Chicken Seashell Salad

My family loved this recipe. I was a little skeptical about the almond extract, but added it anyway. The flavor of the dressing was great on the salad. I don't usually care for pasta salad, but this one is very tasty. The celery & mandarin oranges are critical to the salad for color. Everything else in it is white and not very pretty. I used fat free mayo and will probably leave out the cashews next time to make it very low fat.

Chocolate Eclair Dessert

The recipe couldn't be easier! I followed the advice to heat the frosting in the microwave to make it pourable. My husband loved this. . .but I thought it tasted mostly like graham crackers. I'll make it for him in the future and half the recipe.

Amazing Chicken

This recipe was just ok. I seasoned the chicken with garlic & onion powder, salt & pepper before coating it with the mayo and bread crumbs. I'm glad I added the seasonings because that was all the taste that there was to the recipe. If I make it again I will add a sauce or roast veggies in the pan with it to boost the flavor.

Pizza Salad I

Like some others, I found this salad to be too salty...almost too salty to eat. The dressing is very good, though. I will keep the recipe in my files just for the dressing. It would go well on other salads. Pizza salad is a great idea, but this recipe didn't work for my family. Will need quite a bit of "tweaking" if I make it again.

Addictive Sweet Potato Burritos

These were great...odd combination but very tasty! Even my meat-loving husband loved them. I was worried about the seemingly large amount of chili powder. It turned out really good though. I used one can of black beans, one can of sweet potatoes and half the amount of all the other ingredients and it was great. I did use black beans and mashed them before adding to the skillet like others suggested. Also substitued Terriaki Sauce since I was out of soy sauce, used more cheese in each burrito than recipe said. Will make again and again.

Baked Chicken with Peaches

This was very good. I doubled the amount of peaches and used fresh ones without peeling them. It turned out great. My picky toddler even liked it. It was not a pretty dish, but a great change of pace for the week-night family dinner.

Summer Style Chicken

My family likes this dish. It's not much of a recipe, but still tasty. I make it in the summer and double the amount of veggies. You can spice it up with whatever flavors your family likes (Italian Seasoning, Garlic, Lemon Pepper, Cajun, etc.)

Hearty Breakfast Cookies

I was excited to find a breakfast cookie recipe and this is a good one. My husband loved these. I was only so so about them, but I'm not a big peanut butter fan. I made these with an ice cream scoop and got fewer than the recipe suggested. They turned out great though! Great for grab and go breakfast on the run!

Cabbage Jambalaya

This was much better than I expected. Even my picky 2 year old liked it. I cooked the meat, onions and celery and could tell it was going to be way too much food for us. I put half of the cooked meat into the freezer and proceded with the recipe...using the full amount of cabbage and rice and beef broth in place of the water. I did add quite a bit extra garlic, however. We found there was plenty of meat in the finished product with only half of it in there. Plus I have a head start next time I make it! Thanks for a new weeknight favorite!

Gorgonzola Dip

This dip was thick and delicious when I made it but got runny after refrigerating it. I was disappointed at first, but then realized what a fabulous salad dressing it made! Everyone loved the flavor of this!

Slow Cooker Hoppin' John Chowder

We loved this! I cooked all ingredients (except the rice) as directed with the beef broth and no water added. I was afraid the rice would get "starchy" in the slow cooker all day. Just before serving I cooked the rice in beef broth, put a scoop in each soup bowl and topped with the peas. My husband and I ate on this all week long till the leftovers were gone. Definitely a keeper!

Southwestern Turkey Casserole

This is very similar to a recipe I make with ground beef, tomato soup, and salsa. I combined the ingredients (minus one can of soup)in a large skillet including the tortillas that I chopped into 1" squares. Put it all in a baking dish, topped with cheese and baked 20 min. My family likes this and I like that it is so easy!

Cajun Style Baked Sweet Potato

We loved these! I cut the potatoes into wedges like other reviewers suggested, tossed in the oil then spices. I baked them for about 50 min. and they were done. Very tasty but not crispy like I thought they might be based on the comparison to fries in other reviews. Next time I'll probably just cut potatoes in half like the recipe says. I will make many more times and know better what to expect now.

Alison's Slow Cooker Vegetable Beef Soup

Wonderful soup for cold evenings! Served with corn bread and everyone loved it. Froze the leftovers and served a few weeks later...Still very good. I used six boulion cubes, added more water, and left out the Tablespoon of salt.

Salsa Chicken

Great change of taste for baked chicken. It is so simple, I feel like I should have thought of this myself. But many thanks to Faye for posting it! I shook the chicken in a plastic bag with the taco seasoning to coat very well and used homemade salsa. Will definitely make again. Obvious, but worth stating, you must use a salsa and seasoning mix that you like the flavors of because both tastes are quite strong.

Pineapple Angel Food Cake I

I'm giving this 5 stars even though it didn't quite turn out for me. It definitely has potential! I baked mine for 25 minutes, but the cake fell when it cooled. I think I should have baked it a little longer. It tasted very good, but next time I'll add a few minutes on to the baking time. It is such a moist cake that it was hard to tell if it was done using a toothpick. This recipe is definintely a keeper!

Brown Sugar Meatloaf

I adapted this recipe to fit in a smaller loaf pan and it worked out perfectly. What I did: used 1 lb ground beef, 2 eggs,1 cup cracker crumbs,1/2 c milk, and 1 onion. I cut the amount of seasonings in half but used full recipe of brown sugar and ketchup. I cooked it for the full amt of time. It was moist and held together great. Will probably add a little mustard to the "sauce" next time to make it more like my mother's recipe. This is our family's new favorite.

Turkey a la Oscar

What a great idea! I made this as directed except I used 1 lb fresh asparagus for 4 people instead of the frozen. The finished producut looks especially impressinve! We were not that impressed with the texture of the turkey cutlets, so next time I'll use boneless, skinless chicken breasts pounded thin. Thanks for and easy impressive recipe!

Allie's Mushroom Pizza

I made this just as the recipe directed except I used garlic and basil oil with the olive oil instead of sesame. I found there to be way too much oil for the pizza crust though. Easily can cut the oil amount by 2/3. My husband & I loved the pizza. He commented that it was like a gormet pizza from a restaurant. Will make again.
