Rhubarb Crunch

This recipe was divine WITHOUT any modifications. I made it at work for a potluck and everyone loved it. It was so easy and the ratio of fruit to topping was perfect. I'll definitely make this again.

I'd never heard of this before, but I needed a recipe to use up the leftover egg yolks from an angel food cake I'd made. I brought these to our Mother's Day brunch, and everyone loved them! Banana Blueberry Muffins

These were super easy and so delicious. I was nervous about trying the recipe because of the mixed reviews, so I was very happy with the end result. They are just sweet and cinnamony enough that they do not taste too healthy. :-)

Strawberry Rhubarb Sauce

Easy Mint Chip Ice Cream

This was so easy and so tasty! I'd never made ice cream before, so it was pleasantly surprised when it turned out so good. I used some mini-chocolate chips and also some regular-sized chips. I wouldn't recommend the regular size. The smaller ones were much better.

Caramel Banana Cake Roll

This was really easy to make! And it turned out so good. I made it for a church potluck, and I got a lot of compliments. I didn't have any caramel ice cream topping, so I used butterscotch instead. Also, I omitted the lemon peel.

Sunshine Pineapple Cookies

Despite the mixed reviews, these cookies turned out very good! Very moist, and cake-like. I put in 1/2 cup coconut and omitted the nuts. I baked them at 350 for 11 min. I yield 4 1/2 dozen.

While this was very easy to make, my husband and I both thought it was quite bland. Unfortunately, I didn't read any reviews before making it and put in the whole cup of water. It was much too liquidy. The meat was good and the rice, but we didn't care much for the rest. Probably won't make it again.

Cool Whip Cookies

These are so tasty! I think that I will try them again--with different cake mixes (as recommended in some other reviews). I was really skeptical when I saw the consistency of the dough. It looks really difficult to work with, but, after reading another review, I found that using 2 spoons was very helpful. I also had to increase the baking time to 10-12 min. And the amount of powdered sugar needed is much more than 1/3 cup. I actually didn't measure mine. I just kept refilling my bowl as it ran out, but I'd guess it to be 1-2 cups. This yielded almost exactly 3 dozen cookies (plus 2).

Homemade Cream Filled Individual Sponge Cakes

Orange Cream Cookies

Not sure if I did something wrong when I made these, but the batter was quite runny. Looked more like cake batter than cookie dough. I ended up making one pan of bars and one dozen cookies. Despite the weird consistency, these tasted delicious. I would probably make them again.

Banana Oatmeal Cookies III

These cookies turned out delicious!! A definite addition to my collection of banana recipes. Plus the recipe is so easy, you don't even need an electric mixer. I just used a fork for all the mixing.

Chocolate Cake IV

This cake turned out fabulous! I made it for a dinner party, and everyone was impressed. It was very moist and melted in your mouth. My grocery store didn't have the whipped topping mix, so I used a tub of frozen whipped topping (Cool Whip(R)). I still mixed it with the chocolate pudding, and just added a bit of milk to help with the consistency. Also, I didn't need such a large cake for the small dinner party, so I split the cake into 1 one cake and 12 cupcakes.
