I loved this soup! I modified it a bit by adding extra mushrooms, frozen corn and some bacon, and also used lots of extra old bay and toni's Cajun spice instead of salt. Topped with oyster crackers and hot sauce it was delicious. Will make again

Dee's Roast Pork for Tacos

Delicious and easy. I wrapped it in foil and put it in the crockpot overnight. Served on tortillas with red onion and cilantro... Yum!

Baked Oatmeal II

I wanted to make this healthier so I made several changes... Used applesauce instead of butter, 1/4 cup of splenda brown sugar mix, 3 eggs, raisins instead of cranberries, and 2% milk. Was the best breakfast I have ever had! Already cooking batch #2 now and planning on making it often!

Jalapeno Corn Bread

My first experience with jalapeño corn bread and I loved the flavor! The only thing missing is butter. I will substitute some butter for oil next time, and there will most definitely be a next time

Creamy Goat Cheese and Honey

Yum yum! Very simple recipe with wonderful blend of flavors. I served with sliced green apples, pears, baguette and crackers. My favorite was apples and pears. Almost like a dessert but works well as appetizer as well. Beautiful presentation.

Slow Cooker Cilantro Lime Chicken

I liked how easy and simple this was.... But it wasn't anything out of this world, just an ordinary average chicken taco. Good news is it is so easy and you can make lots extra to feed a crowd, so it would come in handy for a party.

Easy Fruit Cobbler

I love how easy this is but it is quite bland. Sprinkle cinnamon and sugar on top and mix vanilla and salt into the batter for more flavor.

Enchilada Casserole III

Followed as directed but with 2 cans enchilada sauce instead of the mix. I also added chopped onion to the meat mix and on top after baking. Loved it! Will make again using the enchilada sauce recommended just because it sounds good

Mushroom Stuffed Zucchini

The best! I followed the recipe exactly and served with mushroom stuffed zucchini from this site. My whole family gobbled this up. Will make this again certainly, even with plain old grilled chicken instead of the breaded to save time and calories

Chinese-Style Baby Bok Choy with Mushroom Sauce

This was easy and very tasty. The mushroom sauce was a little too strong for me... Might try with crimini mushrooms next time to tone down the flavor a little bit. And the bok Choy was well done after one minute.

Miso and Soy Chilean Sea Bass

I was really looking forward to making this but the sea bass wasn't good, very fishy. I am going to try again with black cod. Really couldn't tell if it was the marinade or the fish making it so fishy/salty

Avocado Shrimp Ceviche-Estillo Sarita

I read all the reviews and Still decoded to try this exactly as written.... First the shrimp were still totally raw after 20 minutes in the lime juice ( even though I chopped them pretty small). So I decided at that point to just add the tomatoes onion etc and let bit all marinade an hour... After one hour the shrimp were still completely raw! Still grayish blue color and not opaque at all. I kept an eye on it for another hour before we just ordered pizza and decided to try for lunch the next day. Well in the morning the shrimp were opaque finally, whew. And the end result was absolutely delicious! We even had some the next night and it was still great. Served on tostadas with lots of avocado. For sure if I make this again will marinade the shrimp overnight. I don't understand why it didn't work for me as written.

Fiery Fish Tacos with Crunchy Corn Salsa

Easy and authentic Mexican flavor! We just returned from Cozumel and wanted fresh ingredients and big flavor like we had on the island... This hit the spot. And my first time working with jicama, it added a great texture.
