Dutch Babies II

I made 2 of these... The first time I followed suggestions and put sliced peeled apples in e bottom of a 9x13pan sprinkled with cinnamon then placed 2-3 tablespoons butter in the pan. I put the pan in the oven at 425 while I made the batter. I substituted 1 tsp vanilla instead of nutmeg. Once the butter was melted I poured the batter in and baked for 20 minutes. Looooooved it! The second batch I put the butter in a glass pie pan and let it melt in the oven. I made the batter then poured it in the glass pan and baked for 20 minutes. So good! It was delicious either way! I will be making these again soon

Sopapilla Cheesecake Pie

This was very good but not sure if it's worth all the calories! IMO tastes much much better after spending the night in the fridge - yum! Next time might try to add less sugar and butter I think it would stil taste fine

Tzatziki Sauce I

This is my new favorite appetizer! Served with cups of diced cucumber, tomatos, greek olives, feta cheese and sliced pita bread so people could make their own little pita appetizer, it was delicous!

Fluffy Pancakes

Funky Enchilada Casserole

I substituted corn chips instead of tortillas and added a can of enchilada sauce after reading the reviews. The chips ended up being soggy. Next time I will add them only on the top just before adding the cheese or not at all and just serve the chips on the side. Overall the flavor was great and I loved how much fresh veggies are in this!

Italian Sausage Soup

This was wonderful! Easy and delicous. I added 1 cup of orzo pasta and it was too much pasta, next time will add less than 1/2 cup of pasta.

Catherine's Spicy Chicken Soup

FANTASTIC! Everybody loved this soup. I made a double batch to feed a family of 6 adults and 4 small children over a 3-day ski weekend and it did the job, we finally ran out on our last night - yummo!

Asparagus Cashew Rice Pilaf

This was a lot like rice-a-roni, but probably healthier since I can cut back on the butter and the salt. I also added extra onion, chopped, and sprinkled green onions on top when finished. I will probably make this again with mushrooms added.

Artichoke Chicken

The flavor was outstanding, especially served with rice... however my chicken was not done in 30 minutes, maybe more like 45 mins needed. Also I substituted half sour cream for half of the mayo.

Greek Penne and Chicken

I can't believe how quick and easy this was, literally ready to eat in the amount of time it takes to cook pasta noodles. I used fresh tomato and sun-dried tomato, marinated artichoke hearts and extra red onion, probably extra feta as well. Will make this again if for no other reason then how incredibly easy it is!

American Lasagna

Lots of dirty dishes making this dish, but it was good. I added mushrooms to the sauce, added and extra 15oz of diced italien tomatos, and used ready to bake noodles. Served with a green salad and garlic bread. I'm not crazy about lasagna to begin with, but my husband is and he devoured this.

I made this exactly as written except for adding salt and some extra cajun seasoning, it was fabulous! Served with cornbread and sauteed green beans and onions as a side. Will be making this again and again, a new family favorite!

Avocado Fish Tacos

Very easy, I liked the cabbage and avacados but the fish could have used more seasoning I think. Will probably use the cabbage/poppyseed dressing mix again on fish tacos but with a more flavorful fish recipe.
