Chicken Tortilla Soup V

I loved the flavor - but I wish the recipe was clear on what to do with the chicken. I ended up cutting the raw chicken into small cubes before starting and then following the directions from there. I think this would have been MUCH better with shredded chicken but I don't know when to shred it :( I've never made soup with shredded chicken before!

Alaska Salmon Bake with Pecan Crunch Coating

Very quick and easy, however I agree with other reviews that it is a little too sweet and not spicy enough for my taste. Easy fix - next time I will use hot spicy mustard instead of honey mustard. Other than that I will make it the exact same way next time. Also, I used the 2 lb fresh salmon at costco insead of the smaller fillets, cooked for about 15 minutes and it turned out perfecto!

Baked Teriyaki Chicken

This was easy to make and very tasty...I doubled the sauce as others suggested and used it all, so I'm not sure how it would have worked with half the sauce. I served it with white rice and a salad. Next time will top with sliced green onions and serve with rice and sesame green beans.

Salsa Fish Skillet

This had a good flavor. I used scallops and halibut steaks. The scallops worked out much better since they stayed whole. I found that the fish flaked apart and became mushy in the wok. Other than that it was easy. If I make this again I will use scallops and shrimp instead of fish

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

This was fantastic - one of the best recipes I have made from this site. I used all red grape tomatos (no yellow) and lots of fresh basil instead of dried. Yummy!!

Pam's Chicken Enchilada Casserole

This was easy to make, I followed other reviewers' suggestions and mixed the sour cream in with the chicken, and I used a rotiserie chicken. Next time I will add more enchilada sauce and less sour cream to make it taste more like an enchilada. The leftovers were better than the first night, the flavors blended together nicely the second day.

Easy Cajun Grilled Veggies

This is my favorite recipe for grilled veggies...so easy to make with great flavor. My husband loves the spicy kick. I have used all kinds of veggies for this. Mushrooms, onions, zucchini, squash, red peppers, green peppers, tomatoes. Anything you have on hand will work.

Kitty Litter Cake

This was perfect for our annual halloween party. It looked absolutely disgusting and we had a great time making the tootsie roll terds. I rated it 4 stars because the taste was just okay. I will definitely use the concept again next year, but maybe a different kind of cake.
