Mushroom Stuffed Zucchini

I made these as a side dish with Brooklyn girls penne from this site. So delicious! Next time I might add some tomato as well. But either way will definitely make again!

The best! I followed the recipe exactly and served with mushroom stuffed zucchini from this site. My whole family gobbled this up. Will make this again certainly, even with plain old grilled chicken instead of the breaded to save time and calories

Chinese-Style Baby Bok Choy with Mushroom Sauce

This was easy and very tasty. The mushroom sauce was a little too strong for me... Might try with crimini mushrooms next time to tone down the flavor a little bit. And the bok Choy was well done after one minute.

Miso and Soy Chilean Sea Bass

I was really looking forward to making this but the sea bass wasn't good, very fishy. I am going to try again with black cod. Really couldn't tell if it was the marinade or the fish making it so fishy/salty

Avocado Shrimp Ceviche-Estillo Sarita

I read all the reviews and Still decoded to try this exactly as written.... First the shrimp were still totally raw after 20 minutes in the lime juice ( even though I chopped them pretty small). So I decided at that point to just add the tomatoes onion etc and let bit all marinade an hour... After one hour the shrimp were still completely raw! Still grayish blue color and not opaque at all. I kept an eye on it for another hour before we just ordered pizza and decided to try for lunch the next day. Well in the morning the shrimp were opaque finally, whew. And the end result was absolutely delicious! We even had some the next night and it was still great. Served on tostadas with lots of avocado. For sure if I make this again will marinade the shrimp overnight. I don't understand why it didn't work for me as written.

Fiery Fish Tacos with Crunchy Corn Salsa

Easy and authentic Mexican flavor! We just returned from Cozumel and wanted fresh ingredients and big flavor like we had on the island... This hit the spot. And my first time working with jicama, it added a great texture.

Halibut with Zesty Peach Salsa

This was so delicious! I had peach salsa already made I was trying to use up so I only used the halibut part of the recipe... We loved it so much will be making it again tomorrow! Made this with the lime coconut rice also on allrecipes and it was one of my favorite dinners ever.

Easy Chicken Fajita Soup

Fabulous! So easy and somewhat healthy... I added fresh garlic to chicken while cooking and also seasoned chicken with garlic salt and pepper. Top with fresh squeezed lime, sliced avocado, shredded cheese, sour cream, and or chips. Will be making this often

Beef and Bean Chimichangas

Used one bag of frozen Mexican veggies instead of fresh... Corn onions and bell peppers. And used rotel instead of taco sauce and burrito seasoning instead of spices listed...will make again with origional ingredients. This was great!

Italian Spaghetti Sauce with Meatballs

The best spaghetti and meatballs I have ever had! I used fresh parsley and basil and fresh-grated parm. And I used italian seasoned bread crumbs. Other than those changes I followed the recipe and it was wonderful. I had all day to cook the sauce so it ended up cooking 3 hours before adding the meatballs and I think that made the sauce even better. Next time I will cut the olive oil at least in half so I won't have to get the oil off the top when it's done. This is one of my all time favorites from this site!

Salsafied Chicken and Rice

Love Love Loved this recipe! Will make again and again. Next time will add a bag of frozen mexican veggies (black beans,corn,onion, peppers) and maybe use brown rice to make it healthier. The only change I made was to add taco seasoning to the chicken while it was cooking, i think it added lots of flavor

This was my first time making a pie and it could not have been any easier! I added fresh lemon juice before placing the top pie crust on and it added great flavor. Served with vanilla ice cream ... Yum!
