Downeast Maine Pumpkin Bread

I'm sure if you make it exactly as written, it's amazing. I personally attempted to make it a bit healthier and it was really good! I used applesauce instead of oil, 1 cup whole wheat and 2 1/2 cups unbleached white flour, used 1 teaspoon of each spice, used 1 cup white sugar and 1 cup brown sugar. I made these for a playgroup and everyone loved them and asked for the recipe! I probably could have cut down the sugar even more and probably will next time.

Baked Sweet Potato Sticks

Made them exactly as described and we couldn't help but eat them right out of the oven! SO GOOD. I let some cool and ate those too, but we both preferred them hot.

Grilled Salmon I

I made the marinade exactly as directed but didn't grill my salmon; I baked it in foil packets as suggested in a review, allowing some air in the packets for air circulation. 425 degrees for 15 minutes = perfect salmon!! I will definitely be using this recipe again for salmon, no matter how it's cooked!!

Ground Turkey Noodle Bake

The only change I made was to use milk instead of dry milk powder and water. It needs some alterations to make this four or five stars. Making as written was a little bland.

The Best Meatloaf

I baked this for one hour 15 minutes and it came out a little underdone - which I didn't mind, since it was super moist that way! Heating up leftovers finished cooking whatever may not have been fully cooked. Very good easy meatloaf, will make again!

Enchiladas Verdes

Wow these are amazing. Will be making again and again. I don't think I've ever had homemade green enchilada sauce before! So easy to make!!! I did broil the sauce ingredients - much easier. Also I doubled the recipe and only used two serrano peppers, which for me made it perfect with just a little zing to it.

Health Nut Blueberry Muffins

I made both with and without walnuts. SO GOOD!! I also made some with chocolate chips, no blueberries. Also delicious! Will be making again for sure. It's nice to have a somewhat healthy muffin recipe.

Golden Sweet Cornbread

This makes a good cornbread but honestly I think the sweet cornbread recipe on the side of the corn meal box is much better. This was a little too salty, which seemed strange. Maybe due to the large amount of baking powder.

Plain and Simple Sourdough Bread

First time making sourdough bread, and it couldn't have been easier! I don't have a bread machine so I followed earlier advice: proof the yeast in 1/4 cup water, knead dough for 10 minutes on floured service, let rise in warm oven (I forgot about it and left it in the oven for 45 minutes), punch down, shape loaf, let rise for 20-30 minutes. Bake at 375 for 30 minutes. Amazing sourdough bread! My sourdough starter smells awesome though, so that certainly helped!

Sweet Potato Pie I

Oh wow....first time I've ever made sweet potato pie...so easy and SO GOOD. I said "OH WOW" when I took that first bite lol. I did use 1/2 cup white sugar and 1/2 cup brown sugar, and added a little ground cloves, ginger (I didn't measure them, maybe 1/2 tsp?) and some lemon juice (all I had left - perhaps about 1 tbsp.). I was going to use evaporated milk instead of regular milk as others suggested but I didn't have any. I have another sweet potato so I'm making another pie this weekend!

Mushroom Risotto

I followed other reviews and didn't use cream. I did use whole milk, but next time (and there will definitely be a next time!!) I'll just use whatever milk we have on hand, which is usually 1%. I also used chicken broth instead of vegetable broth and only needed a little less than 4 cups.

Onion Pasta

I used 2 1/2 onions and 3 cloves of garlic (chopped) in this, and actually I would have liked more onions! I'm still giving 4 stars because even with more onions I think it would be a bit bland. I definitely had to add salt and a good amount of parmesan. Maybe next time I make it I'll try 3 to 4 onions, along with a spash of white wine like a reviewer suggested. I do think that 5 would be way too much.

Grandma's Iron Skillet Apple Pie

Oh wow this was amazing...best apple pie I have ever had! But how could it not be, with melted butter and brown sugar at the bottom! Also, since no one says it anywhere but I guess it's obvious, use a 9 inch skillet. I think I used almost six apples, too. Make sure you REALLY fill it as apples cook down quite a bit. I used the French Pastry Pie Crust from this site for the crust (that is the BEST crust!!)
