Best Brownies

Reviewed: Apr. 29, 2013
I found this to be a solid 4 star recipe. Batch # 1 had me thinking it didn't need the frosting- the brownies were perfectly, mouth-wateringly fudgy and delicious, (I baked them for about 23 minutes & they seemed the perfect chewy consistency) It didn't SEEM like there was a need for frosting, and the frosting was too clumpy to adequately spread, so I just kind of lopped it on there the best I could. HOWEVER, there were nowhere near 16 servings. I could barely cut them into 8 fair slices for guests, so I made Batch #2, and omitted the frosting. I baked batch #2 for the full 25 minutes, and they came out much more cake-like and less tasty (to me) and I didn't have time to do the frosting, which these definitely needed. So, my recommendation is- under-cook them just slightly, and use the frosting, even if it is a bit unsightly. I found myself going back to Batch #1 and having to slap my own hands not to eat all of them!

Super Easy Chicken Noodle Soup

Reviewed: Mar. 3, 2013
So simple. Flavor would vary widely I guess depending on the boullion used. I used 3 tbsp better than boullion, and 1 cube of knorr vegetable boullion. Used 10 cups water, and added a cup each of celery and carrots, a quartered clove of garlic and some parsley at the end. Used broken angel hair pasta and chicken breasts. Very tasty, and super easy and quick. Great easy, basic recipe.

Best Marinara Sauce Yet

Reviewed: Mar. 25, 2012
Quick and perfect! I eyeballed all the quantities because I was in a hurry. Used dried parsley. Sauteed green onions in butter instead of Olive oil since I had some left over from another recipe I wanted to use up. Used a hand immersion blender instead of a food processor and that made it all the easier. Finally, added about 1 TBS of brown sugar as suggested by other reviewers to balance the tartness. Didn't let it simmer the full 3O minutes, only as long as my other recipe was cooking. Still turned out fantastic. A very forgiving recipe and definitely a "Go-To" for a quick red sauce!

Honey Of An Oatmeal Bread

Reviewed: Feb. 24, 2012
There is no better bread. This is the Queen of all bread machine recipes. Just tried it out and messed it up as much as anyone could [ ie, my honey was super thick, so the dough was too dry. Added little water mid-cycle. Then it was too moist. Added a bit of flour. Then it was too dry..etc. You get the picture] I added some sunflower and flax seeds and dried cranberries at some point with blatant disregard for the add-ins beep. I was sure it was going to be a flop. Well, I'm embarrassed to say that my husband and I devoured the loaf for lunch. the WHOLE THING! It's DELICIOUS, it's EASY. It seems pretty fool-proof. Try it! Thanks Merrilee!!

Super Easy Rosemary Bread Machine Bread

Reviewed: Feb. 24, 2012
Excellent recipe! SO easy and came out PERFECTLY! nice thin crunchy crust, super soft dough. loved the step by step instructions for using regular dry yeast instead of bread machine yeast which I can never find here! Threw in some coarsely chopped black olives and chives. Cut back on the thyme. Next time will double up on the garlic and rosemary for a more poignant savory taste. Lives up to it's name though! Super Easy! Thanks for the recipe!

Perfect Sesame Chicken

Reviewed: Feb. 22, 2012
Absolutely loved it! Made it for Fat Tuesday and will be dreaming about it for the rest of lent!! :) didn't have sherry, used apple vinegar instead.didnt have chili paste but added a few flakes of chili pepper instead. It wasn't spicy at all, which was good for us since we're feeding a toddler. Scaled the recipe for 10, but after feeding just three adults and said toddler, we only have a single portion left. Made a lot of the sauce though, which I'll attempt to freeze for use with other oriental dishes. Great recipe, not too difficult and tastes authentic! Just be careful when frying!!

Red Pepper Soup

Reviewed: Feb. 9, 2012
Easy and Delicious! This soup is a snap if you have an immersion/hand-held blender. I blend the peppers/onions/garlic together before adding the chicken stock, and then again after to make it as smooth as possible. Didn't need to strain. Used a red onion, a bit more heavy cream and added a dash of dill. Served with seasoned croutons. Excellent warm-up soup on a cold winter day! Wished I'd made more though! Really only makes enough for 1 bowl for each of the 5 stated servings.

Italian Sausage Soup with Tortellini

Reviewed: Jan. 28, 2012
Loved it. no edits, changes or improvements needed. {did notice as others mentioned that the leftover soup seems to get absorbed into the pasta so it became more like a stew the day after that you could eat with a fork... } We could eat this every day.

Beaker's Vegetable Barley Soup

Reviewed: Jan. 20, 2012
Yummy, filling, slightly spicy- perfect for a cold January day! Used 1/2 garbanzos, 1/2 red beans to use what was on hand; added 2 cloves minced garlic towards the end of the cook time and doubled the worcestershire sauce. Left the celery in large pieces so I could fish it out before serving. Cooked in the crockpot for 6 1/2 hours on low. Added a healthy dose of fresh grated parmesan cheese right before eating and found that it really added the perfect final touch. Without it something would have been missing! Will most likely make it again! husband loved it; hearty and healthy for sure! POSTSCRIPT- DAY TWO, and this is a 5 star recipe for sure! left soup in the crock pot in the cold kitchen over night and just had it for lunch. It thickened up, flavor saturated through every spoonful! Definitely top with parm cheese, but wow! definitely worth the wait to day 2!

Clone of a Cinnabon

Reviewed: Jan. 8, 2012
WARNING: The above recipe is MORTALLY DANGEROUS to your NEW YEAR'S RESOLUTIONS!!! :} really, wow. unexpectedly good. followed recipe exactly. I was interrupted in the morning so the dough was left to rest pretty much all day after removing from the bread machine. Mine didn't leak any of the filling, so they didn't require flipping over. Maybe due to the butter spread not being tooo soft? Recipe made 14 very generous rolls, and enough frosting to satisfy your inner glutton. Fabulous recipe, and remarkably easy! didn't have bread machine yeast, but worked fine in my bread machine using regular yeast dissolved in the warm milk. So glad I finally tried it!

Pasta with Asparagus

Reviewed: Apr. 7, 2011
Superbly simple and delish! Made it 100% according to the recipe...light but tasty flavor. We didn't find it at all bland. Though I did wonder how it might be with a bit of garlic and a lemon squeeze! Might experiment later but this is a definite keeper recipe for a quick meal, even for company, as is!

Chocolate Chip Date Cake

Reviewed: Jan. 25, 2011
scrumptious! I loved it! SO moist! I usually dont have dates on hand but we had a bunch left over from Christmas that I didn't want to waste! wanted to follow the recipe exactly , but accidentally mixed the chocolate chips into the batter and only had a handful of (wal)nuts to add to the top with the sugar. I used butter, not shortening, and increased the recipe by a half, poured into two loaf pans, as I intended to give one as a gift to a neighbor in thanks for a little favor she did. let's just say, she'll probably be getting peanut butter cookies from us instead! lol.

Aunt Anne's Coffee Cake

Reviewed: Dec. 25, 2010
This is a perfect morning cake! Delicious, fluffy and super simple. Made it in a 9inch round pan...planned to use the 9x13 but didn't look like it would be enough. It was perfect in the round pan! Layered the topping and added some chopped walnuts to the top. Couldn't have been better! ( take it out before the top starts to brown and it will be super moist, and addicting!)

Crispy Rosemary Chicken and Fries

Reviewed: Sep. 8, 2010
This was pretty darn good! Made it last night and loved how easy it was! Ours turned out very crispy...but I'd be sure to turn the chicken over half way or so through the cooking time. Also alternated cooking uncovered with cooking with aluminum foil over the top, and added about 10 min or so to the cooking time. We omitted the potatoes to keep the carbs down and used carrots and halved cherry tomatoes instead. Nice color! Next time though I will be sure to use fresh garlic and rosemary, and add some spices under the skin. The meat was incredibly tender, but a bit bland. Maybe will marinate for an hour or so as some others mentioned, and squeeze a bit of fresh lemon juice on top. There definitely will be a next time!!!!:)
