Mango Chipotle Guacamole

Homemade Melt-In-Your-Mouth Dark Chocolate (Paleo)

I've made this a couple of times now. The last batch I added chopped almonds and a little coconut because I love texture. A small piece in the evenings tastes so delightful, and I love the fact that it's not sinful to have a little indulgence!

Loaded Chicken Carbonara

I loved this recipe because it wasn't high in fat, and so simple and delicious. Of course we add our own flavor touches and mine was fresh basil and pancetta instead of regular bacon. I saved it to my recipe box for future carbonara nights.

Renee's Strawberry Rhubarb Pie

I used this recipe three times last summer when I made my favorite pie. I forgot to save the recipe to my recipe box then, but looking I found it again. I remembered her story about the rhubarb, and saved it this time. Served it to my neighbors last summer as they bake a lot of pies. They loved it, and decided to add strawberries to their rhubarb pies from now on. There isn't a better combo then sweet and tart. I'm making one right now.

Chef John's Pumpkin Pie

I made this pie recipe for Thanksgiving this year. It looked simple enough so decided on it for my pumpkin pie. From my first bite the texture was so silky and smooth, and the flavor was just perfect! This will be my go to pumpkin pie for the holidays from now on. Thanks again Chef John!

Chef John's Spinach and Feta Pie

I made this for dinner tonight, and we all loved it! I did add one clove of chopped garlic the last 30 seconds after browning the onions and right before adding in the spinach. Baking time was accurate and it was perfect. I also put a dollop of Greek yogurt on top just before serving. Next time I make this I'm going to add some dried oregano with the egg mixture so it will have a Greek flavor. I plan on making this dish more often as it was so easy for a quick meal. Thanks Chef John, this is a keeper!

Chicken Parmesan

I just tried this recipe tonight for dinner. I had veal cutlets in the fridge and wanted to make a Parmesan dish. I'm so glad I watched Chef Johns video, because I wanted to make it the correct way. I follwed it as the Chef demonstrated and it was wonderful! Next time I will use chicken breasts as I always have them on hand.

Mom's Ginger Snaps

This is a good recipe! I do love spicy food with a little heat, so next time I make these I will add about 1 1/2 Tbs of fresh grated ginger and see how much of a stronger taste I can get. But they are yummy as they are!

Chef John's Chicken and Dumplings

I was looking for a chicken & dumpling recipe to make for my mom's 92nd birthday. It had been years since I last made it. I trusted Chef Johns version because it looked to be closest to what I remember. I have made a few recipes from Chef John and each one turned out wonderful. We all loved it, so I'll save this recipe for next time. A cozy comfort dish!
