Kashmiri-Style Kidney Beans with Turnips

i've made many different curries before, and this, flavor-wise is one of the best. instead of salt, i added 2 chopped anchovies for a little more savoriness. i also used the turnip greens (chopped) and carrots (grated), throwing them in after the diced turnips had steamed for 3 minutes. LOVE. delicious.

Shiitake Scallopine

mMmm. Bought a pound of fresh shiitakes and didn't know what to do with them UNTIL I found this recipe. Very simple recipe to follow- I actually used leeks instead of shallots, and added a bit of fresh basil as well as thyme from the garden and it turned out delicious.

The Best Vegetarian Chili in the World

Very tasty, simple one-pot meal. I'm the only semi-vegetarian in the family, but everyone ate and enjoyed this. Really good in the summer served cold, topped with some diced avocado. I omitted the veggie crumbles and canned peppers and added some zucchini, yellow bell peppers and a sprinkle of cinnamon. It adds a tiny, unplaceable note of complexity to th dish.

Butternut Squash Bisque

very easy, elegant, yummy. i only had plain yogurt on hand, so i substituted that for the heavy cream. also added a bit of chopped, smoked ham. i need to make this for friends...i have no doubt that they will love it too.

Double Layer Pumpkin Cheesecake

i made this recipe twice, once for foodie friends, once for family on thanksgiving. EVERYONE loves it. i made the pumpkin layer a little thinner the second time around though.

Spinach and Red Chard Quiche

Wow- this is a really, really good basic recipe, which can be modified for what you have on hand. I substituted whatever was in the garden- fresh thyme, basil, oregano, in place of curry powder- and also some sweet summer squash, thinly sliced tomatoes and bell peppers. Will play with this recipe a lot in the future.

Chocolate Chip Banana Muffins

Great basic recipe!! Great texture- light and cupcake-like- as someone already mentioned. I actually made this in a loaf pan, baking about 40-45 minutes (until a wood pick comes out clean). Also, I substituted for the chocolate chips what i had on hand- pumpkin seeds, chopped apple and chopped walnuts. I will be making this again, and often.

Sicilian Ricotta Cheesecake

I altered this recipe to be a lemon-ricotta cheesecake by omitting the orange zest and cinnamon, reducing the vanilla to one teaspoon and adding 2 teaspoons of lemon zest, with a garnish of lemon twists on top. quite good.

Old-Time Popcorn Balls

good recipe. my first time making popcorn balls, and they turned out delicious. i did not have a candy thermometer, but soft ball stage is when a drop of the caramel holds its own shape when dropped in cold water, but flattens if you fish it out and squoosh it). 2 hints: add a hefty pinch of sea salt to the popcorn for a salty/sweet kettle corn-like flavor. also, the balls will be very hard to form until u let the popcorn/caramel mix cool/set for about a minute or 2 before shaping. i like nuts so added some pecan pieces to the mix.
