Salsafied Chicken and Rice

Love Love Loved this recipe! Will make again and again. Next time will add a bag of frozen mexican veggies (black beans,corn,onion, peppers) and maybe use brown rice to make it healthier. The only change I made was to add taco seasoning to the chicken while it was cooking, i think it added lots of flavor

Baked Spaghetti Squash with Beef and Veggies

Fantastic! I did not change a thing and this recipe was perfect. I cut the squash in half lengthwise, scooped out the seeds, then microwaved cut side down in 1/4 inch of water in a casserole dish for 13 minutes. It turned out just right in less than half the time.

I make this by browning the rice, then adding 4 Tbsp. tomato paste, 1 tsp. chicken boullion, garlic salt and parsley to taste and water. The chicken bullion takes out the strong tomato taste and adds good flavor. This is excellent served with pinto beans and pork chili, tamales, enchiladas, almost anything!

Italian Spaghetti Sauce with Meatballs

The best spaghetti and meatballs I have ever had! I used fresh parsley and basil and fresh-grated parm. And I used italian seasoned bread crumbs. Other than those changes I followed the recipe and it was wonderful. I had all day to cook the sauce so it ended up cooking 3 hours before adding the meatballs and I think that made the sauce even better. Next time I will cut the olive oil at least in half so I won't have to get the oil off the top when it's done. This is one of my all time favorites from this site!

Blackberry Pie I

This was my first time making a pie and it could not have been any easier! I added fresh lemon juice before placing the top pie crust on and it added great flavor. Served with vanilla ice cream ... Yum!

Catherine's Spicy Chicken Soup

FANTASTIC! Everybody loved this soup. I made a double batch to feed a family of 6 adults and 4 small children over a 3-day ski weekend and it did the job, we finally ran out on our last night - yummo!

Halibut with Zesty Peach Salsa

This was so delicious! I had peach salsa already made I was trying to use up so I only used the halibut part of the recipe... We loved it so much will be making it again tomorrow! Made this with the lime coconut rice also on allrecipes and it was one of my favorite dinners ever.

Salsa Fish Skillet

This had a good flavor. I used scallops and halibut steaks. The scallops worked out much better since they stayed whole. I found that the fish flaked apart and became mushy in the wok. Other than that it was easy. If I make this again I will use scallops and shrimp instead of fish

Tender Italian Baked Chicken

Made exactly as written and loved it! To improve it I will bake on wire rack on top of cookie sheet next time (recommended by another review to make crispy all around) and will try greek yogurt/mustard mixture instead of mayo just to save calories.

Easy Chicken Fajita Soup

Fabulous! So easy and somewhat healthy... I added fresh garlic to chicken while cooking and also seasoned chicken with garlic salt and pepper. Top with fresh squeezed lime, sliced avocado, shredded cheese, sour cream, and or chips. Will be making this often

Dutch Babies II

I made 2 of these... The first time I followed suggestions and put sliced peeled apples in e bottom of a 9x13pan sprinkled with cinnamon then placed 2-3 tablespoons butter in the pan. I put the pan in the oven at 425 while I made the batter. I substituted 1 tsp vanilla instead of nutmeg. Once the butter was melted I poured the batter in and baked for 20 minutes. Looooooved it! The second batch I put the butter in a glass pie pan and let it melt in the oven. I made the batter then poured it in the glass pan and baked for 20 minutes. So good! It was delicious either way! I will be making these again soon

Funky Enchilada Casserole

I substituted corn chips instead of tortillas and added a can of enchilada sauce after reading the reviews. The chips ended up being soggy. Next time I will add them only on the top just before adding the cheese or not at all and just serve the chips on the side. Overall the flavor was great and I loved how much fresh veggies are in this!
