Chewy Peanut Butter Chocolate Chip Cookies

Delicious, chewy cookies, just like the other reviewers claimed! Sad thing was, I think 375 degrees was a tad too hot for the fat content and the bottoms of the cookies got really dark - almost burnt! I also made smaller cookies, about 1 1/2 inches in diameter, and cooked them for 8 minutes maximum. Next time I'll reduce it to 360 or 365 degrees F. Otherwise, no complaints. This recipe is a keeper!!!

Grandma Ople's Apple Pie

BEST. PIE. EVER. All I can say is: read the reviews, use the French Pastry Pie Crust recipe with it and prepare yourself for the best apple pie you've EVER had. Perfect crust. Perfectly cooked apples. Caramel sauce to die for. Flavor and texture that's beyond yum... it's OMYGOD level. This is a contest worthy pie. Try it.

Hamburger Steak with Onions and Gravy

Whole family flipped over this recipe. Doubled it and had leftovers for the next day. We ate it with boiled new potatoes and steamed peas and it was terrific... the gravy's what really puts it over the top! Didn't have sherry, so I added a splash of red wine and it was SUPERB. Delicious and budget-friendly. Definitely a keeper!

Cream Cheesy Cubed Zucchini with Lemon and Oregano

WONDERFUL! Zucchini was a tricky veg for me to make interesting. All I knew how to use it, honestly, was in ratatouille or grated in chocolate cake. This was delicious! My 4 year old ate some (and he avoids anything green), my 1 1/2 year old yummed it up and my hubby and I had 2 helpings each. We preferred it over the roasted chicken I made with it. Fantastic! Well done, Chef John!

S'More Bars I

Very sweet, but addictive! Did 1 cup graham cracker crumbs and 1/2 cup flour, and added chopped pecans instead of peanuts. Spread it in pan with a silicone spatula and added more marshmallows to completely cover chocolate (which was a mix of chopped Easter bunny and semi-sweet chocolate chips). Let it cool, then cut with a knife sprayed with Pam or dipped in water, because the marshmallow tends to stick and stretch, pulling at the bar beneath. Not something to have around the house if you're watching your figure, but great for bake sales, potlucks, volunteer teas at school, etc. These are so much fun and sooo yummy! Thanks for sharing this great recipe!

Old Settlers' Baked Beans

Made in slow cooker like another reviewer, substituting garbanzo for the Great Northern beans and adding the crisp bacon on top at the end. Definitely a keeper! Great recipe... the taste of the sauce reminded me of the "Family Favorite Meatloaf" from the Best of Bridge series of recipe books, which is my go-to meatloaf recipe.

Crispy Eggplant with Spicy Tomato Sauce

Wonderful, wonderful, wonderful! Not a big eggplant fan, but I had 3 small eggplants about to go bad in my fridge, so I tried this... and am SOOOOO glad I did! My kids yummed it up, my husband (notoriously picky eater), said he could have just eaten them straight like chips and I thought the same. Served it tonight with pasta and P.N's "Sockarooni" sauce (minus added spice) and will definitely be making this again and again. And again. *grin* Thanks so much!

Mini Cheesecakes

Delish! Didn't have cherry filling, vanilla wafers or lemon juice, but instead made my own crust with 1 1/4 Cup of graham crumbs, 2 Tbsp brown sugar and 1/4 cup melted butter, pressed in bottom of 12 greased muffin cups and baked for 5 mins, then let cool. Used 1 Tbsp vanilla and 2 Tbsp of sour cream with the filling, and topped with frozen berries that I cooked on low with sugar and a little bit of water until soft. Sooooo incredibly good! I liked them warm with whipped cream, but hubby loved them refrigerated with drizzle of chocolate sauce. So quick and amazing. Thanks for sharing this recipe!

THE EASIEST, BEST GO-TO RECIPE for roasted chicken on Allrecipes.com. I've made it a half-dozen times and it ALWAYS comes out perfect. 375 for 1hour and 15 minutes and it's done.

Slow Cooker Stout Stew

My husband couldn't stop raving about this stew! Cut up a pot roast into 1 1/2 inch cubes and added steak spice to the flour. Also put 2 TBS each of dijon and bbq sauce to the liquid, a bottle of amber beer and the same amount of chicken stock, which I used to deglaze the pan before adding it to the slow cooker. Cooked on high for about 6 to 7 hours and it was A-MA-ZING. Had it with the Irresistible Irish Soda Bread.... OMG it just put it over the top!!

Burrito Pie

Lovely! Made this for my hubby and 2 young kids... although cut down on the amounts and the spice! Used one pd beef, half an onion, 2 cloves minced garlic, half can olives, no chili peppers, regular diced tomatoes with celery and onion, mild taco sauce, 1 can refried beans and 3 large tortillas cut up to fit a round glass casserole (it's all I had on hand). Loaded up on the cheese and cooked as directed. SOOOOOO good! Served with mild salsa and sour cream. Hubby and kiddos (1 and 3.5) LOVED it and clamored for more. This would make an excellent potluck dish. Thanks so much for sharing this recipe!

Asian Spicy Tuna Salad

Lovely! Made this for dinner as sandwiches with lettuce, tomato and cheese, along with Edamame Soup from the BHG website. Used red onion (will add less next time... too much of a kick), added 2 tsp of sweet chili sauce instead of the pepper, omitted the curry and added 1/8th of a tsp. of paprika. Yummo! Tasted better than the name-brand-tuna-in-sauce they sell for a mint in the grocery stores. Will be making this again!
