Chicken Seashell Salad

My family loved this recipe. I was a little skeptical about the almond extract, but added it anyway. The flavor of the dressing was great on the salad. I don't usually care for pasta salad, but this one is very tasty. The celery & mandarin oranges are critical to the salad for color. Everything else in it is white and not very pretty. I used fat free mayo and will probably leave out the cashews next time to make it very low fat.

Mandarin Orange Chicken

Great sauce! I used only two chicken breasts but the full recipe of sauce. Glad I did because my husband & I couldn't get enough of it. I added garlic powder, salt and pepper to the flour and more OJ than the recipe called for (added more as the sauce reduced). Just the right combination of sweet and spicy. THanks!!!

Whole Wheat Honey Bread

I made this recipe as my first attempt to use my new bread machine. It turned out fantastic! My husband and two year old gobbled it up. I used 2 cups whole wheat flour and 1 cup all purpose flour and set my machine on the light crust setting as other reviewers suggested. Also, I was half way through putting the recipe together when I realized I didn't have any powdered milk so I just left it out. Still turned out great! Thanks for a recipe that even a novice can make successfully on the first try!

Loaded Potato Soup I

This soupe is awesome! My mom made potato soup with a very thin base of mashed potatoes so I wasn't sure if I would like this made with flour instead. I have to say that this is even better than moms! I used 2 large baking potatoes instead of the 12 called for. It made 10 servings. Also topped with a little cheese and crumbled bacon. Loved it!!! (It did take a little longer to thicken up than the recipe suggested, but oh so good!)

Orange Fluff I

This is a family pleasing side dish that is quick to make. I halved the ingredients and it made 6 servings. It is also good with shredded cheddar cheese and pecans added. You can't taste the cottage cheese (especially if you add cheddar too), so it is "safe" to try on your family members that don't like cottage cheese.

Cinnamon Rolls III

This dough is fabulous! I did add the entire package of pudding mis as other reviewers suggested. After slicing into rolls, I let them rise for the 45 minutes and then put them in the refridgerator to bake the next morning. When I pulled them out to bake they had risen A LOT more. . . which made them even better. After 15 minutes of baking, the tops were begining to brown so I took them out of the oven. The bottoms of the rolls were still a little too doughy for me (but I think it's because the oven rack was too high.) My husband has requested that I make them again and again. . . which I will. . .but I'll bake them closer to the bottom of the oven. Thanks for a recipe that gets rave reviews for a beginning baker!

Texas Sheet Cake I

Delish. Just like I remembered it. I did add 1 tsp of cinnamon to the cocoa mixture because I never had chocolate sheet cake without it. Icing is very sweet, but oh so good when you spread it warm onto warm cake.

Spinach Bread

This is one of my very favorite bread recipes. Wonderful texture and flavor! (Set my bread machine to the light white setting.) Great with soup, salad, by itself, or with a meal. I'll be making this often. Thanks for the recipe.

Banana Caramel Fluff

This dessert tasted great (with the added brown sugar)and was super easy. I used vanilla butter nut extract instead of plain vanilla to make it a more interesting flavor and used only a teaspoon. Also, I had trouble with the crescent rolls. They wanted to stretch out which made some of the servings too large for my dessert plates. Next time I'll use the store bought frozen puff pastry and cut it to the size I want. It won't look like flat crescent rolls then either. A great recipe to play around with!

Taco Seasoning I

So much better than the packaged kind! I used a little less salt than called for and substituted ground red pepper (cayenne)for the crushed red pepper flakes and used about 1/8 tsp instead of 1/4. Terrific! Thanks!

Low-Fat Blueberry Bran Muffins

I made these for my sister who is on a severly restricted diet and we all loved them! I cut the salt in half and substituted splenda for half of the brown sugar. My "won't eat it if it's healthy" husband even loved them so much I made a batch just for him. That's a good recipe!

Anaheim Fish Tacos

This recipe is so good you almost can't believe it's healthy. I made vegetable broth and used it instead of the chicken broth to reduce the amt. of sodium. Also used the cod filets that come frozen in the big bag from the warehouse club. It turned out great! Served it with the Quinoa and Black Beans also from this site. Fabulous!

Wild Rice Casserole I

I loved this dish!! Used cream of chicken soup and added sliced water chestnuts because I had them in the pantry. Used only 1 seasoning pkt. (Also subbed colby jack cheese and parmesan...it's what I had.) It looked very unappealing and I had my doubts while it was cooking, but by the end, oh so tasty! I may cut back on some of the butter next time. Although it made the rice so luscious, it was a little bit greasy. I did stir the crock a couple of times during the day for even cooking. I'm ready to make it again already! Thank you for a different and comforting recipe!!

Rory's Most Wonderful Corn Bread

This is truly a 5 star recipe! I used leftover broccoli and cooked it a little bit more until it was soft. It mixed in to the batter very easily. My husband said it was really good and ate 3 pieces at dinner with soup and another later for a snack. The broccoli and onion flavor remind me of a broccoli casserole. We loved it and I plan on making it often.

Honey Nut Granola

I made it per the recipe and it turned out very tastey. Next time I'll add more honey as others suggested to get the granola to clump together more. As I made it, the oats didn't really stick together in clumps like we prefer it to. Very good flavor though...and definitely worth experimenting with!

Busy Night Turkey Taco Soup with Avocado Cream

Made this the weekend after Thanksgiving and everyone loved it! Great use for leftover turkey that doesn't taste like leftover turkey. Didn't make the guacamole, (trying to be good after pigging out at Thanksgiving)and the soup was very good with out it. Will make this all winter with chicken or the rest of the frozen Thanksgiving turkey. Thanks!!

Cowboy Skillet Casserole

My family loved this. I left out the peppers, used a can of pork and beans (not the sugar sweetened baked beans), added a can of corn, and shredded cheese on top of the corn bread. I also used 1 recipe of Taco Seasoning I (approx. 3T) from this website instead of the fajita seasoning. (We LOVE that recipe!) The amount of sweet to spice was perfect. As others, I baked it in an 8" square pan. Very easy to tailor to your families preferences or to use what you have in the pantry.

White Chili

So easy and good. To make it more like a traditional chili consistency though, next time I'm going to add one can of beans with its liquid and puree the other before adding it. The taste was great with the shredded pepper jack cheese. (I also added cumin) It just needs a little thicker base to hold it all together. Thanks for a quick warm supper!

Easy Caramelized Onion Pork Chops

These were great and very easy. I used apple juice instead of the water and added 1 tsp. white sugar. Left the lit off after adding the juice so the liquid could evaporate (took 20 minutes). Will make again and again.
