About this Cook
I am a paralegal, working in commercial litigation. I love to crochet, knit, scrapbook, cook, bake, travel, read, and take tons of pictures. I have an ongoing job of collecting information for my family tree. I love to ride my bicycle or walk on the boardwalk at the ocean early in the morning, love to swim and love being at the beach. I love gardening and at one time had 35 rose bushes to tend. My family loves camping, and I'm right there, cooking over the coals. I love all kinds of music from classical to country, no rap or heavy metal though.
My favorite things to cook
Italian and Mexican foods are my favorite to cook and eat... so flavorful.
My favorite family cooking traditions
Everyone looks forward to Thanksgiving dinner at my house; all the homemade family traditional foods... herb stuffing, mashed rutabagas, mashed yukon gold/sour cream potatoes (a tad lumpy), cranberry sauce, pumpkin pie or dump cake, apple pie, creamed onions, chocolate pudding pie. I've tried over the years to cut down on the amount of food, but somebody always says, "what, your not making -whatever-." So, I always make it all... can't change Thanksgiving dinner !
My cooking triumphs
Just about everything I cook comes out perfect and gets rave reviews. I cook so many diversified foods, it's hard to pin-point anything triumphant. My first attempt at making cheesecake, which had been so scary for me, is my greatest triumph memory. It was a white chocolate, raspberry cheesecake, and it came out perfect and was so yummy.
My cooking tragedies
My one and only cooking faux pas was a BAKED ALASKA... it happened at my very first dinner party for friends. Dinner turned out great, nice salad, stuffed flank steak, twice-baked potatoes, steamed broccoli. When it came time to put the Baked Alaska in the oven for 5 minutes to brown the meringue tips, IT MELTED all over the baking sheet. The ice cream had to be rock-hard, guess it wasn't. I took it out of the oven and went to the bedroom crying. My husband came in and told me it was fine, the guests were eating it anyway off the baking sheet.

Mock Peanut Brittle
I made this as part of my recent Christmas gift to co-workers, it got rave reviews. They are great, easy to make, very tasty. Will definitely be part of my "candy" making every Christmas. Thank you.

Microwave Oven Peanut Brittle
OUTSTANDING...!!!! I was so afraid to try this recipe, but am so happy I did. My first ever attempt at Peanut Brittle and it was a raving success. Can't thank you enough, Linda, for an easy and quick way to make one of my favorite candies. This is my boss' all-time favorite as well, and I attempted this recipe mainly to make a gift for him for Christmas. I have a 1000 watt oven, nuked the sugar and syrup for 5 minutes, then added the peanuts, salt, butter and vanilla and nuked it another 2-1/2 minutes. I followed the advise of others and used parchment paper, warmed the tray, and sprayed the spatula with PAM. Clean up was a cinch. This is a definite re-do many times over for me. Thank you again.

Chocolate Sauerkraut Cake II
I made this for an Oktoberfest get-together with friends... everyone gave it rave reviews, and were surprised to learn there was sauerkraut in the recipe. Unfortunately, I have an allergy to anything chocolate and couldn't try it. Would definitely make this again.
