, no chili for me! And more avocado, yummy!

California Chicken Stir Fry

Reviewed: Dec. 14, 2005
My boyfriend and I made this the other night and it was wonderful! We didn't use pineapple because he despises pineapple, which is too bad since I know that it would have been so yummy in it (I LOVE pineapple). Despite that, the recipe was very easy, quick, and delicious. The sauce was perfect.
